THE BEST MONKEY BREAD RECIPE
Steps:
- Grease a large, 12 cup bundt pan with softened butter, use about 3 tablespoons or so.
- In the bowl of a stand mixer add the warm milk, water, sugar, butter, and yeast. Mix to combine. Let mixture sit for 5 minutes, then add the flour and salt. Using the dough hook mix on low speed. Once the dough comes together increase the speed to medium and mix for 6-8 minutes. The dough should come away from the sides of the bowl, should be tacky but not sticky, shiny and smooth.
- Transfer the dough to a large lightly oiled bowl. Turn the dough over once so that the top of the dough is lightly covered in oil. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
- While the dough is rising, combine the brown sugar and cinnamon in a medium sized bowl, stir to combine. Place the melted butter in a separate small bowl.
- To form the balls: Remove the dough from the bowl and pat it into an 8 inch square. Cut the square into 64 pieces. Roll each piece into a ball.
- Roll the balls, one at a time, into the butter and then roll into the cinnamon sugar mixture. Place the sugar coated balls in the bundt pan, layering, staggering, and filling in the gaps as you go.
- Once all dough balls have been dipped in the butter and sugar mixture and then placed into the bundt pan, COVER the bundt pan with plastic wrap and let rise for 45-60 minutes or until puffy. (The dough should rise and be just 1 inchesfrom the top).
- Unwrap the bundt pan and bake at 350°F for 30-35 minutes or until bubbly and deep brown in color. Cool in the pan for 5 minutes(no longer!!!) then turn out onto a platter. Let cool for 10 minutes and then pour the glaze overtop.
- To make the glaze: whisk the powdered sugar, milk, and a splash of vanilla in a large liquid measuring cup.

MONKEY BREAD
Monkey Bread is a pull-apart bread that's insanely addictive! It's made with soft biscuit dough that's coated in cinnamon and sugar, loaded with pecans, and drenched in a sticky, sugary, butter sauce. The finishing touch is a drizzle of homemade vanilla icing.

- Preheat the oven to 350°F and spray a bundt pan with nonstick spray.
- In a small saucepan, make the sauce by melting the butter, brown sugar, vanilla, and milk over medium-high heat. Boil for 1 minute. Remove from heat and set aside.
- Cut the biscuits into quarters or sixths.
- Whisk together the sugar, cinnamon, and allspice and coat each biscuit piece in the cinnamon mixture and place in the bundt pan.
- Layer the biscuits in with the chopped pecans and the butter mixture. Finish with the butter mixture over the top and around the edges of the biscuits.
- Bake for 40 to 45 minutes, when done the dough will puff up and become golden brown and crisp on top. And a toothpick inserted into the thickest part should come out clean.
- Remove from the oven and flip the monkey bread out onto a serving dish. Drizzle with vanilla icing, if desired.

- Beat 1 cup butter in the bowl of a stand mixer fitted with the paddle attachment on medium-low speed until butter is smooth and pliable but still cold, about 1 minute. Scrape into a medium bowl; set aside. Save mixer bowl because you’re going to use it again in a minute (no need to wash).
- Gently heat milk in a small saucepan over low until warm to the touch but not steaming hot. It should be 110°–115°. Whisk milk and yeast in a small bowl to dissolve yeast, then let sit until foamy, about 5 minutes.
- Meanwhile, whisk flour, sugar, and salt in reserved mixer bowl to combine. Add yeast mixture and eggs, fit bowl back onto mixer, and beat on low speed with dough hook, gradually increasing mixer speed to medium as dry ingredients are incorporated, until dough comes together around hook. Continue to mix on medium speed until dough is smooth, elastic, and no longer sticking to the sides of the bowl, about 5 minutes. Add more flour by the tablespoonful as needed if dough isn’t pulling away from bowl cleanly.
- With motor running, gradually add reserved butter about a tablespoonful at a time, waiting until it is absorbed before adding more. This process can take several minutes, so be patient. When you’re done adding the butter, the dough will be extremely smooth, soft, and supple but not sticky. Place dough in a large buttered bowl and cover. Let sit in a warm, draft-free spot until nearly doubled in size, 55–65 minutes.

- Wraps. Wraps are a favourite in our van. This entry to my vanlife recipes list requires minimal effort, but you really feel like you’re eating a feast once it’s all plated up.
- Sushi. Sushi is one of those vanlife recipes that people think you have to be a chef to make but is actually so easy. Remember, they’ll taste just as good even if your roll technique isn’t perfect yet.
- Potato Hash. I’ll cook this when I’m really craving roast potatoes. It’s crispy and potato-y and can be served with gravy. Mmm…why did I start this Vanlife Recipes article on an empty stomach!
- Calzones. This is one of Seb’s favourite vanlife recipes. It’s one for the ridge monkeys, just proving that you don’t need an oven to enjoy pizza! You can put anything you like inside your calzone; I’m going to show you one example below, but get creative and add your favourite pizza toppings!
- Vegetarian Lasagne. Another Italian vanlife recipe favourite; yes you can make lasagne on a hob! Ingredients. 4-6 lasagne sheets. 500ml passata. 3 cloves of garlic.
- Risotto. One pot dishes are great vanlife recipes; less space, less gas used, and less washing up! Ingredients. 150g risotto rice. 200g mushrooms. 1 red pepper.
- Mediterranean Grilled Sandwich. A fancy cheese toasty, but oh so good. For us, this is one of those ‘bottom of the cupboard’ vanlife recipes; we nearly always have bread, butter, cheese, jarred olives, pesto, tomato purée and jarred peppers, and this sandwich doesn’t use that much of each of them.
- Oriental Style Salmon. I love the infusion of soy, ginger and garlic on this tender fish dish. It’s another one of those vanlife recipes that makes my mouth water (well…they all do, but you get the idea!)
- Vanlife Curry. Any type of curry is great in the van; these vanlife recipes are one pot (plus rice) and pretty much anything can go in them, as long as you’ve got some spices to hand.
