INSTANT POT MOROCCAN CHICKEN



Instant Pot Moroccan Chicken image

8 skin-on, bone-in chicken thighs (about 3 pounds)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1 large onion, sliced
4 large cloves garlic, smashed
4 carrots, cut into 1-inch chunks
1 teaspoon paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
1 cinnamon stick
1/4 preserved lemon, roughly chopped (seeds discarded)
1/4 cup pitted prunes, halved
1/4 cup dried apricots, halved
1/2 cup drained jarred small pimiento-stuffed olives, plus 1 tablespoon brine
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley, plus more for topping
1 teaspoon distilled white vinegar
Cooked couscous, for serving
Harissa, for serving

Steps:

  • Season the chicken thighs generously with salt and pepper. Set an Instant Pot to sauté on high. When the pot registers hot, add the vegetable oil. Working in two batches, add the chicken skin-side down and cook until well browned, about 10 minutes. Remove to a plate.
  • Add the onion, garlic, carrots, paprika, coriander, cumin, turmeric, ginger and cayenne to the pot. Cook, stirring, until the onion softens, about 5 minutes. Stir in the tomato paste to coat the vegetables, scraping up the bottom of the pot. Stir in the cinnamon stick, preserved lemon, prunes and apricots, then turn off the pot.
  • Add 2/3 cup water and the olive brine to the pot and stir well, scraping up the bottom of the pot. Return the chicken skin-side up to the pot in a single layer. Put on and lock the lid; make sure the steam valve is in the sealing position. Set the pot to pressure-cook on high for 8 minutes. When the time is up, let the pressure release naturally for 10 minutes, then carefully turn the steam valve to the venting position to manually release the remaining pressure. Turn off the pot and remove the lid.
  • Transfer the chicken to a platter, leaving the liquid in the pot; discard the cinnamon stick. Stir the olives, cilantro, parsley and vinegar into the pot. Season with salt and pepper. Serve the chicken and sauce over couscous; top with more parsley and serve with harissa.

MOROCCAN CHICKEN TAGINE (DUTCH OVEN OR CROCK POT)

2 onions, chopped
3 cloves garlic, chopped
2 tbsp extra virgin olive oil
1 pound chicken breasts, cut into bite-sized pieces
3 big potatoes, cut into steak fry sized pieces
2 medium carrots, cut into large (2") pieces
1 cup fresh or frozen peas
1 large tomato, cut into 6-8 wedges
3 slices lemon, with the skin
1/2 bunch parsley, stems removed and chopped
1/4 bunch cilantro, stems removed and chopped
1.5 cups water
2 tbsp extra virgin olive oil
1 tsp Salt
1 tsp ginger powder
1 tsp turmeric powder
1 tsp Pepper
2 tsp paprika powder
1/2 tsp saffron (optional)

Steps:

  • Preheat oven to 375.
  • In a Dutch oven, heat up 2 Tablespoons olive oil. Sauté onions and garlic for a few minutes until soft.
  • Layer rest of tagine ingredients (except for herb blend) with parsley and cilantro on top.
  • In a 2 cup measuring cup add 1 ½ cups water, 2 Tablespoons olive oil and the dried herbs. Mix well.
  • Pour water/herb mixture over tagine ingredients.
  • Cover Dutch oven and bake for 1 hour.
  • Remove cover and bake for ½ hour more.
  • Crockpot version:
  • Add all ingredients making sure that chicken is under liquid.
  • Cook on high for 5 hours.

2 tablespoons butter
1 large onion, chopped (1 cup)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
2 tablespoons Gold Medal™ all-purpose flour
1 cup reduced-sodium chicken broth
1/3 cup raisins
3 cups shredded deli rotisserie chicken (from 2-lb chicken)
1/4 cup chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
16 sheets frozen phyllo (filo) pastry (14x9 inch), thawed
Cooking spray
1/2 cup slivered almonds, finely ground

Steps:

  • Heat oven to 350°F. Lightly spray 9-inch glass pie plate with cooking spray.
  • In 10-inch nonstick skillet, melt butter over medium heat. Cook onion in butter 5 to 6 minutes, stirring occasionally, until softened and lightly browned. Stir in cinnamon and turmeric. Stir in flour; cook 1 minute, stirring constantly. Slowly stir in broth. Add raisins. Heat to boiling; boil gently 1 minute, stirring occasionally. In large bowl, stir together onion mixture, chicken, cilantro, salt and pepper.
  • Place phyllo sheets on work surface; cover with clean damp towel. Place 1 phyllo sheet in bottom and up side of pie plate, allowing excess phyllo to extend over edge. Lightly spray with cooking spray; sprinkle with 1 1/2 teaspoons of the ground almonds. Repeat layers, using 7 more phyllo sheets and alternating position of sheets to cover bottom and side of pie plate.
  • Spoon chicken mixture into pastry-lined plate. Using kitchen scissors, cut excess phyllo from edges. Layer with remaining 8 phyllo sheets, spraying each with cooking spray and sprinkling with almonds. Fold excess phyllo under to form rustic crust edge.
  • Bake 30 to 40 minutes or until crust is golden brown. Let stand 10 minutes before serving.

2 carrots, peeled, halved lengthwise, and cut into 1/2-inch slices
1 cup canned chickpeas, rinsed and drained
1 small onion, cut into 1/4-inch pieces
1/2 cup raisins
1 tablespoon finely chopped peeled ginger
2 cloves garlic, finely chopped
6 sprigs fresh thyme
Zest of 1 lemon
1 tablespoon extra-virgin olive oil
2 teaspoons coarse salt, plus more as needed
1 teaspoon freshly ground black pepper, plus more as needed
1/8 teaspoon ground coriander
1/8 teaspoon ground cumin
1 pinch of ground cinnamon
8 chicken legs, skin removed
1/2 cup homemade or canned low-sodium chicken stock
Cooked couscous, for serving

Steps:

  • Preheat oven to 375 degrees. In a large bowl, combine carrots, chickpeas, onion, raisins, ginger, garlic, thyme, lemon zest, and olive oil; toss to coat.
  • In a separate large bowl, stir together 2 teaspoons salt, 1 teaspoon pepper, coriander, cumin, and cinnamon. Add chicken legs, and toss to coat.
  • Have ready four 12-by-17-inch sheets of parchment. Lay a sheet of the parchment paper on a work surface. Place 1/4 vegetable mixture in center of sheet; season with salt and pepper. Drizzle 2 tablespoons chicken stock over vegetables. Center 2 chicken legs over vegetables.
  • To seal packet, bring edges of parchment together, and make a 1-inch fold, and crease. Make another 1/2-inch fold in the same direction, and crease to form a seam. Working with the edges of a short end, fold in towards center to meet, creating a triangle (as if wrapping a gift). Fold point under a few times, and press to seal; repeat with other side. Repeat with remaining ingredients and remaining 3 sheets of parchment.
  • Transfer packets to a baking sheet. Bake until chicken is cooked through and vegetables are tender, about 1 hour 15 minutes. To serve, carefully cut open each packet with kitchen shears. Remove chicken and vegetables, and serve over couscous.

1 pound skinless, boneless chicken breast meat - cubed
2 teaspoons salt
1 onion, chopped
2 cloves garlic, chopped
2 carrots, sliced
2 stalks celery, sliced
1 tablespoon minced fresh ginger root
½ teaspoon paprika
¾ teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon ground cayenne pepper
¼ teaspoon ground turmeric
1 ½ cups chicken broth
1 cup crushed tomatoes
1 cup canned chickpeas, drained
1 zucchini, sliced
1 tablespoon lemon juice

Steps:

  • Season chicken with salt and brown in a large saucepan over medium heat until almost cooked through. Remove chicken from pan and set aside.
  • Saute onion, garlic, carrots and celery in same pan. When tender, stir in ginger, paprika, cumin, oregano, cayenne pepper and turmeric; stir fry for about 1 minute, then mix in broth and tomatoes. Return chicken to pan, reduce heat to low and simmer for about 10 minutes.
  • Add chickpeas and zucchini to pan and bring to simmering once again; cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender. Stir in lemon juice and serve.
