LAZY GOURMET'S CHOCOLATE BROWNIES

Steps:
- In a large bowl, sift flour and baking powder. Set aside.
- In a large saucepan, melt the butter. Add the white sugar, brown sugar and cocoa. Blend well.
- Beat in 1 egg at a time. Add flour and blend well. Add vanilla and walnuts, mixing well.
- Pour into prepared 9 x 13 pan. Bake for 30 minutes. Centre will be firm but not hard.

Steps:
- In a medium saucepan, over medium-low heat, melt the butter. Add the cocoa powder and sugar. Add the vanilla.
- Mix a little of the chocolate mixture with the eggs, then pour back into the pot. Mix quickly.
- Add the flour, baking powder, salt and walnuts and mix until just incorporated.
- Pour batter into an 8x8-inch square pan.
- Bake at 350°F for 20 minutes or tested with a toothpick.

GRAND MARNIER BROWNIES
Steps:
- Brownies: Preheat oven to 350F. Generously butter a 9 X 13 pan and line with parchment paper, with enough at ends or sides so that you can lift out the brownies when they are baked. Melt butter. Add sugars and cocoa and stir until sugars start to dissolve. Cool to body temperature. Beat in eggs, one at a time, then Grand Marnier. Toss candied orange peel in flour and baking powder, add to chocolate mixture and mix just until blended. Bake at 350 for 20-23 minutes -- sides will be set and centre will be soft but not liquid. Let cool completely in pan, then remove from pan before icing. Garnish with strips of candied orange peel, or finely diced peel. Icing: Place butter, sugar and cocoa in food processor fitted with steel blade. Pulse until blended. Add Grand Marnier or juice, blend again. Stir in orange zest.

- In a large bowl, beat the butter, eggs and vanilla. Combine the dry ingredients; gradually add to butter mixture. Stir in nuts (do not overmix). , Spread into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , In a small bowl, beat the icing ingredients until smooth. Spread over cooled brownies. Cut into bars.

ESPRESSO BROWNIES
Steps:
- Brownies: Preheat oven to 350F. Generously butter a 9 X 13 pan and line with parchment paper, with enough at ends or sides so that you can lift out the brownies when they are baked. Melt butter in large heatproof mixing bowl over hot water. Add sugars, cocoa and espresso powder and stir until sugars start to dissolve. Cool to body temperature so eggs don't cook. Using stand or hand mixer, beat in eggs, one at a time. Add flour and baking powder and mix just until blended. Stir in chocolate chips. Spread in prepared pan. Bake at 350F for 20-23 minutes -- sides will be set and centre will be very soft but not liquid. Let cool in pan, then remove from pan and cool completely before icing. Icing: Place butter, sugar,cocoa, salt and espresso powder in food processor fitted with steel blade. Pulse until smooth. Add coffee liqueur if desired.
