The BEST Monkey Butter Recipe image

This five ingredient monkey butter is so easy to make and tastes sooooooooo good.

Number Of Ingredients 5

4 perfectly ripe bananas (no spots)
14 oz can of crushed pineapple (with the juice)
2 cups white sugar
3 Tablespoons unsweetened ground coconut (I used "macaroon" coconut)
3 Tablespoons lemon juice (from a bottle)

Steps:

  • Chop the banana into thin slices.
  • Combine all of the ingredients in a large nonstick pan.
  • Bring to a rolling boil, stirring often.
  • Reduce the heat to low and simmer until the banana has dissolved and the mixture has thickened slightly (about 15 to 20 minutes), stirring frequently.
  • Serve warm over ice cream or on toast, pancakes or waffles.
  • Can be stored in the fridge for 4 to 6 weeks.

5 ripe bananas, no brown spots
1 (20 ounce) can crushed pineapple (with the juice)
3 cups sugar
3 tablespoons bottled lemon juice (to assure acidity)
1/4 cup shredded coconut (natural or sweetened)
1 pinch salt

Steps:

  • Add all ingredients to a saucepan slicing bananas over the top. Bring to a boil over medium heat, stirring often to prevent sticking. Continue stirring and mashing your fruit to get a thick consistency; about 20-30 minutes.
  • Ladle hot jam into sterilized jars leaving 1/4 inch headspace. Using a chopstick or plastic knife, pop any air bubbles. Wipe rims spotlessly clean and place a sealing lid on top the jar. Place your lid and rings on finger tight and process in a water bath canner for 15 minutes for pint jars and 10 minutes for half-pint jars.
  • If jar lid seals it will easily keep for one year in a cool, dark place. If jar doesn't seal, place it in your refrigerator and eat within 3 months, or within one month of opening.
  • Note: Product may turn a light pink hue.

1/2 cup butter, softened
1 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg, room temperature
1 medium ripe banana, mashed
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking powder
1/8 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter, brown sugar and peanut butter until blended. Gradually beat in egg, banana and vanilla. In another bowl, whisk flour, baking powder and salt; gradually add to butter mixture, mixing well., Spread into an 8-in. square baking dish coated with cooking spray. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, dust with confectioners' sugar.

This is a family favorite. It's very good on toast, especially beer-bread toast. (Recipes available from this site.) Try it with peanut butter for a great sandwich. You can also use it to top ice cream. It's popular with banana-lovers young and old. This can be frozen, but it will darken. As written, it's fine, but you can experiment with spices too. Cinnamon, nutmeg, ginger, lemon/orange peel are all good candidates. Pick one or two for variety.

1 cup water
6 tablespoons fresh lemon juice
3 ½ cups mashed banana
1 tablespoon whole cloves
6 half pint canning jars with lids and rings

Steps:

  • Combine the sugar and water in a saucepan; bring to a boil, and boil for 10 minutes. Stir in the lemon juice, mashed banana, and cloves. Reduce heat to low; simmer, stirring frequently, until the mixture thickens, about 45 minutes. Strain to remove cloves.
  • Divide the jam between the jars, screw on lids, and refrigerate.

1/4 cup lightly packed flaked coconut, chopped in food processor
1 1/2 cups sugar
1/4 cup fresh lemon juice (1 or 2 lemons)

Steps:

  • Add all ingredients to a 3-quart pot/saucepan and bring to a boil over medium-high heat. Reduce heat to medium and cook until thick, stirring occasionally. (There should be almost no liquid left. This may take from 45 to 60 minutes.) Cool the monkey butter before filling and sealing in small glass jars, then refrigerate.

500 g fresh cut pineapple
1/2 cup unsweetened coconut
90 g crystallized ginger, rough chopped
1 vanilla bean, sliced lengthwise
1 tablespoon cinnamon
1/4 teaspoon cardamom
1/2 teaspoon salt
3 tablespoons bottled lemon juice
1/4 teaspoon citric acid
1 tablespoon pectin
1 teaspoon coconut oil
3 cups sugar

Steps:

  • Place lemon juice, pineapple, ginger in a blender and puree.
  • Add remaining ingredients scraping the beans from the vanilla to the pot.
  • Cook stirring so it doesn't burn until it comes to 220 degrees.
  • Ladle hot jam into sterilized hot jars leaving about 1/2 inch head space. Remove air bubbles. Process 10 minutes in water bath.

20 oz. can of crushed pineapple - not drained
1/4 cup coconut
3 cups of white sugar
3 Tbsp bottled lemon juice

Steps:

  • The original recipe stated that the author preferred ground coconut over flaked coconut and that she purchased it at Winco in the bulk food section. Well, we are lucky enough to have a Winco close by so I ran by and picked some up. I have never used ground coconut before and have just always used the flaked coconut. So if you haven't seen ground coconut, here is what it looks like:DSC_0807 It is much finer than the flake coconut. To start, peel and slice the bananas and then put them into a large pot. Add the rest of the ingredients and put on the stove to bring to a boil, stirring constantly. DSC_0811 After bringing to a boil, lower to a simmer and cook until thickened, still stirring constantly. I was worried that maybe the bananas were going to stay in huge slices but after cooking, they were reduced down into a jam texture. mmm...... When properly thickened, spoon the mixture into sterilized glass jars and let cool. At this point in the recipe, this jam can just be refrigerated and will keep for approx 4-6 weeks. The lemon juice in the recipe will keep the bananas fresh. But once your family tries it, it might not last that long. Or after putting the jam in the jars, you can seal the jars with sealing lids and rings and process in a water bath for 15 minutes. ½ cup raisins
1 ½ tablespoons dark rum
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup butter, softened
¾ cup brown sugar, packed
½ cup mashed ripe banana
3 tablespoons low-fat buttermilk
1 teaspoon vanilla extract
2 egg whites
⅓ cup chopped walnuts
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan. Place the raisins and rum in a microwave-safe bowl. Place in the microwave and cook on High for 1 minute. Set aside until needed.
  • Stir the flour, baking powder, baking soda, and salt together in a mixing bowl. In another mixing bowl, beat the butter and brown sugar together until light and fluffy. Beat in the banana, buttermilk, vanilla, and egg whites until well blended. Gradually add the flour mixture, beating just until combined. Stir in the raisin mixture and walnuts. Spread the batter into the prepared pan
  • Bake in preheated oven until the top is golden, about 30 minutes. Cool in the pan 10 minutes before cutting into bars and transferring to a rack to cool completely. Dust with powdered sugar.
