Better than the chippy! Monk Fish Bites with Tartar Sauce - perfect Friday night even if you are calorie counting or following plans like Weight Watchers.

600 g monk fish ((or other firm white fish))
60 g wholemeal bread
1 tbsp cornflour
1 egg
2 tbsp lightest mayonaise
1 pickled gerkin (finely diced)
1 shallot (finely diced)
1 tbsp capers (finely chopped)
4 tbsp pickling liquor (from the gherkin jar)
1 tsp fresh dill (finely chopped)

Steps:

  • Cut the monk fish into 20 bite sized pieces. Blitz the bread into coarse bread crumbs. Place the cornflour into one bowl and the bread crumbs into another bowl. Beat the egg in another dish.
  • Dip each piece of fish into the cornflour then egg, then bread crumbs and place onto the grill tray in the Halo (or onto a baking tray if using an oven). Cook for 15 minutes until the fish is cooked and crispy (15 minutes in the oven also, set to 180 degrees).
  • Place all of the ingredients into a bowl and mix well. If you want your tartar sauce more sharp, add some more of the vinegar from the gerkin jar - you can use white wine vinegar but the pickling liquor has much more flavour!

For perfectly grilled catch-of-the day, use fish steaks that are at least 1-inch thick. For thinner steaks or fillets, use a fish grill basket.

2 tbsp(s) Fresh lemon juice divided
0.25 cup(s), sliced Uncooked vidalia onion(s) finely chopped
0.25 cup(s) Unsweetened dill pickle(s) finely chopped
2 tbsp(s) Capers finely chopped
1 tbsp(s) Fresh parsley fresh, finely chopped
2 tbsp(s) Fresh dill fresh, finely chopped
0.5 tsp(s) Sugar
0.125 tsp(s) Table salt or to taste
0.125 pinch Black pepper or to taste
0.25 cup(s) Reduced calorie mayonnaise
1 spray(s) Cooking spray

Steps:

  • Wash fish and pat dry. Mix oil with 1 tablespoon of lemon juice in a small cup. Place fish in a glass dish and baste with oil mixture; cover and refrigerate.
  • Meanwhile, to make tartar sauce, combine onions, pickles, capers, parsley, dill, sugar, remaining tablespoon of lemon juice, salt and pepper in a small bowl; stir in mayonnaise, cover and set aside.
  • To grill fish, coat grill rack with cooking spray (make sure grill is off; do not spray onto heated grill). Preheat grill to medium-high. Grill fish for 4 minutes; flip and cook until fish turns opaque all the way through, basting with any remaining oil mixture, about 4 minutes more. (Cook longer for fish more than 1-inch thick.) Serve with tartar sauce. Yields about 4 to 5 ounces of fish and 2 1/2 tablespoons of sauce per serving.To broil fish, place broiler rack 2-inches away from heat source. Heat broiler and broiler pan to medium-high heat. Place fish on heated pan and cook for 4 minutes; turn and cook for 4 minutes more. Serve with tartar sauce. Yields about 4 to 5 ounces of fish and 2 1/2 tablespoons of sauce per serving.
