Yum! We loved this creamy delicious casserole. It has a bit of heat which we enjoyed, but if that is too much for your taste buds cut back on the heat a bit by adjusting the jalapenos. Steps:
- 1. Brown ground chuck with onion in skillet; drain fat, return to skillet and add taco seasoning. Set aside.
- 2. Melt cheese, sour cream, peppers and tomatoes in a saucepan over low heat until cheese is completely melted.
- 3. Crush the chips. Combine the meat and cheese mixture. Layer meat/cheese mixture in 13"x9" baking dish; top with chips; repeat layers until all mixture has been used, ending with chips on top.
- 4. Bake at 350 degrees until the top and sides are bubbly and slightly browned; approximately 30 minutes.
MONTEREY CHICKEN CASSEROLE
I clipped this from an Ortega ad in a magazine. I usually cook my chicken breasts in my George Foreman grill. You could also sub those pre cooked chicken tenders if you're pressed for time.

- Spoon into ungreased 13x9-inch baking dish.
- In a medium bowl, combine taco shell pieces and cheese.
- Sprinkle over chicken mixture.
- Bake 40-45 minutes, or until top is golden brown.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a skillet over medium heat. Add chicken and saute for about 5 minutes. Add onion and saute until softened, another 5 minutes. Stir in condensed soup, chile peppers, sour cream, milk, cumin, chili powder, coriander, cayenne pepper, and pepper flakes.
- Transfer 1/2 of the chicken mixture into a 9x13-inch pan. Layer with 1/2 of the tortilla chips and 1/2 of the Monterey Jack cheese. Repeat layers once more and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes.

- Preheat oven to 350*.
- In skillet, brown ground beef.
- Add onion; reduce heat and saute 5 minutes.
- Drain excess fat.
- Place 2 cups of crushed corn chips in bottom of greased 1 1/2 quart dish.
- Layer ground beef over chips.
- Pour enchilada sauce over beef.
- Top with cheese.

- Preheat oven to 350. Spray 8x8 pan with nonstick spray.
- Begin browning ground beef. Add taco seasoning.
- After beef is mostly cooked, add diced onion.
- When onion is slightly browned, add salsa and tomatoes. Remove mixture from heat.
- Separate crescent rolls and put half in bottom of 8x8 pan.
- Spoon beef mixture on top of crescent rolls. Top with cheeses.

- Heat oven to 375 degrees.
- Mix chicken, corn, soup, and cheese in an 9 x 13 baking dish.
- Mix Bisquick and milk into soft dough.
- Turn dough onto surface dusted with Bisquick.
- Knead 10 times.
- Roll 1/2" thick.
- Cut with 2 1/2" cutter.
- Place biscuits on chicken mixture.
- Bake 20-25 minutes until biscuits are golden.
