MOROCCAN MINT TEA
You can barely take a step in the markets of Marrakech without tripping over fresh mint, or at least without being offered a glass of hot, sweet mint tea. Be sure to lift the teapot high above the cup while pouring; Moroccans appreciate the way this aerates the tea (and they always pour with great panache).

Steps:
- Put tea in teapot and pour in 1 cup boiling water, then swirl gently to warm pot and rinse tea. Strain out and discard water, reserving tea leaves in pot.
- Add remaining 4 cups boiling water to tea and let steep 2 minutes. Stir in sugar (to taste) and mint sprigs and steep 3 to 4 minutes more. Serve in small heatproof glasses.

- In a large saucepan, bring water to a boil. Remove from the heat; add mint and tea bags. Cover and steep for 3-5 minutes. Discard mint and tea bags. Stir in the sugar., In a blender, process honeydew until blended. Add 1-1/2 cups ice and tea; process until blended. Serve over additional ice.

- In a small saucepan, combine all simple syrup ingredients and bring to a simmer on low heat. Continue to simmer for about 10 minutes. Remove from heat. Let syrup cool. Pour syrup through a fine mesh strainer and into an airtight container; discard solids. Syrup can be refrigerated for up to 1 month. Makes about 10 ounces of simple syrup.
- Bring 16 ounces water to a boiling in a small pan on your stove top. Remove from heat and steep tea bags for 8 minutes. Fill a 32 ounce pitcher with ice. Pour hot tea over ice and chill until ready to use in refrigerator.
- Place mint leaves in the bottom of an 8 ounce glass. Using a muddler or the end of a wooden spoon press the mint leaves into the bottom of the glass. Add simple syrup, bourbon, and tea. Top with ice and optional mint garnish.
