MOROCCAN SHRIMP OVER COUSCOUS

Moroccan Shrimp over Couscous image

The sweetness of the golden raisins is a nice compliment to the smokey cumin in this dish. This recipe was adapted from one I found in Real Simple magazine. It might be nice to add a little "heat" to this dish too. Some cayenne pepper or a small chili might compliment the fragrance of the cinnamon and sweet raisins. I would have liked to garnish this with cilantro, but used scallions instead!

  • Heat the olive oil in a large pan over medium high heat. Add the spices to the pan to let them "bloom" for about 30 seconds. They will open up and become so fragrant. Add the shrimp to the pan and let them cook for a couple of minutes to start to become pink and cooked through. After the couple of minutes, add the Sriracha, lemon zest and juice to the pan and stir it in. Lastly, pour in the cognac. Let the shrimp simmer in the cognac for a minute or two to let the alcohol cook off, then take the pan off of the heat.
  • While the shrimp cook, prepare the couscous. Bring the chicken stock to a low boil in a small pot. Once it is boiling add the dill, Ras el hanout and couscous. Stir it together, cover the pot and then take the pot off of the heat. Let the couscous sit for 5 minutes to cook and become tender. When it's done, fluff it up with the fork.
  • Scoop the couscous into pretty individual bowls or family style in a tagine. Scoop a generous portion of the shrimp on top. Be sure to get all of that lovely sauce with the shrimp too! Serve immediately and enjoy!

  • Shrimp ... Now, you can purchase shrimp already peeled and deveined; or, you can do them yourself. I like to remove the tails; but, some like to leave them on - especially if served as an appetizer. Make sure to remove the shrimp from the refrigerator to 'take the chill' off. You never want to cook with COLD seafood. Season the shrimp with salt, toss, and let it rest on the counter. Note: If using frozen shrimp, make sure to thaw them in the refrigerator in a colander over a bowl, covered; so, they do NOT sit in water as they thaw.
  • Saute ... Add the olive oil to a saute pan on medium heat. Add the garlic and cook a minute, stirring often. You do NOT want it to brown or burn. Then, add the spices and cook another couple of minutes, continuing to stir.
  • Shrimp ... Turn the heat to medium high-high; immediately add the shrimp, and saute 3-5 minutes until they begin to curl and turn pink. You want to continue to stir as they cook.
  • *Serve and ENJOY! ... As mentioned, I love to serve the shrimp over couscous. It is a super quick recipe that is full of flavor. Make sure to garnish with chopped mint, lemon zest, and lemon wedges. Add a side salad for a quick weeknight meal. This is also great served as an appetizer*
