AMELIA'S TUNA MACARONI SALAD
This macaroni salad will remind you of Grandma's. I love this when the weather is warm. One of the basic comfort foods!

Steps:
- Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain and rinse under cold running water.
- In a large bowl, stir together the macaroni, tuna, celery, onion and peas. Mix in the mayonnaise, relish, salt and pepper. Garnish with egg wedges and a sprinkle of paprika. Cover and chill for at least 1 hour before serving.

COLD MACARONI AND TUNA SALAD
This is a simple and good recipe that is great served on those hot summer days and can even be prepared the night before so that it is ready and cold when you come home from work the next day. My husband never ate this until we got married and in the summer he requests it every other week. You can substitute chicken for the tuna and it is great that way also. I serve it on a leaf of lettuce, for looks, with an assortment of crackers. Happy eating!

Steps:
- Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
- Bring a large pot of lightly salted water to a boil. Add macaroni pasta and cook for 8 to 10 minutes or until al dente; drain and rinse under cold water.
- Put frozen peas into a colander and rinse with hot water; drain well.
- Place the macaroni and peas in a large bowl. Dice eggs and add to the bowl. Put the tuna in the bowl, flaking it apart.
- Stir mayonnaise into the mixture a little at a time, so the mixture is moist but not soggy. Sprinkle the salt and pepper and mix one last time. Cover and refrigerate for a least 1 hour or overnight.

- 1. Cook the macaroni in salted boiling water and drain and let cool down.
- 2. Place the onion, pimentos, tuna, peas, and relish in a large bowl. Add the macaroni. Chop 5 of the eggs and add to the salad.
- 3. In a separate bowl mix the Miracle whip, apple cider vinegar, mustard, sugar, 2 tbsp. celery seed, salt and pepper and milk. whisk until smooth,
- 4. Pour over the macaroni mix and mix well until combined. slice the remaining eggs and lay over top. Sprinkle with paprika and the remaining celery seed.

MOM'S TUNA MAC SALAD
I grew up in a big family. My mom would always make this easy and delish macaroni salad. I remember her using a whole jar of miracle whip for the sauce. It was great.

- 1. Mix first six ingredients together leaving 3 eggs for topping. Set aside.
- 2. In separate bowl mix remaining ingredients except paprika until smooth. Pour over macaroni mixture and stir until well combined.

TUNA-MACARONI SALAD
You pretty much already have everything you need to make this side dish, a great accompaniment to fried or grilled proteins. Some people love raw onion and celery, but you can leave them out or keep them in as you like. Make sure you use tuna packed in water. (Tuna in olive oil will make the salad too oily.) It's best chilled - don't serve it at room temperature - its creamy unctuousness balances out the heat (from spice or from cooking) of whatever it's paired with.

- Bring a large pot of well-salted water to a boil, and cook the macaroni according to package instructions, until slightly pasta al dente. Drain, rinse with cold water until the pasta is cool and set aside.
- In a large mixing bowl, combine the cooked macaroni, tuna, eggs, mayonnaise, relish, mustard, onion powder, pepper and 1 teaspoon salt. Add chopped celery and onion, if using, and toss gently with a spoon to combine.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil.
