MOM'S STOVETOP PORK RIBS
This is how my Brazilian mom prepares pork ribs. Boiling the ribs with the seasonings ensures that the meat will remain moist and juicy, and that the flavors will fully penetrate the meat. I hope you like these as much as I always have! Serve with lime wedges, rice and a fresh green salad.

Steps:
- Place the spareribs into a large pot, and fill with just enough water to cover. Add the soy sauce, garlic, rosemary, oregano, bay leaves, lime juice and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until the water has completely evaporated, about 25 minutes.
- When all of the water is gone, remove the bay leaves, and allow meat to brown, turning occasionally. Use a spatula to scrape up browned bits and softened garlic from the bottom of the pot, and toss them with the pork. The garlic will dissolve onto the meat. Remove the meat, and drain on paper towels. Season with black pepper and garnish with lime wedges and remaining parsley.

My Grandma makes these for me and I love them... She originally got the recipe out of a cookbook (circa 1934). They are easy to make and fall off the bone delicious!

- Put ribs into a large baking pan, cover with approximately 1 cup of water.
- Sprinkle tops with salt and pepper. Cover with foil and bake for 30 minutes at 350 degrees Fahrenheit.
- Chop onion and sauté in oil. Add remaining ingredients. Simmer for 20 minutes.
- Pour sauce over the ribs and continue baking for 1 hour.
- Remove foil and cook approximately 10 minutes more.

MOM'S BEST BARBECUED RIBS
I have wonderful memories of coming home from church on Sunday and the aroma of this sauce simmering made my mouth water. This cooking method makes them fall-off-the-bone tender. Mom used regular ribs as she was feeding a family of 7, but I prefer babybacks. Regular and country-style work just as well.

- Note: you may use Splenda brown sugar blend in place of brown sugar.
- Cut the ribs into sections of 3 or 4 ribs each.
- Place on rack in roasting pan; pour boiling water in bottom of pan. Cover tightly with foil and bake in preheated 300° oven for 2 hours.
- Prepare sauce by melting margarine in a saucepan. Add chopped onion and simmer until tender but not brown.
- Add catsup to onions.
- In a 2-cup measure, mix remaining ingredients, stirring well to dissolve brown sugar.
- Add this to catsup, stirring as you bring it to boil. Turn heat very low and let sauce simmer for 1 hour, stirring occasionally, until sauce is thickened.
- Remove ribs from roasting pan, place on large foil-lined cookie sheet (for easier cleanup). Brush both sides generously with sauce.
- Turn oven up to 375° and return ribs to oven for 15 to 20 minutes.
- BONUS: Sauce recipe may be doubled or tripled, and remaining sauce can be stored in air-tight jar or bottle in the fridge. It keeps well for up to a month. Mine never lasts that long because I use it on everything.

MY MOTHER'S BBQ SPARE RIBS
These barbecue spare ribs are truly an Asian-American dish with a quick, finger-licking sauce. It's the perfect dish if you need a fast, savory meal.

- Preheat an oven to 400 degrees F. Stir the hoisin and ketchup together in a large bowl. Season the spare ribs on both sides with salt and pepper.
- Cut the rack into individual ribs. Add to the hoisin mixture and toss to coat evenly. Transfer the ribs to a large baking dish, clean the sides of the dish, and cover with aluminum foil. Place the ribs in the oven.
- Cook the ribs in the oven for 25 minutes, then remove the foil and continue to cook until the sauce becomes syrupy and the meat is tender, about another 25 minutes. Remove from the oven, pile the ribs on a platter, and serve immediately.
SAVOURY BBQ SPARERIBS
These ribs are mouth-watering. You can also cook in a slow cooker once sauce and onions are added (medium heat for 6-8 hours).

- Preheat oven to 300 degrees.
- Prepare ribs (remove fatty skin- cut into one rib servings).
- Mix together garlic powder, creole seasoning, pepper, seasoning salt, onion powder in baggie.
- Sprinkle seasoning over ribs, tossing to ensure each piece is coated.
- Dry roast ribs in large roasting pan (I use disposable foil) for 1-1/2 hours Remove pan and drain all fat.
- In same roaster add onions, BBQ sauce and honey.
- Toss all ingredients with ribs.
- Bake at 350 degrees for 1-1/2- 2 hours, covered with foil.
- Meat will be falling off the bones at this point!

SAUCY SPARERIBS
This is a recipe my Mum has made for me all my life, and I still request it now if I'm getting cooked for! This is probably, no definitely my all time favorite dinner! I like it with cheesy mash potato and sweetcorn - delish!

- Brown the ribs in a frying pan with a little oil.
- Place the sliced raw onion into the bottom of a casserole dish large enough to hold all the ribs.
- Mix together the soy sauce, orange marmalade and the garlic in a bowl.
- Place the browned ribs on top of the onions in the casserole dish then spread them with the soy mixture.
- Season the ribs with salt and pepper.
- Mix the stock with the vinegar in a jug then pour over the ribs and cover with lid.
- Cook for 1 hour at 200 degrees with the lid on then for another half and hour with the lid off.
- (I have done this 4 ribs per person but add a few more if you're extra hungry!).

ORIENTAL BBQ SPARERIBS
BBQ with an Asian flair. A sweet and savory sauce. I got this recipe from my mother who is a great cook. Don't be put off by the oyster sauce it isn't fishy at all. There were no amounts for the ginger and garlic so I put down what I put in. You can cut back on the ginger and garlic or add more to your taste.

- Boil spareribs with half of the ginger for 1 hour.
- Drain and cut between ribs.
- Mix rest of ingredients adding food coloring if desired.
- Charbroil, or grill till heated through, or bake at 350°F for 30 minutes.
- Sauce may be used for chicken or pork.
- Most large grocery stores carry oyster sauce.
- I used this sauce to cook chicken drummettes, just mixed up the sauce and added it to the uncooked chicken then simmered it for 30 minutes. It turned out great.
BARBECUE RIBS
This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

- Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
- In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
- Preheat grill for medium heat. Position grate four inches above heat source.
- Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

I avoided making BBQ ribs for years, sure that there were difficult tricks of the trade to make them so good! After enjoy some better than restaurant quality ribs at my sisters I finally decided to ask her what the tricks were. She had a good laugh and then promised me that they were NOT hard to make and there were no tricks at all, just a few easy steps to follow that always brought wonderful, finger licking results. The next day, I received her recipe in the email and it was just as she had described...both simple and easy to follow. - Preheat oven to 450 degrees Rinse the ribs, drain them well and season them lightly with salt and pepper. Place the ribs on a rack in a roasting pan (I didn't have one, so I laid 3 ribs of celery lengthwise in a 9 x 13 baking dish and put my ribs on top of the celery). Pour 3 cups of water into the pan and cover the pan with foil. Bake the covered ribs for 30 minutes.
- Carefully remove the roasting pan from the oven (watching out for the hot liquid in the bottom of the pan). Remove the ribs to a platter and drain off all the accumulated liquid from the pan, wiping the pan dry and lowering the oven temperature to 300 degrees.
- Return the ribs to the pan. Using approximately 1/4 cup BBQ sauce per pound, brush the BBQ sauce over the top of the ribs. Bake uncovered, for 30 minutes.
- Remove the ribs from the oven, turn them over and baste top with another 1/4 cup of BBQ sauce per rib. Return to the oven and bake for an additional 20 minutes.
- Remove from the oven and turn the meatiest side up, baste with remaining BBQ sauce. Preheat the top Broiler to 500 degree and place the ribs about 6 inches under the broiler. Allow the ribs to broil for a few minutes, caramelizing the BBQ sauce and then remove them from oven and serve!
