SCARY MONSTER CUPCAKES

Cake mix, frosting and decorations make these scary cupcakes the perfect Halloween treat.

1 box Betty Crocker™ Super Moist™ yellow or chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
Betty Crocker™ classic and neon gel food colors (orange, purple, yellow, blue and lime green)
1 package (0.88 oz) Betty Crocker™ Candy Shop candy eyeballs
2 tubes (0.68 oz each) Betty Crocker™ black decorating gel

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • Divide frosting into five separate small bowls. Stir 1 teaspoon desired color gel food color into each bowl. Spoon each color frosting into separate decorating bag fitted with desired tip. Pipe frosting on cupcakes to look like monster's fur.
  • Decorate each cupcake as desired using candy eyeballs and decorating gel.

Vanilla or Chocolate cupcakes
Swiss Meringue Buttercream
3 cups sweetened shredded coconut, lightly toasted
Assorted candies, for decorating

Steps:

  • Frost tops of cupcakes with a smooth, even layer of buttercream. Place toasted coconut in a bowl. Holding cupcake at an angle over the bowl, press coconut into frosted top of cupcake, letting excess fall back into bowl. Add candies to create facial features.

I made these last year with my kids and they loved it. You can use whatever candies you want, have fun and be creative. Time indicated does not include cupcake cooling time.

1 (18 1/4 ounce) box chocolate cake mix
1 1/4 cups water (or as indicated on cake mix box)
1/3 cup vegetable oil (or as indicated on cake mix box)
3 eggs (or as indicated on cake mix box)
1 (12 ounce) can white frosting
candy corn
gumdrop
Skittles candies
jelly belly candy
4 ounces dark chocolate chips

Steps:

  • Line cupcake pan with liners.
  • Make cupcakes per directions on box.
  • Cool cupcakes completely.
  • Stir frosting as per instructions on box.
  • Put frosting on top of cupcake roughly in the shape of a skull (see photo) leaving part of the cupcake exposed.
  • Decorate with candies. (see photos).
  • Melt chocolate chips in a small microwave safe bowl for about 20 seconds. This depends on your microwave.
  • Don't over melt. Just do it until the chips are soft with some solid left in the center of the chip. Stir and the rest will melt. Add more time if needed, but do it slowly, about 10 seconds at a time.
  • Dip a tooth pick into the chocolate chip and dot the Skittles (or whatever candy you use for the eyes). The chocolate serves as the pupil of your monters' eyes. Please make sure the "s" stamped on the Skittles is facing down and the blank side is facing up.

2 rolls red fruit leather tape
1 1/4 cups vanilla frosting
12 chocolate cupcakes, unfrosted
6 marshmallows
36 mini marshmallows
1 16-ounce container dark chocolate frosting

Steps:

  • Cut the red fruit leather rolls into twenty-four 2 1/2-inch lengths. Slightly overlap 2 pieces lengthwise, pressing to adhere; repeat with the remaining pieces.
  • Spread a thin coat of vanilla frosting on each cupcake. Place a red fruit leather rectangle on top of each cupcake, trimming any overhang with kitchen shears.
  • Cut big fangs from a marshmallow with shears, then halve mini marshmallows on the diagonal to make mini fangs. Dab some vanilla frosting on the sticky cut sides and arrange on the fruit leather for the fangs.
  • Fill a piping bag fitted with a small star tip (#17) with dark chocolate frosting. Pipe frosting around the mouth as the fur.

1 1/2 cups all-purpose flour
3/4 cup unsweetened Dutch-process cocoa powder
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup buttermilk
3 tablespoons vegetable oil, such as safflower
1 tablespoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Line 2 standard muffin tins with paper liners. Whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt in a medium bowl.
  • Mix in eggs, water, buttermilk, oil, and vanilla until smooth, about 3 minutes. Divide batter evenly among prepared muffin tins. Bake, rotating tins halfway through, until tops spring back when lightly touched, about 20 minutes. Let cool in tins on wire racks.

250g self-raising flour
25g cocoa powder
175g light muscovado sugar
85g unsalted butter , melted
5 tbsp vegetable or sunflower oil
150g pot fat-free natural yogurt
1 tsp vanilla extract
3 large eggs
85g unsalted butter , softened
1 tbsp milk
½ tsp vanilla extract
200g icing sugar , sifted
food colourings (optional)
sweets and sprinkles, to decorate

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a 12-hole muffin tin with deep cake cases. Put all the cake ingredients into a large bowl and beat together with electric hand beaters until smooth. Spoon the mix into the cases, then bake for 20 mins until risen and a skewer inserted into the middle comes out dry. Cool completely on a rack. Can be made up to 3 days ahead and kept in an airtight container, or frozen for up to 1 month.
  • For the frosting, work the butter, milk and vanilla into the icing sugar until creamy and pale. Colour with food colouring, if using, then create your own gruesome monster faces using sweets and sprinkles.

2 containers (12 oz each) Betty Crocker™ Soft Whipped fluffy white ready-to-spread frosting
3/4 teaspoon neon green paste food color
1/4 teaspoon purple paste food color
48 assorted colors ring-shaped gummy candies or fruit-flavored ring-shaped hard candies
Candy eyes
Licorice whips, cut into 1/2-inch pieces
6 miniature marshmallows
1/2 cup candy corn

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups or spray with cooking spray. Make and bake cake mix as directed on box for cupcakes, using water, oil and eggs. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • Tint 1 container frosting with green food color. Tint second container frosting with purple food color. Place green frosting in decorating bag fitted with star tip #109. Place purple frosting in second decorating bag fitted with #109 tip. Pipe green frosting on half of the cupcakes. Pipe purple frosting on remaining cupcakes.
  • Attach gummy candies for eyes. With frosting, attach candy eyes in center for eye pupils. Attach licorice pieces for mouths. With dampened kitchen scissors, cut marshmallows into small pieces for fangs. Attach candy corn above eyes for horns and on sides for ears.
