Frozen Orange and Amaretti Parfaits with Espresso Granita image

1 cup finely ground espresso coffee beans
3 cups water
1/2 cup plus 1 tablespoon sugar
3 tablespoons orange juice
3 tablespoons Grand Marnier or other orange liqueur
4 teaspoons finely grated orange peel
1 pint premium vanilla ice cream, slightly softened
8 to 12 amaretti cookies (Italian macaroons)*
2 thin orange slices, cut in half (optional)

Steps:

  • Brew espresso with 3 cups water in coffeemaker. Pour coffee into small metal pan. Add 1/2 cup sugar; stir to dissolve. Freeze 2 hours, stirring twice. Cover and freeze without stirring until solid, at least 6 hours or overnight. Using fork, scrape granita into icy crystals, then toss to mix. Cover; keep frozen. Mix orange juice, liqueur, orange peel, and 1 tablespoon sugar in medium bowl until sugar dissolves. Transfer 2 tablespoons mixture to small bowl to use as sauce; chill.
  • Mix ice cream into remaining orange mixture. Cover; freeze until firm, at least 6 hours.
  • Coarsely crumble 1 to 1 1/2 cookies into each of 4 parfait glasses. Top each with 1/2 cup granita and another 1 to 1 1/2 crumbled cookies. Top each with scoop of ice cream. Drizzle 1 1/2 teaspoons orange sauce over ice cream. Garnish with orange slices, if desired. * Available at some supermarkets and at Italian markets.

4 cups freshly brewed strong coffee (made from 6 cups water and 2 1/2 cups ground French roast coffee)
1 cup sugar
1 tablespoon grated orange peel
1 teaspoon vanilla extract
1 tablespoon sambuca or other anise-flavored liqueur

Steps:

  • Stir first 4 ingredients in bowl until sugar dissolves. Pour into 13x9x2-inch metal pan. Chill 2 hours; mix in sambuca.
  • Freeze coffee mixture until icy at edge of pan, about 45 minutes. Whisk to distribute frozen portions evenly. Freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes. Whisk to distribute frozen portions evenly. Then freeze until solid, about 3 hours. Using fork, scrape granita down length of pan, forming icy flakes. Freeze at least 1 hour. (Can be made 1 day ahead. Cover; keep frozen.)
  • Serve withWhite Chocolate Sambuca Cream.
  • Presentation
  • Orange peel strips or chocolate-covered coffee beans
  • Working quickly, scoop granita into glasses, filling halfway. Fill to top with cream. Garnish with peel or coffee beans.

4 cups hot espresso or strong coffee made with ground espresso coffee beans
1/2 cup sugar
1 teaspoon grated orange peel
1/8 teaspoon ground cinnamon
3/4 cup well-chilled whipping cream
3 tablespoons sugar
2 tablespoons Grand Marnier or other orange liqueur
Milk chocolate curls
Thin orange peel strips

Steps:

  • Mix coffee, 1/2 cup sugar, grated orange peel and ground cinnamon in medium bowl until sugar dissolves. Cool to room temperature. Transfer mixture to loaf pan. Freeze until granita is consistency of shaved ice, stirring mixture with fork and breaking frozen edge pieces every 30 minutes, about 3 hours. (Granita can be made 6 hours ahead. If possible, stir every 30 minutes to 1 hour. Before serving, blend mixture in processor to break up ice.)
  • Beat chilled whipping cream and 3 tablespoons sugar in medium bowl until soft peaks form. Add Grand Marnier and beat until soft peaks form again. Spoon granita into bowls. Top each dessert with dollop of whipped cream. Garnish with chocolate curls and orange peel strips and serve immediately.

2 cups Greek yogurt
1/3 cup packed light brown muscovado sugar
2 tablespoons brewed espresso, cooled
1 teaspoon finely grated orange zest
2 tablespoons orange juice
1 pint fresh raspberries
1 pint fresh strawberries, hulled and halved or quartered
3 to 4 tablespoons granulated sugar
2 tablespoons chopped fresh mint, plus 8 small sprigs, for garnish
2 cups granola

Steps:

  • Whisk together the Greek yogurt, muscovado sugar, espresso and orange zest and juice in a bowl until smooth. Cover and refrigerate for at least 2 hours and up to 24 hours.
  • About an hour before serving, combine the raspberries, strawberries, sugar to taste, and chopped mint in a bowl. Layer the berries, granola and yogurt mixture in eight 1-cup Mason jars. Top the jars with some more granola, then cover with lids and refrigerate for at least 1 hour. Garnish with fresh mint sprigs and serve.

CARAMELIZED ORANGE PARFAIT

8 oranges
1/2 cup turbinado sugar
1/4 cup orange liqueur
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 cup heavy cream
1 large vanilla bean, split, seeds scraped
1/2 cup mascarpone cheese, room temperature
Extra-virgin olive oil, for drizzling, optional
1/2 teaspoon ground cinnamon, plus for garnish, optional

Steps:

  • Preheat the oven to 400 degrees F. Set a wire rack over a baking sheet.
  • Slice of the top and bottom of the oranges using a serrated knife. Place the oranges, cut side down, on the cutting board and slice away the outer layer of skin and pith to just reveal the flesh. Cut the oranges into 1/2-inch-thick slices and then into quarters. Place the oranges in a bowl and add the turbinado sugar and orange liqueur; toss to coat. Arrange the oranges on the wire rack and transfer to the oven. Cook until the sugar has caramelized, 13 to 15 minutes. Let cool, then sprinkle the oranges with the salt and pepper. Reserve to the side.
  • Combine the heavy whipping cream and vanilla seeds in a medium mixing bowl. Whisk until soft peaks form. Fold in the mascarpone and set aside.
  • To assemble: Spoon a dollop of mascarpone whipped cream into 4 to 6 footed parfait glasses. Top with a layer of caramelized oranges. Repeat four more times, so there are five layers of whipped cream and oranges in each glass. Refrigerate the parfaits for 20 minutes to set up.
  • Garnish each parfait with a drizzle of olive oil and a pinch of cinnamon, if using. Serve immediately.

STRAWBERRY AND ALMOND CREAM PARFAIT

1/2 cup granulated sugar
2 tablespoons all-purpose flour
4 egg yolks
1 1/4 cups whole milk
1 vanilla bean, split and scraped
3 ounces marzipan
1/3 cup granulated sugar
Nonstick spray
1 3/4 cups slivered almonds, lightly toasted
Kosher salt
12 ounces fresh strawberries, hulled washed and quartered
1 tablespoon light brown sugar
1/2 cup heavy cream, lightly whipped

Steps:

  • In a medium bowl, whisk together sugar, flour and egg yolks until thick and smooth, 3 to 5 minutes.
  • In a medium pot, bring the milk and vanilla bean to a gentle boil. Pour about half of the milk mixture over the eggs whisking constantly. Pour the whole mix back into the pot and place the pot back over low heat, stirring with a wooden spoon, until the mixture thickens, 3 to 5 minutes. Note: you must stir this mixture constantly, scraping the bottom as you stir, so the flour doesn't stick to the bottom and burn.
  • Remove the pot from the stove and whisk in the marzipan. Pour the mixture onto a baking sheet lined with plastic wrap and cover it with a coating of plastic wrap. Place the tray in the refrigerator to cool.
  • In a medium skillet over low heat, melt the granulated sugar. Spray a tray with a light coating of nonstick spray. Spray the end of a wooden spoon as well. When the sugar turns light brown, add the almonds and stir to coat them with the sugar. Spoon the almonds on to the baking sheet and sprinkle lightly with salt.
  • When the almond cream has cooled, remove and discard the vanilla bean and place the pastry cream in a medium bowl. Whisk until it is smooth. In another medium bowl, toss the strawberries and brown sugar together.
  • Place 4 to 6 glasses on a flat surface. Begin by spooning a thin layer of almond cream in the bottom of each. Sprinkle with a few almonds. Add a layer of the whipped cream. Top with a layer of strawberries. Repeat the layers until the glasses are full. Refrigerate for a while before serving or enjoy immediately.
