CINNAMON SUGAR BREAD, BREAD MACHINE
This bread is just so good, more like a coffee cake than a bread. I didn't have bread flour, so used regular unbleached, all-purpose flour and took it out about 3 minutes before the beeper because I like a less-crispy crust. Well, what a treat. Major keeper. Not only would I make it again, I think it would make some of the most awesome cinnamon roll dough, and I'm definitely going to try that very soon. I would also suggest using this bread to make Cinnamon Toast Deluxe, recipe #93128. A definite cinnamon extravaganza, and a wonderful treat, especially for those of you who are looking for a stronger cinnamon flavor.

Steps:
- Place ingredients in the bread machine pan in the order suggested by the manufacturer.
- Bake using the sweet bread setting if your machine has it.
- If not, use white bread setting.
- When the bread is done, remove from the machine and let sit on a rack for 10 minutes before removing from the pan.
- If it sticks, just loosen the sides with a pliable, plastic spatula and it should slip out easily.
- This makes a 1 1/2 pound loaf that rose really nicely.
- I did check the dough about 5, 10 minutes into the kneading cycle; if you squeeze a good amount of the dough between your thumb and fingers and it seems a bit moist, and some dough sticks to your fingers, it should be just right; if not, adjust with water or flour accordingly.

MONKEY BREAD II
Here is a recipe for a bread machine, though it can easily be done in the conventional, muscle building way. You use the dough only setting and do the rest by hand. For machines that do 1 1/2 - 2 pound capacity.

Steps:
- Remove baking pan from machine. Place yeast, flour, ground cinnamon, salt, white sugar, 2 tablespoons butter and water in the order that is recommended for the bread maker. Make sure that no liquid comes in contact with the yeast. Select dough cycle and press start.
- When dough is complete, place dough on floured surface and knead 10 to 12 times.
- In a medium saucepan on low heat, melt one cup of butter, stir in brown sugar and raisins ( 1/4 cup of chopped nuts is good too!). Stir until smooth. Remove from heat.
- Cut dough in one inch chunks. Drop one chunk at a time into the butter sugar mixture. Thoroughly coat dough pieces, then layer them loosely in a greased Bundt or tube pan, staggering layers so you're plopping each dough chunk over a space between two below. Let rise in a warm, draft-free spot until dough is just over the top of the pan, 15 to 20 minutes.
- Bake in a preheated 375 degree F (190 degree C) oven for 20 to 25 minutes or till golden brown. Remove from oven, place a plate face down in top of the pan and, using oven mitts to hold plate on pan, turn over both until bread slides out onto plate. Serve warm...and enjoy.

- Preheat oven to 350. Place 2 tbsp butter, water, sugar, salt, 1 tsp cinnamon, flour and yeast into bread machine. Set to dough cycle. If it's humid, and the dough seems like it's coming out sticky, add a little flour while still early in the dough process.
- When dough is finished, combine 1/2 c white sugar and 1 tsp cinnamon. Roll dough into small balls, roll into sugar/cinnamon mix and put into greased bundt pan. When done, cover with towel and let rise 1/2 hour.
- After dough rises for about a half hour, put 1/4 c. butter in small pan and melt. Add brown sugar and vanilla, bring just to boil. Pour over bread pieces. Bake at 350 30-35 minutes.

- In bread machine pan, place the first 11 ingredients in order suggested by manufacturer. Select dough setting. - Place hot water, egg, butter, sugar, and salt in bread machine.
- Add 3 cups flour. Make a small well in the flour and add yeast.
- Set bread machine to "dough" for 90 minutes (1 hour 30 minutes) and start.
- When dough is finished. Pour directly into a greased bread pan. If needed, gently turn the bread or tuck in the edges so the top is smooth.
- Place bread in COLD oven and set oven to 350 degrees. Set timer for 30 minutes.
- When finished baking, remove from oven and carefully remove bread from the pan (it's ok if it is sticky).
- Place on a baking rack to cool and brush the top with butter. Place a towel over the bread or place in a plastic Ziplock bag to keep from drying out.
