MONKEY BREAD

Monkey Bread image

This amazing, pull-apart monkey bread is so easy, you can't mess it up!

Categories     Christmas     breakfast     brunch     comfort food     main dish

Time 1h

Yield 8 servings

Number Of Ingredients 5

3 cans buttermilk biscuits (the non-flaky ones)
1 c. granulated sugar
2 tsp. (to 3 teaspoons) cinnamon
2 sticks butter (1 cup)
1/2 c. brown sugar

Steps:

  • Preheat the oven to 350 degrees.
  • Open up all three cans of biscuits and cut each biscuit into quarters.
  • Next, combine the white sugar with 2-3 teaspoons of cinnamon. (3 teaspoons of cinnamon gives it a fairly strong cinnamon flavor. If you're not so hot on cinnamon, cut it back to 2 teaspoons.) Dump these into a 1 gallon zip bag and shake to mix evenly.
  • Drop all of the biscuit quarters into the cinnamon-sugar mix. Once all the biscuit quarters are in the bag seal it and give it a vigorous shake. This will get all those pieces unstuck from one another and nicely coated with cinnamon-sugar. Spread these nuggets out evenly in the bundt pan.
  • At this point, you're going to want to melt the two sticks of butter together with ½ cup of brown sugar in a saucepan over medium-high heat. This can be light or dark brown sugar. Cook butter/sugar mixture, stirring for a few minutes until the two become one. Once the brown sugar butter has become one color, you can pour it over the biscuits.
  • Bake for about 30-40 minutes until the crust is a deep dark brown on top. When it's finished cooking, remove it from the oven. If you have the willpower, allow it to cool for about 15-30 minutes before turning it over onto a plate.

CINNAMON ROLL MONKEY BREAD

Cinnamon Roll Monkey Bread image

Cinnamon roll monkey bread is the decadent combination of cinnamon rolls baked monkey-bread-style into a gooey, flaky, indulgent treat!

Categories     Easter     Mother's Day     winter     baking     comfort food     dessert

Time 1h

Yield 10-12 servings

Number Of Ingredients 8

3 17.5-oz. cans large cinnamon rolls, such as Grands
1/2 c. granulated sugar
1 tbsp. ground cinnamon
1 stick unsalted butter (1/2 cup)
1 tsp. vanilla extract
1/3 c. light brown sugar, firmly packed
2 oz. cream cheese, room temperature
Nonstick cooking spray

Steps:

  • Preheat the oven to 350°. Open the cinnamon roll tubes and remove the frosting cups; set them aside to come to room temperature. Separate the dough into individual cinnamon rolls and cut each roll into 6 pieces.
  • In a large mixing bowl, combine the granulated sugar and cinnamon. Set aside.
  • In a small saucepan, melt the butter over medium heat. After it is melted, continue to cook it for an additional 3 to 5 minutes, or until the foam and butter underneath are golden brown. Remove from the heat and add the vanilla (it will bubble up!). Once the bubbles have subsided, whisk in the brown sugar until smooth and well combined.
  • Meanwhile, thoroughly spray a 12-cup nonstick Bundt pan with nonstick cooking spray. Add half of the cinnamon roll pieces to the mixing bowl with the cinnamon-sugar mixture. Toss well to coat the pieces. Place the pieces in the Bundt pan, creating an even layer. Drizzle with half of the butter-brown sugar mixture. Repeat tossing and layering with remaining ingredients, stirring butter-brown sugar mixture before drizzling, if needed.
  • Bake for 35 to 40 minutes, until the monkey bread has puffed up about 1 inch in the pan and the top is deep brown. Let cool for 10 minutes in the pan, then place a dinner plate over the top of the pan. With oven mitts, hold the pan and dinner plate together, then flip over. Carefully remove the bundt pan (give it a few taps if the bread doesn't seem to be releasing) and let it slide out onto the plate.
  • Meanwhile, mix the cream cheese with a small rubber spatula until very smooth. Add in the contents of the frosting cups, whisking well to combine. Dollop the icing all over the top of the monkey bread, letting it melt into the top and drizzle down the sides. Serve immediately.

Wow wow wow. Clearly, USC alums can cook ;) Loving this easy, simple and oh so delicious and gluttonous treat! This calls for a bundt pan but I've successfully cut the recipe in a third and used a loaf pan.

Time 40m

Yield 12 serving(s)

Number Of Ingredients 5

1/2 cup brown sugar
1 cup butter (1 cup)
2 -3 teaspoons cinnamon
3 (10 ounce) cans buttermilk biscuits (the non-flaky ones)
1 cup sugar

Steps:

  • preheat that oven to 350.
  • open up all three cans of biscuits and cut each biscuit into quarters.
  • At this time you'll want to combine the 1 cup of regular sugar with 2-3 teaspoons of cinnamon. I use 3 teaspoons of cinnamon and this gives it a fairly strong cinnamon flavor. If you're not so hot on cinnamon, cut it back to 2 teaspoons. Dump these into a 1 gallon zip bag and shake to mix evenly.
  • drop all of the biscuit quarters into the cinnamon-sugar mix. Go ahead...all of them. Yes, they're sticking together right now, but just trust me.
  • Once all the biscuit quarters are in the bag, seal it and give it a vigorous shake. You might have some excess sugar left over and that's okay.
  • Spread these nuggets out evenly in your bundt pan. I suppose you might want to grease this pan before doing this, but I'm pretty sure the gallon of butter we are about to add will keep it safe. Un-greased always works for me.
  • melt those two sticks of butter together with 1/2cup of brown sugar. This can be light or dark brown sugar.
  • Stir together over a medium-high heat until the two become one.
  • Once the brown sugar butter has become one color, you can pour it over the biscuits. At first...it's going to look like too much. It's okay though.
  • Bake this @ 350 degrees for about 30-40 minutes until the crust is a deep brown on top.
  • If you have the willpower, allow this to cool for about 15-30 minutes before turning it over onto a plate. If it doesn't slide right down onto the plate, give it a few love-taps until it plops. It'll hold.
