Another hot & spicy recipe from my husband Mondo. After much experimenting he came up with this magic mixture. This recipe gets rave reviews. If you love this recipe make sure you try the hot & spicy pickles too in my cookbook!

Number Of Ingredients 9

2 lbs venison steak, cut into strips
7 ounces soy sauce
7 ounces Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons kosher salt or 2 tablespoons sea salt
2 teaspoons black pepper
1 teaspoon liquid smoke flavoring
1/2 tablespoon garlic powder
1 tablespoon red pepper flakes

Steps:

  • Cut meat into strips and remove all fat.
  • Add all ingredients into ziplock bag and shake well.
  • Marinade for 8-24 hours.
  • Place on dehydrator.
  • Remove after fully dried and place into a clean ziplock.
  • For the first 1/2 day keep bag slightly opened so any remaining moisture will evaporate.
  • Share with friends and family!

½ cup brown sugar
1 tablespoon ground black pepper
1 tablespoon onion powder
1 tablespoon garlic salt
1 tablespoon lemon juice
3 tablespoons liquid smoke flavoring
1 teaspoon paprika
1 teaspoon hot pepper sauce
½ cup Worcestershire sauce
½ cup teriyaki sauce
⅓ cup soy sauce
1 pound venison, cut into 1/4 thick strips

Steps:

  • Whisk together the sugar, black pepper, onion powder, garlic salt, lemon juice, liquid smoke, paprika, hot pepper sauce, Worcestershire sauce, teriyaki sauce, and soy sauce in a large glass or ceramic bowl. Add the venison strips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 24 hours. Mix the venison a few times as it marinates to ensure even absorption of the marinade.
  • Remove the venison strips from the marinade and squeeze off excess. Discard the remaining marinade. Arrange the venison on the racks of a food dehydrator so that it does not overlap.
  • Dry the venison on High until dry but still pliable, about 4 hours. The jerky should bend without breaking. Store the jerky in an airtight container or in a resealable plastic bag.

SPICY BEEF JERKY



Spicy Beef Jerky image

This is not for the weak of heart. But for those who like things spicy. The prep time includes the time it takes to marinate the meat.

Number Of Ingredients 7

2 lbs london broil beef or 2 lbs flank steaks
1 cup dry red wine
1/2 cup soy sauce
1 cup Worcestershire sauce
1/2 cup red wine vinegar
4 cloves garlic, mashed
1 jar red chili sauce (found in the Asian section of the store)

Steps:

  • Place the meat in the freezer for an hour or so, until it is very firm—but not frozen—to make slicing easier.
  • With a long, sharp knife, cut the meat into diagonal slices less than 1/4 inch thick.
  • Lay the slices flat in a large glass or enamel baking dish.
  • Combine the red wine, soy sauce, Worcestershire sauce, vinegar, garlic, chili sauce and garlic.
  • Pour over the meat, cover, and marinate in the refrigerator for about 4 hours (overnight works best), turning the slices several times to coat.
  • Remove the meat from the marinade and pat it dry with absorbent paper towels.
  • Arrange the slices in a single layer on wire racks (such as those used for cooling cakes and cookies) and set the racks on foil-covered baking sheets (to catch the drips).
  • Place in a 175º oven for about 2 or 3 hours, until dry and dark brown, but still pliable.
  • Watch it closely; during the last half hour or so the meat can burn quickly.
  • Let cool completely, then store airtight.

SPICY DEER JERKY

I don't have any hunters in my family, but my "deer" friend, John, always brings me one every year. I'm unsure of yields. This is our favorite jerky. It's awesome. Unfortunately, it doesn't hang around long. I use to have to get the Sambal Oelek at an oriental market, but I now see it in the Asian section of my local supermarket. I actually use 2 heaping tablespoons. You do it to your taste.

1 lb venison, sliced thin
1/2 cup brown sugar
1/2 cup soy sauce
2 tablespoons garlic and red chile paste (Sambal Oelek)

Steps:

  • Mix the sugar, soy and garlic chili paste together.
  • Marinate the meat in the sauce for a few hours.
  • Dry in a low oven or a dehydrator for about 8 hours until the meat cracks when you bend it.

1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons cracked black pepper, or to taste
1 pound lean beef sirloin tip, sliced into 1/8 inch strips
½ cup brown sugar
⅔ cup soy sauce
¼ cup teriyaki sauce
¼ cup Worcestershire sauce
⅓ cup balsamic vinegar
5 tablespoons liquid smoke flavoring
½ cup pineapple juice
1 teaspoon red pepper flakes, or to taste

Steps:

  • In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
  • In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Refrigerate marinade until cool.
  • Pour cooled marinade over the seasoned meat, and mix by hand to coat. Seal the bowl, and refrigerate for at least 3 hours.
  • Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

I got the recipe from my Dad. We have been making Jerky for several years now. It is a spicy but great recipe. Very inexpensive compared to the store bought stuff.

6 lbs ground venison
1 1/2 teaspoons Morton Tender Quick salt
8 teaspoons table salt
2 teaspoons black pepper
2 teaspoons garlic powder (can use extra)
1 teaspoon cayenne pepper
1 1/2 teaspoons ground cardamom
3 teaspoons Accent seasoning
2 tablespoons liquid smoke

Steps:

  • Mix all ingredients together extremely well.
  • Refrigerate for 3 days.
  • Mix well once every day.
  • Use a Jerky Gun to make strips and cook in a food dehydrator as directed by manufacture.

I finally wrote down the exact amounts I used to get some great tasting jerky! The cayenne pepper is optional as it does spice it up a bit. The kids love it and its better than feeding them twinkees.

5 lbs ground beef or 5 lbs ground venison
2 tablespoons mortons tender quick salt
1/3 tablespoon fresh coarse ground black pepper
1/2 tablespoon garlic powder
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons brown sugar
1/2 tablespoon liquid smoke
1 teaspoon cayenne pepper

Steps:

  • Mix all ingredients. Pour over meat and mix well. Put it in the fridge overnight. I use a dehydrator and a jerky gun to dry the stuff as I've found this is the best way to make jerky. Usually takes about 7 hours to dry.

1 lb venison
1 teaspoon liquid smoke
1 tablespoon A.1. Original Sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 cup soy sauce
1/4 cup whiskey, i like seagram's 7 (optional)

Steps:

  • Take your meat to the local butcher and have it cut thin.
  • You can do this yourself by semi-freezing your meat then cut it into 1/4-inch strips.
  • Note: meat cut with the grain will be chewy, and against the grain will be tender.
  • Combine everything but the meat in a large bowl and stir well.
  • Marinate meat over night in the refrigerator, then drain.
  • To use a dehydrator place meat on racks, do not overlap, and let dry for 24-36 hours.
  • To use an oven, preheat to 150-degrees then place meat on cookie sheets without overlapping for 8-10 hours.
  • Turn at least once during drying.
  • They are ready when the jerky bends without breaking.
  • Let cool, seal tight, and refrigerate for long-term storage.

2 lbs sliced venison, 1/8 inch thick
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon salt
1 teaspoon ground red pepper
2 cloves garlic, sliced
1 cup corn whiskey
1 cup water

Steps:

  • Slice the meat when it is lightly frozen.
  • The cuts should be long, thin and with the grain.
  • Cut across the grain if you want more tender, but more brittle jerky.
  • Trim off all of the fat.
  • Marinate strips in a glass container overnight.
  • You may substitute 2 cups of red wine for the corn whiskey and water.
  • Pat dry and arrange pieces side by side on an oven roasting rack, with- out overlap.
  • Cook at minimum heat (150F) for 6 hours.
  • Leave oven door ajar to allow moisture to escape.
  • Meat should be dark, dry and store jerky in a cool, airtight container.
