MOTHER-IN-LAW'S BARBECUED MEATBALLS

My husband overwhelmingly prefers my cooking to his Mother's, but this is one recipe I got from her that is still a big favorite for both him and our son. I adjusted the amounts a bit to make a bit more sauce, but it's basically her original recipe. It's on the sweet side, but you can adjust flavorings to suit your family's tastes. I sometimes add a bit of crushed red pepper to add some kick. Don't let the amount of ketchup scare you! It does not taste ketchupy - just rich and flavorful. The meatballs still taste good even if you want to stretch them by adding a bit more oats or bread. Note: In response to reviews, I have posted an alternative method of browning the meatballs in the oven.

1 lb ground beef
2 tablespoons onions, chopped
1 egg
2 slices bread, cubed
1/3 cup oatmeal
2/3 cup milk
salt and pepper
1 1/2 cups ketchup
1 cup brown sugar
3 tablespoons soy sauce
2 teaspoons mustard (I prefer spicy brown or dijon)
3/4 cup water
cooked rice

Steps:

  • Meatballs:.
  • Mix ground beef, onion, egg, bread, oatmeal, milk, salt and pepper in a large bowl.
  • Roll into balls.
  • Brown meatballs in a skillet; these are very moist meatballs, making them a bit tricky to brown in a skillet. I usually just push them around a bit and don't brown completely.
  • Alternatively, meatballs could be browned briefly in the oven in a nonstick pan at 400 degrees Fahrenheit for about 10 minutes. Tthey don't need to be cooked through since they will be cooked in the sauce. I've never done it this way, so just watch them so they just brown rather than cook all the way and get dried out.
  • Place browned meatballs in baking dish.
  • Sauce:.
  • Mix ketchup, brown sugar, soy sauce, mustard, water together.
  • Pour sauce over meatballs.
  • Bake uncovered at 350 degrees Fahrenheit until meatballs are cooked through, about 30 minutes.
  • Serve over rice.

This recipe came out of my hometowns' Extension Homemakers Cookbook published in 1977. It's a favorite of mine and now my married daughter has made it a favorite for her family. 1/2 cup milk
1 cup crushed saltine
1 chopped onion
1 tablespoon Worcestershire sauce
3 tablespoons sugar
2 tablespoons vinegar
1 cup catsup
1/2 cup water

Steps:

  • Mix first 4 ingredients and form into balls.
  • Brown in pan on top of stove.
  • Turn to brown.
  • Combine sauce ingredients and pour over browned meat balls.
  • Simmer 45 minutes on top of stove.

Put this recipe together when I was having a buffet style dinner for family birthday party. I had a bottle of maple syrup that was just craving to be put in something. Everyone loved it so decided to post.

1 (3 lb) box frozen meatballs (or can make your own)
2 cups barbecue sauce (I use Miss Diana)
1 1/2 cups maple syrup
2 cups pineapple (I used fresh but can substitute canned)
1 green pepper (cut up)
2 garlic cloves (cut each into 4 pieces)

Steps:

  • Mix together barbeque sauce and maple syrup.
  • Add pineapple, green pepper and garlic.
  • Pour half the sauce into crock pot.
  • Add the meatballs.
  • Cover with remaining sauce.
  • Cook for 6 hrs on low setting.

1 large egg, lightly beaten
1 can (5 ounces) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion
1 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/2 teaspoon Liquid Smoke, optional
1/4 teaspoon garlic powder

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 18-20 minutes or until meat is no longer pink; drain. , Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently. Pour over meatballs. Bake 10-12 minutes longer.

1 cup quick-cooking oats
1/2 cup finely chopped onion

1 ½ cups fresh bread crumbs
¼ cup chopped onion
½ cup milk
1 ½ teaspoons salt
2 eggs
1 (18 ounce) bottle barbecue sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the beef, bread, onion, milk, salt and eggs. Shape into little meatballs, about 1 inch in size. Place the meatballs into a 9x13 inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes. Pour barbecue sauce over the meatballs and bake for 35 more minutes.
