1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground ginger
1 teaspoon black pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon cayenne pepper

Steps:

  • Add all ingredients to a bowl and whisk together until well combined.
  • Store in an airtight jar or container for up to 1 year for best results. Use to season roasted vegetables, chicken, soups and stews, and other Moroccan-inspired recipes.

8 cardamom pods ((or heaping 1/2 tsp ground cardamom))
6 allspice berries ((or 1 tsp ground allspice))
2 sticks cinnamon (3-inch sticks) ((or 1 tsp ground cinnamon))
2 dried red chiles ((or 1 tsp red pepper flakes))
2 tsp black peppercorns ((or 3 tsp ground black pepper))
2 tsp coriander seeds ((or 1 1/2 tsp ground coriander))
2 tsp ground ginger
2 tsp ground turmeric
2 tsp dried mint leaves
1 tsp ground mace
1 tsp whole cloves
1 tsp anise seeds
1 tsp nigella seeds
1 tsp dried lavender
6 dried rosebuds

Steps:

  • In an electric coffee or spice grinder, blitz all of the ingredients to a powder.
  • Store in an airtight container for up to 6 months.

I don't include salt in my recipe because I find it easier to season a dish if my spice mix is unsalted (so I know how much salt I need to add). However, feel free to add salt to this mix if you prefer.

2 teaspoons ground paprika

2 teaspoons ground black pepper
2 teaspoons ground turmeric
1½ teaspoons ground orris root
1½ teaspoons ground mace
1½ teaspoons ground nutmeg
1½ teaspoons ground cardamom
¾ teaspoon ground fennel seed
¾ teaspoon ground anise seed
½ teaspoon ground fenugreek
½ teaspoon ground cloves
½ teaspoon ground cayenne pepper
2 dried bay leaves, ground in a spice mill and strained through a fine mesh sieve (about ⅛ + 1/16 teaspoon ground)
1 teaspoon organic, culinary-grade dried lavender buds, ground in a spice mill and strained through a fine mesh sieve (about ½ teaspoon ground)
1 tablespoon organic, culinary-grade dried rose petals, ground in a spice mill and strained through a fine mesh sieve (about 1¼ teaspoon ground)

Steps:

  • Combine all ingredients in a large bowl.
  • Store the spice mix in an airtight container in the pantry.

Ras el Hanout means head of the shop and is a spice mix that can be found online and in many larger markets. It may contain as many as 100 spices and as few as 10. I make a base substitute from spices I have on hand in my own pantry. I make batches of about 1/3 cup that I can keep on hand for several recipes before I need to make more.

1 tablespoon turmeric
1 tablespoon paprika
1 1/2 teaspoons freshly grated nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground allspice
1 teaspoon cayenne pepper
1/2 teaspoon ground cloves

Steps:

  • Combine the cumin, coriander, turmeric, paprika, nutmeg cinnamon, cardamom, allspice, cayenne pepper and ground cloves and store in an airtight container away from the heat for up to several months.

2 ½ tbsp cumin seed
2 tbsp coriander seed
1 tbsp ground cinnamon or 1 cinnamon stick
2 tsp ground ginger
2 tsp black peppercorn
1 tsp ground turmeric
½ tsp cardamom pod (seeds from about 10 pods)
a good pinch of saffron (optional)

Steps:

  • Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
  • Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.
