MOROCCAN CHICKEN KABOBS

Moroccan Chicken Kabobs image

From my 100 Best Classic Tapas cookbook -- sounds so easy yet really flavorful. Prep time does not include marinating time in refrigerator.

Provided by DailyInspiration

Categories     Very Low Carbs

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb chicken breast fillet
3 tablespoons Spanish olive oil (plus extra for oiling)
1 lemon, juice of
2 garlic cloves, crushed
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon hot smoked paprika (or sweet)
1/4 teaspoon ground cinnamon
1/2 teaspoon dried oregano
salt
fresh parsley, chopped (for garnish)

Steps:

  • Cut the chicken into 1-inch cubes and place in a large, shallow, nonmetallic dish. Put all the remaining ingredients, except parsley, in a bowl and whisk together. Pour the marinade over the chicken cubes and toss the meat in the marinade until well coated. Cover and let marinate in the refrigerator for 8 hours or overnight, turning the chicken 2-3 times if possible.
  • If using wooden skewers, soak the skewers in cold water for about 30 minutes to prevent burning and to keep food from sticking. If using metal skewers, lightly brush with oil. Preheat the broiler or grill pan. Remove the chicken pieces from the marinade, reserving the remaining marinade and thread an equal quantity onto each prepared skewer leaving a little space between each piece.
  • Brush the broiler rack or grill pan with a little oil. Add the kabobs and cook, turning frequently and brushing with the reserved marinade halfway through cooking, for 15 minutes or until browned on all sides, tender, and cooked through. Serve hot, sprinkled with chopped parsley to garnish.

Categories     Chicken     Dinner

Yield 18 people

Number Of Ingredients 11

2 tablespoons paprika
2 teaspoons ground ginger
1 1/2 teaspoons turmeric
1/2 teaspoon cayenne pepper
2 teaspoons black pepper
1 tablespoon minced garlic
1/4 cup lemon juice
1/2 cup olive oil
18 boneless, skinless chicken thighs, cut in 1-inch cubes
1/4 cup chopped, fresh mint
1/4 cup chopped cilantro

To serve, preheat the broiler or make a charcoal fire. Broil or grill the chicken for 5 minutes on each side. (As these have no skin, pay attention while broiling not to ruin the chicken by letting it char and become hard.) Serve with couscous. Sprinkle with chopped mint and cilantro.

  • In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
  • Line a baking sheet with aluminum foil for easy clean up. Thread the chicken onto metal skewers, folding if the pieces are long and thin, alternating with the red onions. Be sure not to cram the skewers. (Note: You'll need between 6-8 skewers.) Place the kabobs on the prepared baking sheet. Brush the marinade all over the meat, coating well. Cover and refrigerate at least eight hours or overnight.
  • Preheat the grill to medium-high heat. To grease the grill, lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. Grill the chicken kabobs until golden brown and cooked through, turning the skewers occasionally, 13 to 15 minutes. (The yogurt marinade makes these kabobs prone to sticking to the grill grates; if necessary, use a metal BBQ spatula to scrape underneath the kabobs and release them.) Transfer the kabobs to a platter and serve.
  • Note: I've specified boneless skinless chicken thighs for this recipe; they're juicier and more flavorful than chicken breasts, and they work better in this type of yogurt and lemon-based marinade. They're also much easier to cook without drying out.

  • Prep Chicken - Clean, wash, and cut the chicken into bite-size pieces. Pat dry on a paper towel to remove excess moisture.Pro tip - Cut the chicken into about 1-inch pieces as too large will keep the chicken raw in the middle. Also, make sure the chicken is dry so the marinade will stick to it.
  • Prep Veggies - Cut vegetables also into small pieces similar to the chicken. Cut each bell pepper in a quarter then each quarter into 4 pieces after taking off the stalk and seeds. Do the same with the onions and tomatoes if using large tomato. Pro tip - Prepare the veggies no more than 4 hours before cooking so they stay fresh. I like to add the chicken marinade into my veggies as well so they pick up flavor from the chicken.
  • Soak the bamboo skewers in water for 30 minutes at least.Pro tip - Soaking the skewers in water will prevent them from burning on the grill so do not skip this step.
  • Marinade - Place all marinade ingredients in a bowl. Add the chicken pieces. Cover and set aside to marinate for an hour on the counter or up to 12 hours in the fridge. Pro tip - If you marinate for longer in the fridge, make sure to take the chicken out an hour before you plan to cook it.

  • In a bowl whisk together the olive oil, garlic and spices and pour it overtop of the chicken. Give the chicken a stir to ensure that it is all coated in the marinade. Place in the fridge to marinate for anywhere from 10 minutes to overnight.
  • Cut the cauliflower into small pieces. Place them in a food processor and blend for approximately 10 seconds until the cauliflower has broken down into a fine couscous consistency. The pieces should be very fine and approximately 1/3 the size of a piece of cauliflower rice. Measure out 4 cups of cauliflower couscous and transfer it to a bowl.
  • To the bowl with the cauliflower couscous add in the chopped mint, shallots, olive oil, vinegar, salt, pepper and turmeric and stir it all together. If eating right away then add in the flaked almonds, otherwise I recommend waiting until right before serving to add them to the salad so that they maintain their crunchiness.
