1 cup uncooked couscous
1 ¼ cups chicken broth
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
½ teaspoon ground cumin
8 green onions, chopped
1 red bell pepper, seeded and chopped
¼ cup chopped fresh cilantro
1 cup frozen corn kernels, thawed
2 (15 ounce) cans black beans, drained
salt and pepper to taste

Steps:

  • Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
  • In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
  • Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

3 tablespoons extra-virgin olive oil
2 large onions, chopped
4 cloves garlic, chopped, divided
4 teaspoons ground cumin
1 teaspoon chile powder
½ teaspoon ground cinnamon
½ teaspoon ground turmeric
½ teaspoon ground cloves
½ teaspoon ground coriander
½ teaspoon ground ginger
6 cups vegetable stock
1 (14.5 ounce) can diced tomatoes
½ pound pumpkin, cut into chunks
1 small sweet potato, cut into chunks
2 stalks celery, sliced
1 carrot, cut into chunks
1 turnip, cut into chunks
3 ½ ounces fresh green beans, cut into 1/2 inch pieces
salt and freshly ground black pepper to taste
1 zucchini, cut into chunks
1 (14 ounce) can garbanzo beans, drained
10 ½ ounces couscous
1 cup raisins
1 cup boiling water
2 tablespoons chopped fresh cilantro
1 tablespoon lemon juice
1 teaspoon ground cumin
2 teaspoons hot chile sauce
1 tablespoon orange flower water, or more to taste
1 pinch ground cinnamon

Steps:

  • Heat olive oil in a large stockpot over medium heat. Add onions and 1/2 of the garlic and cook until slightly softened, about 5 minutes. Stir in cumin, chile powder, cinnamon, turmeric, cloves, coriander, and ginger and cook for a few seconds. Add vegetable stock, tomatoes with their juice, pumpkin, sweet potato, celery, carrot, turnip, and green beans. Season with salt and pepper. Bring to a boil, reduce heat, and simmer until vegetables are just tender, 15 to 20 minutes.
  • Stir in remaining garlic, zucchini, and garbanzo beans. Cook until vegetables are very tender, about 15 minutes.
  • Meanwhile, combine couscous and raisins in a large bowl and cover with boiling water. Mix well to moisten the couscous. Set aside to soak for 5 minutes.
  • Ladle 2 cups of cooking liquid from the vegetable stew over the couscous mixture. Cover and set aside to soak for 10 minutes. Cover stew to keep warm.
  • Ladle 1 1/4 cups hot cooking liquid from the vegetables into a bowl. Stir in cilantro, lemon juice, and cumin. Add chile sauce.
  • Reheat stew if necessary. Fluff up couscous with a fork and mound on a platter or large bowl. Sprinkle with orange flower water and cinnamon. Ladle some of the vegetable stew over the couscous and serve the rest separately. Serve with the chile sauce mixture on the side.

The aromatic Moroccan spice Ras el Hanout adds a dash of the exotic to this quick and easy braised chicken dish that is comforting and delicious. Add green beans for a perfect weeknight dinner or Sunday Supper.

2 tablespoons olive oil
1 cup chopped onion
3 large garlic cloves (minced)
1 tablespoon sweet paprika
2 tablespoons Ras al Hanout
1-14½ ounce can no salt added organic (diced tomatoes*)
½ cup water
2 tablespoons fresh lemon juice
6 boneless (skinless chicken thighs, preferably organic)
1 lb. fresh young green beans (trimmed)
1 tablespoon chopped fresh marjoram
½ cup slivered almonds (toasted)
Garnish: chopped fresh cilantro (optional)

Steps:

  • Heat 2 tablespoons olive oil in heavy large wide skillet or dutch oven over medium heat. Add onions. Cover and cook until onions are soft, about 8 minutes. Add garlic, stir and cook for 1 minute.
  • Add paprika and Ras al Hanout, stir and cook for 1 minute. Add tomatoes, water, and lemon juice; bring to a gentle boil. Arrange the chicken in the pan in a single layer, spoon some sauce over the chicken. Bring to a gentle boil. Reduce heat to medium-low, cover, and simmer for about 15 minutes. Turn chicken over, cover, and simmer until chicken is tender, about 15 more minutes.
  • Meanwhile, bring large pot of water to a boil. Add green beans and cook for 2 minutes for young, smaller green beans, 3 minutes for larger green beans. Remove to an ice bath to stop the cooking.
  • Stir in marjoram, add blanched green beans around the chicken, spoon some sauce over, simmer uncovered for 10 minutes to blend flavors and heat through. Season to taste with more lemon juice, if desired, and salt and pepper. Transfer chicken to large shallow bowl or rimmed platter. Sprinkle with almonds and cilantro. Excellent served with couscous to soak up all the delicious sauce.

1/4 cup butter
1 cup chicken broth
3/4 cup couscous
1/2 cup pine nuts
1 tablespoon olive oil
10 ounces green beans (preferably the flat or wide Italian beans)

Steps:

  • Brown the pine nuts in a olive oil. Set aside.
  • Cook beans al dente. Drain and rinse under cold water. Pat dry and slice thin crossways.
  • Bring broth to boil in a medium pan. Add and melt butter. Add couscous, Stir and remove from heat. Cover, keep warm, and fluff several times during the next 10 to 15 minutes until couscous is tender.
  • Add pine nuts and beans,.
  • Heat dish over a pot of boiling water, or in the microwave, adding more butter if desired.
  • Fluff before serving.

2 tablespoons orange juice
1/2 yellow pepper, cut into strips
1/2 red pepper, cut into strips
1/2 red onion, sliced
1/4 cup sliced black olives
1/2 cup cherry tomatoes, halved
1 tablespoon chopped coriander
1/4 cup irresistible mezzo olive oil
1 teaspoon couscous mixed spice
salt and pepper
1/4 cup lime juice
zucchini, slices grilled

Steps:

  • Blanch beans in boiling salted water until tender; drain and rinse under cold running water to keep them bright green.
  • Meanwhile, soak the apricots in 1 tablespoons (15 mL) lemon juice and 1 tablespoons (15 mL) water to plump them.
  • Drain the apricots and add them to the green beans; add remaining vegetables and coriander.
  • Add olive oil, couscous spice mix, salt and pepper; add lime juice and remaining lemon juice; adjust seasoning.

1 tablespoon salt
