AUTHENTIC GERMAN LEBKUCHEN



Authentic German Lebkuchen image

This recipe is over 150 years old and has been baked by my family for many generations for Christmas. They are much easier to make than other lebkuchen and ingredients have been updated to what's available now. They are made with almond flour, hence are gluten free and also contain no dairy.

25 backoblaten (German baking wafers)
2 cups blanched almond flour
1 ¼ cups white sugar
3 eggs
½ cup ground hazelnuts
7 tablespoons finely chopped candied lemon and orange peel
2 teaspoons ground cinnamon
1 teaspoon vanilla sugar
1 pinch ground cloves
2 cups chopped dark chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper and arrange backoblaten (German baking wafers) on top, leaving a 1-inch space between them.
  • Combine almond flour, sugar, eggs, ground hazelnuts, candied lemon and orange peel, ground cinnamon, vanilla sugar, and ground cloves and mix into a firm dough.
  • Shape mixture into balls. Arrange balls on the prepared wafers; press gently to flatten into 1/2-inch-high rounds.
  • Bake in the preheated oven until light brown in color, 15 to 20 minutes. Cool completely, about 30 minutes.
  • Place chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Cover the top of each lebkuchen with chocolate.

This is a German spice cookie recipe, similar to gingerbread, which I received from my mother, Sabine Muller. I have been making these for over 20 years. I looked online at other Pfefferkuchen recipes and none were like this one. I thought that I would share it with you. The literal translation is 'pepper cakes', I always ice them with a lemon glaze.

1 ½ cups molasses
1 ½ cups honey
1 ½ cups white sugar
1 teaspoon ground anise seed
½ teaspoon ground cardamom
1 teaspoon ground ginger
1 teaspoon ground nutmeg
¾ teaspoon ground cloves
¾ teaspoon ground cinnamon
1 ½ teaspoons grated lemon zest
½ cup butter, cut into pieces
2 tablespoons baking soda
1 tablespoon water
6 cups all-purpose flour
1 tablespoon baking powder
¼ cup cocoa powder
2 eggs
3 cups all-purpose flour

Steps:

  • Bring molasses, honey, and sugar to a simmer in a large saucepan over medium heat, then remove from heat and allow to cool for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir in anise, cardamom, ginger, nutmeg, clove, cinnamon, lemon zest, and butter. Dissolve baking soda in water, then stir into the molasses mixture. Sift together 6 cups of flour with the baking powder and cocoa powder into a large bowl. Stir in molasses mixture and eggs until smooth. Stir in remaining 3 cups flour until a stiff dough has formed.
  • Divide dough into 4 pieces to make it more manageable. Roll the dough to 1/4-inch thick on a well floured surface and cut into shapes with a cookie cutter.
  • Bake cookies on ungreased baking sheets 8 to 10 minutes until lightly browned around the edges. Cool completely on a wire rack.

1 egg
¾ cup brown sugar
½ cup honey
½ cup dark molasses
3 cups sifted all-purpose flour
½ teaspoon baking soda
1 ¼ teaspoons ground nutmeg
1 ¼ teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
½ cup slivered almonds
½ cup candied mixed fruit peel, finely chopped
1 egg white, beaten
1 tablespoon lemon juice
½ teaspoon lemon zest
1 ½ cups sifted confectioners' sugar

Steps:

  • In a large bowl, beat the egg, brown sugar and honey until smooth. Stir in the molasses. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice; stir into the molasses mixture. Stir in the almonds and candied fruit peel. Cover or wrap dough, and chill overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into 2x3 inch rectangles. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until firm. While still warm, brush the cookies with the lemon glaze.
  • To make the glaze: In a small bowl, stir together the egg white, lemon juice and lemon zest. Mix in the confectioners' sugar until smooth. Brush over cookies.

BETHMAENNCHEN (GERMAN MARZIPAN CHRISTMAS COOKIES)

Bethmännchen are a marzipan specialty from Frankfurt, Germany. It translates to "little praying men". They can easily be made at home, It's important to only use very neatly halved almonds for good-looking Bethmännchen.

14 ounces marzipan
60 almonds Nuts, almonds
1 large egg white

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C). Line a baking sheet with parchment paper.
  • Knead marzipan well and divide into about forty 1 1/2-inch cubes of equal size. Roll each cube into a ball and shape into a round cylinder with a point.
  • Push 3 halved almonds into each marzipan cylinder so the pointy sides of the almonds are facing the top.
  • Beat egg white lightly in a cup and brush each cookie with egg white. Set onto the prepared baking sheet.
  • Bake in the preheated until the tops of the almonds are lightly browned, about 15 minutes. Cool on a wire rack. Store in airtight containers.
