Authentic Beef Enchiladas.This easy enchilada recipe is loaded with juicy ground beef, melty cheese, and drenched with a homemade Tex Mex Enchilada Sauce.

1 pound ground beef
1 tablespoon Chili Powder
1/2 teaspoon Salt
3/4 teaspoon Cumin
1/2 teaspoon Dried Oregano
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/4 cup tomato sauce
1/4 cup oil or butter (canola, vegetable, or avocado oil)
1/4 cup all purpose flour
1/2 teaspoon ground black pepper
3/4 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons ground cumin
1/2 teaspoon dried oregano
1 tablespoon chili powder
2 cups beef broth (LOW or NO SODIUM)
1 tablespoon tomato paste
1/4 cup canola oil
12-15 white corn tortillas
1 cup Monterey Jack Cheese (shredded)

Steps:

  • Ground Beef
  • Cook the ground beef over medium heat. Break the beef up while it cooks, cook until browned and no longer pink.
  • Turn the heat off. Drain the grease. Add the seasonings to the meat, stir to combine. Then stir in the tomato sauce. Set aside.
  • Homemade Enchilada Sauce:
  • Heat the oil or butter in a medium size skillet over medium heat.
  • Add in the flour and stir to mix. Will be a thick mixture. Allow this to cook for just 1-2 minutes.
  • Add in the spices. Stir to form a thick paste.
  • Stir in the broth and tomato paste. Stir until smooth. Continue to heat to just below a simmer, sauce will thicken slightly.
  • Enchiladas:
  • Preheat oven to 350℉ degrees.
  • Spread enchilada sauce into the bottom of a glass 9x13 baking dish. Set aside.
  • Heat vegetable or canola oil over medium heat in a medium size skillet.
  • Once the oil is hot enough to bubble up when a tortilla is dipped in, gently lay the tortilla into the oil using tongs. Allow the tortilla to cook in the oil for about 10-15 seconds, then flip and cook the other side. (Tortillas will not be browned and crisp, we still want them flexible)
  • Once all tortillas have been fried, dip into the enchilada sauce. Or brush the sauce on.
  • Lay the tortilla down and add a spoonful of ground beef and a small sprinkle of cheese.
  • Roll the tortillas and lay into a baking dish, seam side down. Continue until the dish is filled.
  • Spread leftover sauce over the top of the enchiladas. Sprinkle with leftover shredded cheese.
  • Bake for 10 minutes until the cheese is melted.
  • Serve warm and enjoy.

This recipe is one of my family's favorites. It can be made in advance and then reheated, or you can make the different components ahead of time and then just assemble and bake for a quick dinner. Serve with sour cream and picante sauce or salsa.

½ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon ground cumin
¼ teaspoon dried marjoram
¼ teaspoon dried oregano
1 pound ground beef
1 (15 ounce) can black beans, drained and rinsed
⅔ cup water
⅓ cup taco seasoning mix (such as Old El Paso®)
1 tablespoon butter
½ cup diced green onions
1 (10.75 ounce) can reduced-fat, reduced-sodium cream of mushroom soup (such as Campbell's® Healthy Request)
½ cup reduced-fat sour cream
1 (4 ounce) can diced green chile peppers, drained
½ cup shredded Cheddar-Monterey Jack cheese blend
¼ cup milk
7 large flour tortillas, or as needed
½ cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a deep 12x6-inch hotel pan or casserole dish with cooking spray.
  • Mix garlic powder, black pepper, cayenne pepper, cumin, marjoram, and oregano together in a small bowl.
  • Heat a large skillet over medium-high heat and stir in ground beef. Cook and stir until the beef is crumbly and no longer pink, about 10 minutes. Drain and discard any excess grease. Add black beans, water, and taco seasoning; cook and stir mixture until most of liquid is evaporated, 5 to 10 minutes.
  • Heat butter in a separate skillet over medium heat; cook and stir green onions in the melted butter until softened, about 5 minutes. Mix cream of mushroom soup, sour cream, green chile peppers, and garlic powder mixture into green onions; reduce heat to low and simmer until mixture is heated through, 2 to 3 minutes.
  • Remove 3/4 cup soup mixture and stir into ground beef mixture; fold in 1/2 cup Cheddar-Monterey Jack cheese until well incorporated.
  • Stir milk into the remaining soup mixture until sauce is smooth; remove from heat.
  • Spoon about 1/2 cup ground beef mixture into each tortilla. Roll each tortilla around filling and place seam side down into the prepared pan. Pour sauce over enchiladas, spreading to completely coat. Sprinkle 1/2 cup Cheddar-Monterey Jack cheese over enchiladas.
  • Bake in the preheated oven until cheese is melted and edges of the casserole are browned, 30 to 35 minutes.

2 1/2 pounds flank steak, cooked
Vegetable oil
1/2 cup chopped cilantro
1/2 cup finely chopped onion
16 corn tortillas
1/2 cup oil, for frying tortillas
1 cup shredded Monterey jack, plus 1 cup
1 cup shredded Cheddar
Salt and freshly ground black pepper
Cilantro Cream Sauce, recipe follows
4 bunches cilantro
1 jalapeno, roasted and deseeded
1 cup heavy cream
1 tablespoon cumin
Salt and pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Chop the cooked flank steak to a fine dice. Saute chopped flank steak in a little oil for 1 to 2 minutes, or until heated through. Add cilantro and onion and cook for 5 minutes. Remove from heat. Combine the 1 cup of the Monterey jack and 1 cup of the Cheddar and mix well. Add cheese to steak mixture. Stir well and reserve, covered.
  • In another saute pan, heat oil over medium heat. Fry tortillas, one at a time, just until soft, about 10 seconds. Pat tortillas dry on paper towels. Portion out beef mixture evenly among the 16 tortillas and roll up. Place enchiladas on a baking sheet or in 1or 2 rectangular casserole dishes.
  • Cover enchiladas with Cilantro Cream Sauce and top with remaining cheese. Bake for 6 to 8 minutes, or until cheese melts and sauce is bubbling.
  • Blanch cilantro in boiling water for 30 seconds and puree in blender with jalapeno. In a saucepan reduce heavy cream by half. Stir in cilantro-jalapeno puree and cumin. Adjust with salt and pepper.

  • Spoon 1 cup of enchilada sauce on the bottom of a 9x13 casserole dish. Spoon about 1/4 cup of the beef mixture onto one side of the tortilla, then roll tightly. Place seam side down in the dish and repeat with all 8 tortillas.
