EASY REUBEN CASSEROLE RECIPE
All the flavor of a classic reuben sandwich in one comforting casserole! Layers of corned beef, sauerkraut, rye bread and dressing make this one cheesy meal you will love.

Steps:
- Preheat oven to 400˚F.
- Coat a 13x9 inch baking dish with cooking spray and set aside.
- Place the bread in a large bowl and pour the butter over top. Toss to coat.
- Arrange half the bread in an even layer on the bottom of the baking dish.
- Layer 1/2 the corned beef on top of the bread and top with an even layer of the sauerkraut.
- Pour the dressing over the sauerkraut and spread to coat. Top with the remaining corned beef.
- Sprinkle 3/4 of the cheese over the corned beef and top with the remaining bread cubes.
- Cover the casserole with foil and bake for 25 minutes. Remove the foil and sprinkle with the remaining cheese. Bake for an additional 10 minutes.
- Remove from the oven and allow to cool for 5 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring water to a boil in a saucepan. Stir stuffing mix into the water, place a lid on the saucepan, and remove pan from heat. Let sit until the stuffing is thickened, about 5 minutes. Fluff stuffing with a fork.
- Mix sauerkraut, chicken, Swiss cheese, and Cheddar cheese together in a large bowl. Stir enough French dressing into the sauerkraut mixture to moisten to your liking; spread into a casserole dish. Spread stuffing over the sauerkraut mixture.
- Bake in the preheated oven until browned along the edges, about 25 minutes.

- Preheat oven to 375°F.
- Cook rotini according to package directions (about 9 minutes). Add the cabbage during the last 5 minutes of cook time. Drain and set aside.
- Meanwhile, heat butter in a pan over medium heat. Add corned beef and onion and cook until onion is tender, about 5 minutes. Set aside.

BAKED REUBEN CASSEROLE
Baked Reuben Casserole is like a huge reuben sandwich for a crowd! Layers of rye bread, pastrami, sauerkraut, Swiss cheese and special sauce!

Steps:
- Preheat oven to 350f degrees. Spray 11x7 baking dish with nonstick cooking spray. Take four slices of rye bread and cut them into 2-inch cubes.
- Place remaining slices of rye bread into food processor and pulse into fine breadcrumbs and set aside.
- Spread cubed bread into the bottom of the prepared baking dish.
- Cover evenly with half of the pastrami.
- Then evenly top with drained sauerkraut, chopped pickles and 1 tsp. caraway seeds.
- Sprinkle 2 cups of shredded Swiss cheese on top of sauerkraut layer.
- Next, top with remaining pastrami. I gently push down to help compact it all a bit.
- Sprinkle remaining 2 cups Swiss cheese and 1 tsp. caraway seeds on top of pastrami.
- In a medium bowl, whisk together milk, eggs, thousand island dressing and mustard.
- Pour mixture evenly over the casserole.
- Top with breadcrumbs.
- Cover with foil.
- Bake for 45 minutes.
- Remove from oven, let rest for 5 minutes then slice and serve.

- Preheat the oven to 350. Cut the rye bread into 1-2 inch cubes, and layer on the bottom of a 11×7 baking dish. Cover the bread evenly with half the sliced pastrami, and then cover the pastrami with half the shredded cheese. Layer the drained sauerkraut on top of the shredded cheese. Cover the sauerkraut with remaining pastrami, then add the remaining 2.5 cups of shredded cheese on top of the pastrami. Sprinkle the breadcrumbs on top of the shredded cheese.
- To make the sauce: combine the milk, eggs, thousand island, Dijon and horseradish in a medium mixing bowl. Whisk to combine. Pour or spoon the sauce over the casserole as evenly as possible. You may need to use a spatula to carefully redistribute the sauce a little so that it evenly covers the top.
- Cover with foil, and bake about 40-45 minutes. Remove from oven, and allow to cool at least 5 minutes before serving. Enjoy!
