MOM'S TUNA CASSEROLE CIRCA 1949
I remember the first time Mother made this casserole, back in 1949. She and I really loved it. So we made it often. Even the leftovers are good. In this version, I have doubled her recipe to feed a larger family.

Steps:
- Bring a large pot of lightly salted water to a boil.
- Cook pasta in boiling water for 8 minutes, or until al dente; drain.
- Preheat oven to 425 degrees F.
- In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms.
- Transfer to a 9" x 13" inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
- Bake, uncovered, for 15 to 25 minutes in the preheated oven, or until cheese is bubbly.

- Preheat oven to 375 degrees. Lightly grease a 2 quart baking dish and set aside.
- Cook noodles according to package directions, removing when al dente. Drain, and set aside.
- Melt butter in a large skillet over medium heat. Add celery, bell pepper, and onion and cook until onion is translucent, stirring frequently.
- Stir in flour, salt and pepper. Slowly add milk and cook, stirring constantly until thick and bubbly. Stir in Dijon mustard.
- Add tuna, peas, noodles, and cheddar cheese and fold into the sauce.
- Pour mixture into the prepared dish.
- Combine Panko, Parmesan cheese, smoked paprika parsley and melted butter in a small bowl and sprinkle over the top.
- Bake casserole for 25 to 30 minutes, uncovered, or until heated through and golden brown on top. Let stand for a few minutes before serving.

- Preheat oven to 400ºF.
- Cook pasta according to package directions, just to al dente.
- In a bowl mix cooked pasta, soup, tuna, milk, onion, ½ cup cheese and spices. Pour mixture into a greased 1.5 qt. casserole dish and sprinkle remaining ½ cup cheese on top.
- Bake for 30 minutes until bubbling.

Tuna noodle casserole recipes are a dime a dozen here but this is what I grew up on and I don't think it can be beat! I think this came from an old Cambell's soup cookbook. You can tell that can sized have gotten smaller over the yeas.....I had to adjust the tuna can size and the soup size both by an ounce to reflect today's packaging!

MY MOM'S AWESOME TUNA NOODLE CASSEROLE
If you're looking for a different-than-the-potato-chip-covered tuna casserole, look no further than the one I grew up with. It's almost like a strata or custard - give it a try! I've never had a better tuna casserole! It tastes even better the second day and freezes well when cut and wrapped in individual pieces. I recommend American cheese over Velveeta - tried it once and it just wasn't the same. You can use a larger can of tuna if you like.

- Prepare egg noodles as directed on the package; drain.
- In a 13x9" baking dish, combine noodles with all remaining ingredients.
- You may want to combine all the ingredients in a large bowl, then pour into the baking dish (it's a little less messy).
- Shake paprika on top for color.
- Set dish in another pan of hot water so that the hot water reaches 1/2 way up the sides of the baking dish.
- Bake at 350F for 1 1/2 hours, or until set.
- Let stand for 5 minutes, cut into serving pieces, and eat!

QUICK AND EASY TUNA CASSEROLE
Steps:
- Bring a large pot of water to a boil. Add noodles and frozen peas. Cook until noodles are al dente, drain well. Return noodles and peas to the pot.
- Mix soup, tuna fish, onions, processed cheese and pepper into the pot. Stir constantly until all of the ingredients are well mixed and the cheese has melted. Serve.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch casserole dish.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- At the same time, melt 1/4 cup butter in a skillet over medium heat. Add onion and bacon and cook until onion is tender and bacon is crisp, 8 to 10 minutes. Add flour; cook and stir for 2 minutes. Whisk in chicken stock, milk, mayonnaise, and soy sauce until combined. Remove from the heat and transfer sauce mixture to a large bowl.
- Drain pasta and add to the sauce mixture. Stir in Cheddar cheese, corn, celery, cashews, salt, and pepper. Transfer to the prepared casserole dish and spread crushed Ritz® crackers over top.
- Bake in the preheated oven until heated through, 15 to 20 minutes.
