Easy Lamb Bolognese image

A tasty twist on a family classic, this Easy Lamb Bolognese can be made with lamb mince or leftover roast lamb for a speedy midweek dinner.

2 tablespoons olive or rapeseed oil
2 large onions (finely chopped)
2 large carrots (peeled and finely chopped)
2 sticks celery (finely chopped)
1 kg lean lamb mince ((or leftover roast lamb))
2 x 400g tins chopped tomatoes
800 ml lamb or beef stock - from cubes is fine ((I use 2 Kallo organic beef stock cubes))
2 bay leaves
Salt and pepper
Spaghetti (or any other shape of pasta you prefer)
Freshly grated parmesan (or cheddar)

Steps:

  • Put the olive oil in a wide, deep saucepan and add the chopped onion, carrots and celery. Cook with the lid on over a gentle heat for about 5 minutes, until softened but not coloured.
  • Turn the heat up to medium/high and add the mince. Fry for 5-10 minutes until the mince has browned all over and is flecked with darker brown. (If using leftovers, simply add in the leftovers and skip the rest of this step.)
  • Tip in the chopped tomatoes, stock and bay leaves, plus salt and pepper to taste. Bring to the boil, then turn the heat down low and simmer for 30 minutes.
  • Serve with spaghetti (or any other shape of pasta you wish) and grated cheese.

Olive oil
1 lb ground lamb
1 onion, diced
2 celery branches, diced
2 carrots, sliced diagonally
3 garlic cloves, minced
1 tsp cumin powder
1 tsp coriander powder
1 tsp red pepper flakes
10 oz mushrooms, sliced
1/2 to 1 cup Marsala or white wine (optional)
2 Tbsp tomato paste
1 can of whole peeled tomatoes, with juice (chop roughly)
1 Tbsp brown sugar
Salt and pepper to taste
Any pasta you prefer (pappardelle, penne, or farfalle are all nice)
Parmesan to serve

Steps:

  • Brown the lamb in olive oil, drain and set aside. In the same pan, add more oil and saute the onions, celery and carrots for 5 minutes. Add the minced garlic and the cumin, corriander and red pepper flakes. Saute for 2 minutes. Add mushrooms, saute 5 minutes. Add Marsala and scrape browned bits on the bottom of the pan. Add tomatoes, tomato paste and brown sugar. Add the browned meat back in, stir and simmer for an hour. Season to taste and serve over pasta with parmesan at the table.

  • Make the Sauce: In a large Dutch oven or other wide heavy saucepan, heat the oil and butter over medium heat. Add the onion, carrots, celery and garlic, and cook, stirring occasionally, until the onion is softened and translucent, 6 to 8 minutes. Add the lamb and cook, stirring frequently and breaking up the meat into bits with a wooden spoon, until cooked through, about 6 minutes.
  • Stir in the cumin, coriander, crushed red-pepper flakes, cinnamon, ¾ teaspoon salt and a generous pinch of pepper and cook for 30 seconds. Stir in the milk. Bring to a simmer, then reduce the heat to medium-low and gently simmer until the sauce is thickened, about 5 minutes. Add the wine and simmer until mostly evaporated, 8 to 10 minutes more.
  • Add the tomatoes and their juices, then reduce the heat to low. Break up the tomatoes into smaller pieces with a wooden spoon, then gently simmer, uncovered, stirring occasionally and adding water ½ cup at a time if the sauce becomes dry, until the sauce is deeply flavorful, about 3 hours. Remove from the heat and adjust the seasoning to taste. Reserve half for the pasta. (The remaining sauce can be refrigerated for up to three days or frozen for up to three months.)
  • Make the Pasta: Bring a large pot of water to a boil and add salt until it tastes like the ocean (taste it). Add the pasta and cook, stirring, until al dente.
