Steps:
- Preheat oven to 350°F (177°C). Lightly grease your pizza pan.
- Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside.
- Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and both sugars together on medium speed until smooth, about 2 minutes. Add the egg and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla extract, then mix on high until combined.
- Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, add the chocolate chips. Dough will be thick and soft.
- Transfer the cookie dough to the pizza pan and flatten out with your fingers or a rubber spatula until the edges reach the sides (or just about to the sides).
- Bake for 22-25 minutes or until puffed and lightly browned on top. If you want the cookie pizza a little crispier on the edges, bake for a couple extra minutes. Allow the cookie pizza to cool on the pan set on a wire rack before slicing. Cover leftovers and store at room temperature for 2-3 days or in the refrigerator for up to 5 days.

Steps:
- Preheat oven to 350°F/180°C. Line two baking sheets with parchment paper and set aside.
- In a large bowl, sift together flour, baking soda, and salt. Set aside. In a standing mixer fitted with the paddle attachment, beat butter and sugars for 2-3 minutes, until fluffy. Beat in peanut butter, vanilla, and egg, and beat well until combined. Add flour mixture and beat on low speed just until combined. Don't over mix. Add in oatmeal, candies, and chocolate chips, and keep mixing on low just until combined. The less you mix, the softer the cookies will be.
- Drop rounded balls of dough onto prepared baking sheets, the size of 2 tablespoons each (I use an ice cream scoop), spacing them 2 inches apart. Bake for 9-12 minutes, until cookies just begin to brown at the edges and center is still soft. Cookies will appear undone and moist in the center, but will continue to bake on the warm baking sheet. Leave to cool for 10 minutes, then transfer to a wire rack to cool completely.
- Store cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months. To thaw, leave on counter, still covered, or overnight in the fridge.

Steps:
- Combine dry ingredients. Mix remaining ingredients until well blended, then gradually add dry mixture. Stir until well blended. Press out on a lightly greased and floured pizza pan. (if you want to add chocolate chips, raisins, or nuts, press them into the dough once it is spread on the pan.)
- Bake at 375 degrees F (190 degrees C) for 12-15 minutes until lightly browned. Cool 10-15 minutes in the pan on a rack, then loosen carefully with a spatula. You may leave the cookie in the pan, but if you plan to serve it whole (like a birthday cake), slide it out of the pan at this point and continue to cool on a rack.

Steps:
- Preheat oven to 350°F. Line cookie sheets with silicone mats or parchment paper; set aside.
- In a large mixing bowl, cream butter, brown sugar and white sugar with an electric mixer until light and fluffy.
- Beat in peanut butter, corn syrup and vanilla, mixing well.
- Add eggs one at a time, beating until incorporated.
- Stir in flour, baking soda and oats. Fold in M&Ms and chocolate chips, just until combined.
- If dough is too sticky to handle, refrigerate for at least 30 minutes. Drop 3 tablespoons of dough on prepared cookie sheet, spacing cookies at least 2 inches apart. Press a few extra M&Ms on the tops for more colorful appearance, if desired. Bake at 350°F for 6-9 minutes.
- Shorter cook time (6 minutes) will result in softer, chewier cookies. Cookies will look slightly under-baked; allow to cool on cookie sheet for 5-10 minutes after removing from oven.
- Use the longer bake time (9 minutes) if the dough has been chilled or if crisp cookies are preferred. Cool on cookie sheet for 2 minutes, then remove to wire rack to cool completely.

MONSTER COOKIE PIZZA
This recipe came about because of an accident with a cookie recipe. My son Aaron was making chocolate chip cookies for the first time with me supervising. He did great with the mixing but when it came time to bake he used the ice-cream scoop to put them on the cookie sheet. We went to check on them because they were going to spread out and we were surprised to find that they were spreading over the side of the pan so while my son got them out of the oven before they started to bake completely, I got a cookie sheet with sides and we sprayed it and scraped the melting cookies on to it. We finished baking them and to our surprise they looked like a pizza because all the chocolate was on the top and the cookie was on the bottom.

Steps:
- Preheat the oven to 375 degrees F.
- In a mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add 1 1/4 cups of the flour and the brown sugar and beat until thoroughly combined. Add the eggs, 1 at a time, and mix until incorporated. Add the vanilla and baking soda. Beat in the remaining 1 1/4 cups flour and mix until well combined. Stir in chocolate chips.
- Using a large ice-cream scoop, place full scoops of the batter on a cookie sheet with no sides. Bake for 5 minutes or until they start to melt. Remove from oven and place on a cookie sheet with sides or a medium size jelly roll pan. Finish baking about 6 to 10 minutes or until cookie base is dark brown. Remove from oven and let cool. They can be sliced into squares or broken into pieces.

- In a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed, about 3 minutes. Mix in the peanut butter, egg, and vanilla (in that order). Scrape down the sides of the bowl as needed. Slowly mix in the baking soda and flour. Do not over-mix. On low speed, beat in the quick oats, M&Ms, and chocolate chips just until incorporated. If the dough is very soft and unmanageable by hand, chill the dough for 30 minutes before rolling.
- Rolls balls of dough, about 2 Tablespoons of dough per ball, onto prepared baking sheet. Press a few extra M&Ms on top for looks, if preferred. Bake for 11-13 minutes– the cookies will still look a little soft, which is recommended. Slightly press down the baked cookies with the back of a spoon, since the cookies only slightly spread in the oven. Allow cookies to cool on baking sheet for 10 minutes before transferring to a wire rack. Cookies will firm up as they cool.

- Place the butter in a microwave safe bowl. Cook in the microwave on high for 30 seconds. The butter will only be partially melted, that’s OK.
- Scrape the butter into the bowl of a stand mixer fitted with a paddle attachment. Add the brown sugar, white sugar, corn syrup, vanilla extract, baking soda, and salt. Mix the ingredients together until they are well blended and uniform in color.
- Add the eggs, one at a time, mixing and scraping down the sides between additions. The mixture will increasingly look wet and “broken” but don’t worry.
- Add the peanut butter and mix in. Add the oats and the flour. Mix until the dry ingredients are absorbed.

- Place cookie mix, butter and egg in medium bowl. Stir together until dough forms. Transfer to a parchment lined cookie sheet. Push down dough using a rubber scraper (our your hand in a baggie sprayed with non-stick spray, like I used!) into a large circle about 1/4" to 1/2" thick. My uncooked cookie pizza was 11" in diameter.
- To make the frosting: Mix cream cheese and butter until smooth. Add in milk and vanilla. Add in powdered sugar 1 cup at a time, mixing until smooth in between additions.
