1/4 cup Miracle Whip
3 Tbsp. milk
1/2 Tbsp. red wine vinegar
2 tsp. sugar
Salt and Pepper (to taste)
2 cups sliced cucumbers

Steps:

  • Whisk together Miracle Whip, milk, vinegar, sugar, salt and pepper until well blended. Add sliced cucumbers to the mix and combine until all cucumbers are covered. Serve immediately or refrigerate before serving.

3 large cucumbers
1 teaspoon salt
¼ cup white sugar
⅛ cup water
¼ cup distilled white vinegar
½ teaspoon celery seed
¼ cup chopped onion

Steps:

  • Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.
  • In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.

0.25 teaspoon dried dill or 1 Tbsp. chopped fresh chives
Dash ground black pepper
1 large cucumber, peeled (if desired), halved lengthwise and thinly sliced (3 cups)
0.333 cup thinly sliced onion (about half of 1 small)

Steps:

  • In a medium bowl combine sour cream, vinegar, salt, dill, and pepper. Add cucumber and onion; toss to coat. Cover and chill for 4 hours or up to 3 days, stirring occasionally. Stir before serving.

½ cup sour cream (or plain Greek yogurt)
2 tablespoon chopped fresh dill
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon vinegar
½ red onion (thinly sliced)

Steps:

  • In a small bowl, whisk together sour cream, dill, salt, pepper, and vinegar.
  • Thinly slice the cucumber and red onion. Use a mandoline if you have one to make quick work of this step.
  • Place the sliced cucumber and red onion in a medium serving bowl and toss with the dressing. Check for seasoning and add additional salt and/or pepper if needed.
  • Refrigerate for up to 3 days or serve immediately. Garnish with additional fresh dill if desired.

5-6 medium cucumbers (- peeled and thinly sliced)
1/3 cup red onion (- you could also use white)
1/2 cup mayonnaise (- or Miracle Whip)
1/4 cup sugar (- more or less to taste)
1/4 cup apple cider vinegar (- can also use white vinegar)
1 teaspoon salt (- I use Kosher salt (add more or less to taste))
black pepper (- to taste)

Steps:

  • Peel cucumbers, and slice thin. You can also use a mandolin to slice. Slice onion thinly as well. Combine cucumbers and red onion in a large mixing bowl.
  • Mix up the dressing by combining the mayonnaise, sugar, apple cider vinegar, and salt. Pour over the cucumbers, and combine well.
  • For best results, place cucumber salad in your refrigerator for a couple of hours to help meld the flavors together. Check flavors before serving.
  • To serve, add black pepper and more salt if desired.

1 small yellow onion, (chopped fine)
18 ounces light sour cream
3/4 cup white distilled vinegar
1 tablespoon granulated sugar
1 teaspoon dried dill weed ((or 2 teaspoons fresh chopped dill))

Steps:

  • Peel and slice the cucumbers, put aside. Chop the onion fine and continue to the dressing.
  • In a medium size mixing bowl combine the sour cream, vinegar, sugar, and dill, stir well. Taste and adjust the vinegar and sugar if needed.
  • Fold in the cucumbers and onions, mix well. Cover and refrigerate for at least one hour before serving.

5 Persian or Kirby cucumbers (12 ounces), halved lengthwise
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into small pieces
1/3 cup heavy cream
1/2-inch piece fresh horseradish, peeled
1 teaspoon finely grated lemon zest (from 1 lemon)
1 tablespoon dill sprigs

Steps:

  • Preheat oven to 450 degrees. Arrange cucumbers in a single layer in an 8-by-12-inch baking dish. Season with salt and pepper and dot with butter. Roast until cucumbers are slightly softened, about 15 minutes. Reduce oven temperature to 350 degrees. Drizzle cucumbers with cream. Roast until cream is slightly thickened, about 10 minutes more.
  • Grate about 1 tablespoon horseradish directly over cucumbers. Sprinkle with lemon zest and dill. Serve immediately.

  • 1. Peel the cucumber and cut into thin slices. Salt the sliced cucumber and squeeze-it is important to squeeze the cucumbers once sliced and salted to remove the extra liquid so that the salad is not watery. OR, you can cut the cucumber in half lengthwise once peeled and gently scoop out the seeds. This little trick will lessen the overall watery content of the recipe. 2. Combine sour cream, sugar, vinegar and milk blending well in a serving bowl. 3. Add cucumber slices to the creamy dressing.4. Cover and chill for at least 3 hours prior to serving.
