FRIED CABBAGE WITH BACON AND ONIONS
By Low Carb Layla: Fried cabbage is basic staple item in the low carb world. Surprisingly I've never tried it until I made it tonight. It was so good! I feel like I've been missing out on something by not trying it sooner. My kids didn't care much for it but my carb-etarian Hubs thought it was excellent! I looked up a few recipes to get a feel for how to prepare and wound up cooking it in a very similar way I cook my Bacon and Onion Green Beans which are heaven on a plate (this cabbage ranks right up there). I think you can cook anything with bacon, onions, salt and pepper and it will come out fabulous! I served this with the Laughing Cow Steak and thought they were a nice combo on my plate. Steps:
- In a large pan cook the chopped bacon over medium to medium-high heat. Once the fat renders off and there's plenty of bacon grease in the pan, add the chopped onion. Right when the bacon has just started to crisp, add the chopped cabbage, salt, pepper and Worcestershire sauce (optional but I like the tiny bit of smokey tang that it gives some foods). Stir occasionally until cabbage is softened. I like some pieces to get a little pan browned so I don't stir very often. Taste before serving as you may need to add more salt and pepper depending on your preference.

This is a family favorite that is put into every cookbook for my kids when they move out and get married. It is a beautiful dish with many colors and full of flavor. Warning, it is addictive.

Steps:
- Place the bacon in a large stockpot and cook over medium-high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper, onion powder, garlic powder, and paprika. Reduce heat to low, cover, and simmer, stirring occasionally, about 30 minutes more.

- Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
- Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

MONDAY NIGHT CABBAGE, BACON AND PEPPERS
This is another favorite recipe that my sister and I serve to the group of want-a-be race car drivers that meet in the Man Cave every Monday night. The flavors are simple but go so well together. We like all our veggies crisp tender so you may need to increase the cooking time a little to suit your taste.

Steps:
- In a large non-stick skillet fry bacon, remove from skillet and drain on paper towels. When cool enough to handle chop coarsely and set aside.
- Remove all but 1 TBL of bacon grease.
- Heat skillet over medium heat (adjust as needed) and add the peppers and cook for about 5 to 6 minutes.
- Add the onion and cook until just crisp tender.
- Add the cabbage and wilt until the desired tenderness, about 10 minutes.
- Add the bacon back to the skillet and mix well.
- Add salt and lots of pepper to taste.
- Enjoy!

ROASTED CABBAGE WITH CRISPY BACON
Roasted Cabbage is basted with olive oil, shallot, and garlic, then topped with crumbled crispy bacon. This is such an easy, healthy, delicious side dish to go with any meal!

- Preheat oven to 425 degrees F. Lightly coat a 15x10-inch roasting pan with 1/2 tablespoon of the olive oil.
- Slice the cabbage into 1-inch thick steaks, lengthwise, keeping the core intact.
- Brush both sides of each cabbage steak with the remaining olive oil. Sprinkle the shallot, garlic, salt, and pepper over each one. Arrange cabbage steaks on the roasting pan (overlapping slightly is fine, if necessary.)
- Transfer to the oven and roast for 20 minutes. Gently turn each steak over and roast for an additional 15 minutes, until the cabbage is tender and a little charred around the edges.
- In the meantime, cook your bacon! You can either:1. Cook it in the oven with the cabbage - line a rimmed baking sheet with foil coated with cooking spray. Lay the strips of bacon on the baking sheet, without overlapping. Transfer to oven and cook for 20-25 minutes until crispy. Drain on a paper towel-lined plate. Once cooled, crumble into pieces.2. Cook it in a fry pan - diced up the bacon. In a medium nonstick skillet, cook bacon over medium-high heat until browned and crispy, about 5-6 minutes. With a slotted spoon, transfer to a paper-towel lined plate to drain.
- Sprinkle the crispy bacon over the roasted cabbage and serve immediately.

- Saute the onion and bacon in the olive oil in a large pot until the onion is softened and the bacon is cooked through; add the garlic and cook for about another two minutes, stirring frequently.
- Add the cabbage to the pot; it will take up a lot of room but will wilt down as it cooks.
- Cook until the cabbage is done, stirring frequently.
- It will take about ten to twelve minutes; if you want a softer cabbage, cover the pot and let it steam for about an extra five minutes or so.
- If desired, a little bit of sugar and vinegar can be added near the end of cooking time.

SERIOUSLY GOOD BACON FRIED CABBAGE
Bacon makes this simple fried cabbage crave-worthy. As the cabbage cooks in the pan, it wilts, turns tender, and becomes sweet. White cabbage is our favorite for this, but other cabbage varieties will work. Keep in mind, though, that Napa cabbage will release more moisture and won't brown as nicely in the pan. We love using peppered bacon for extra flavor, but your favorite type of bacon will also work.

- Add bacon, in one layer, to a large skillet over medium heat. Cook, stirring occasionally until the fat renders and the bacon is crispy; 6 to 8 minutes. Take the pan off of the heat, and then use a slotted spoon to transfer the bacon to a bowl and save for later.
- Remove all the bacon fat from the pan except for one tablespoon. (Leave more or less, depending on your preference. One tablespoon tastes great, but doesn't make the cabbage greasy.)
- Place the pan back onto medium-high heat then add the cabbage, garlic, red pepper flakes, and the salt. It might seem like too much cabbage for the pan, but as it cooks, the cabbage will wilt down.
- Cook, occasionally stirring until the cabbage is tender and some of the cabbage begins to turn light brown; 10 to 15 minutes. Stir in the mustard, apple cider vinegar, and the reserved cooked bacon. Taste then adjust with more salt, pepper, and vinegar as needed.
