NO BAKE COOKIES
Nothing beats these classic No Bake Cookies for a quick and tasty chocolate peanut butter treat! With just a few staple ingredients and no flour or eggs, these easy peanut butter no bake cookies are ready to enjoy in 30 minutes!

Steps:
- Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
- Place granulated sugar, brown sugar, butter, milk and cocoa powder in a 3 quart saucepan.
- Bring to a boil over medium heat, stirring occasionally.
- Once the mixture is boiling (in the middle and around the edges of the saucepan) set a timer and boil for exactly one minute.
- Remove from heat and stir in 2 cups of the quick oats just until coated. Add in peanut butter, vanilla extract, salt, and remaining quick oats. Stir just until combined.
- Immediately begin scooping out mixture using a medium cookie scoop or two spoons.
- Drop the mixture onto the prepared baking sheets and let sit at room temperature for about 20 to 30 minutes or until the cookies are set up and firm to the touch.
- Cookies should be stored in an airtight container at room temperature for up to 1 week. They can also be stored in the fridge.

MOM'S UNCOOKED COOKIES
Mom's Uncooked Cookies is my mom's classic, easy recipe for delicious, no-bake cookies using, cocoa powder, oatmeal and coconut.

Steps:
- Melt butter in pan over medium-low to medium heat.
- Add the evaporated milk, cocoa powder, and sugar to the melted butter. Stir and cook until the mixture comes to a complete boil.
- Cook for one minute.
- Remove the pan from the heat and add the vanilla, rolled oats, nuts if using, and coconut. Stir until completely mixed.
- Scoop mixture onto a cookie sheet that has been lined with wax paper.
- Let the cookies set until firmed up.

MOM'S UNBAKED COOKIES
Mom could stir up these treats in a hurry and they never lasted long. I think everyone has a version of this recipe but I wanted to put Mom's in a family cookbook so here it is.

- Combine butter, cocoa, sugar and milk in a large saucepan. Stir well. Simmer on stove with low heat until bubbles form around the edge of the saucepan, and mixture appears smoothly blended. Remove from heat.
- Add peanut butter and vanilla. Mix well. Then add the quick oats and stir thoroughly. Line a cookie sheet with waxed paper. Use a large spoon to scoop out cookie dough and place the drops on waxed paper. Chill in the refrigerator until hardened.
UNBAKED COOKIES
A very uninspired name, that's for sure, but I bet you'll remember them anyway once you've tried them! A recipe from 'The Mennonite Treasury of Recipes,' this is still a favourite among every Mennonite family that I know! My mom never wanted to make these for me as a kid, I guess because they're terribly sweet (and you know how bad sugar is for kids!!), but now that I don't live under my parents' roof anymore, I can make them as often as I want. Problem is, between my husband, daughters and I, even a double batch doesn't last very long!! I usually do use a little less sugar because mom was right, they are quite sweet. Freezes really well -- if they make it to the freezer! (Yield is approximate; depends how big you make your cookies.)

- In a saucepan over medium heat, bring first 3 ingredients to a boil.
- Cook for 3 minutes, stirring constantly. Remove from heat.
- In a large mixing bowl, combine remaining ingredients and add milk/sugar/butter mixture.
- Mix thoroughly and drop by tablespoons onto wax paper-lined cookie sheets to harden. Place in fridge or freezer to speed the process.

- Before getting started, make sure to gather all of your ingredients and measure everything out. Line two large baking sheets with parchment paper and set aside.
- Combine the butter, sugar, milk, and unsweetened cocoa powder in a large saucepan and heat over medium heat, making sure to stir often until the butter is melted and everything is well combined. Bring the mixture to a rolling boil and allow to boil for 60 seconds (make sure to set a timer!) stirring occasionally.
- Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything is well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheets (I like to use a 1.5 tablespoon cookie scoop). Allow to cool for 20 to 30 minutes, serve, and enjoy!

- Using clean hands form about 1 1/2 tsp of coconut mixture into balls. Lightly press 1 almond into the center of the ball. Place on a parchment or wax paper lined cookie sheet.Refrigerate for at least 1 hours, up to 2 days.
