BEEF TAGINE
Spicy, fragrant and sweet, the perfect beef tagine doesn't need special equipment, just time.

- Mix all the spice rub ingredients together in a small bowl with a good pinch of sea salt and black pepper.
- Put the beef into a large bowl, massage it with the spice rub, then cover with clingfilm and place in the fridge for a couple of hours, preferably overnight.
- When you're ready to cook, peel and finely chop the onion, and pick the coriander leaves, finely chopping the stalks.
- Heat a generous lug of oil in a tagine or casserole pan over a medium heat, add the meat and fry for 5 minutes to seal. Add the onion and coriander stalks and fry for a further 5 minutes.
- Drain and tip in the chickpeas, followed by the tomatoes, breaking them up with a spoon, then pour in 400ml of stock and stir well. Bring to the boil, then cover and reduce to a low heat for 1½ hours.
- Meanwhile, deseed and chop the squash into 5cm chunks, then destone and roughly tear the prunes. Toast the almonds in a dry frying pan until lightly golden, then tip into a bowl.
- When the time's up, add the squash, prunes and remaining stock. Give everything a gentle stir, then pop the lid back on and continue cooking for another 1½ hours. Keep an eye on it, adding splashes of water, if needed.
- At this stage, remove the lid and check the consistency. If it seems a bit too runny, simmer for 5 to 10 minutes, more with the lid off - the beef should be really tender and flaking apart now, so have a taste and season to taste.
- Scatter the coriander leaves over the tagine along with the toasted almonds. Serve with a big bowl of lightly seasoned couscous and dive in.

MOROCCAN BRAISED BEEF
Steps:
- Heat 2 tablespoons oil in large pot over medium-high heat. Sprinkle meat with salt and pepper. Add meat to pot; sauté until no longer pink, about 5 minutes. Transfer meat to bowl. Heat 1 tablespoon oil in same pot. Add onions; sauté until brown, about 8 minutes. Add garlic and next 5 ingredients; stir 1 minute. Add wine and Sherry; boil until reduced to glaze, stirring occasionally, about 8 minutes. Add broth, tomatoes with juice, and raisins; stir to blend. Add beef and accumulated juices; bring to simmer. Reduce heat to medium-low. Simmer uncovered until sauce is thick and beef is tender, stirring occasionally, about 1 hour 15 minutes. Season stew with salt and pepper. (Can be made 2 days ahead. Cool slightly, chill until cold, then cover and keep chilled. Rewarm before serving.)

- Place flour in a large shallow dish; add beef and turn to coat. In a large skillet, brown beef in oil. Transfer to a 5-qt. slow cooker. Stir in the broth, onions, tomatoes, wine and seasonings. Cover and cook on low for 7-8 hours or until the meat is tender. , During the last 30 minutes of cooking, stir in the raisins. Serve with couscous if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary. MOROCCAN BRAISED BEEF
I found this recipe on another website. It originally came from Bon Apetit magazine. I made it when I wanted to do something a little different with stewing beef. The original recipe suggests to serve it with couscous, but anything to soak up the delicious gravy is good. When I made it, I used 1 and 1/2 cups of red wine since I didn't have any sherry and added a little sugar.

- Season the beef with salt and pepper and brown it in the oil in a skillet in batches. (Optional: after each batch you can deglaze the pan by adding some of the beef stock and stirring to loosen the browned bits. Keep this liquid to add to the stew later.).
- Remove beef.
- Add a little more oil and saute the onions (seaoning with salt and pepper) until nicely browned (about 10 minutes).
- Add the garlic and next 5 ingredients and stir for 1 minute. Add the wine and sherry, turn the heat to high and reduce until thick, about 8 minutes.
- Add the beef broth, the tomatoes, the beef cubes (with accumulated juices), the broth you used for deglazing and the raisins.
- Reduce heat to medium-low. Simmer for about an hour and a quarter until the sauce is thick and the beef is tender.
- Alternately, put the pot in a 275 to 300 degree oven.
- Taste and adjust the seasoning.
- The stew can be refrigerated and reheated before serving (this helps to bring out the flavours) or served right away.

- Heat oil in a pot over medium heat. Then saute garlic and onion until slightly tender. Add the chunk of beef and sear the meat in hot oil on all sides, about 5-7 minutes total.
- Add the rest of the ingredients except for the carrots, cornstarch and spring onions and bring to a simmer, cover pot with lid and turn the heat to low. Let it cook for 40-50 minutes or until the meat is fork tender. You may need to add some water if beef is not yet tender at this point.
- Stir in the carrots and cornstarch mixture and boil the sauce for about 5 minutes or until reduced and becomes thick.
- Serve on top of steamy rice bowls and garnish with some chopped spring onions.

- Cut the beef into large chunks.
- Heat olive oil in a skillet over high heat. Brown the beef chunks. Then remove them and set aside.
- Cook the onions in the same skillet until they are fully cooked (or translucent).
- In a Dutch oven pot, begin layering the ingredients in the following order; 1/2 browned beef chunks, 1/2 tsp cumin, 1/2 tsp paprika, 1 tsp salt, 1/2 tsp black pepper, then half the sautéed onion and half the garlic (pressed).
- Repeat step 4 with the remaining beef chunks.
- Add the red wine and water to the meat and place the lid on top. Place the pot onto the cooktop and bring it to a boil. Place the pot into the oven for 1 1/2 -2 hours at 360 Fahrenheit. Cook until the meat is fully cooked through.

- Heat a dutch oven (or large soup pot) over medium high heat for 2 minutes. While it is heating up, salt the short ribs generously on all sides. Add the olive oil, and cook the short ribs 3 minutes per side on all sides until golden brown. Do not overcrowd the pan. If necessary, cook the short ribs in batches. Transfer short ribs to the slow cooker after browned, with the meat side down, bone side up.
- In the same dutch oven in the remaining oil/fat, add the vegetables and cook for 5-8 minutes, until they begin to soften. Add the tomato paste, cook for 1 more minute. Add the orange zest and orange juice. Scrape the bottom of the pan until there are no more brown bits. Add the chicken stock, balsamic vinegar, cinnamon and bay leaf. Stir to combine. Transfer cooking liquid to the slow cooker. Gently move the short ribs to make sure the cooking liquid gets under the short ribs. Cover and cook on low for at least 8 hours, or high for at least 4 hours.
- After the short ribs have cooked, reduce the cooking sauce. Gently remove the short ribs from the slow cooker. They will be very tender, and may fall off the bone. This is OK. I also like to pinch off any large pieces of fat that didn’t render off the short ribs using tongs. Discard any fat.
- Once all the short ribs are removed, strain the sauce to remove all the vegetables. Discard the cooked vegetables. Transfer the cooking liquid to a fat separator, and allow to sit for 5 minutes. You should have about 4 cups of sauce. Transfer the short ribs back to the slow cooker and cover.

To fry almonds Using blanched almonds add some oil to a saute pan and put the whole almonds in. This will only take a few minutes once hot. Be sure to watch as they will burn quickly.
