Steps:
- Preheat oven to 350.
- Place the pie crust in pie pan, nestle in, crimp edge and prick bottom with fork a few times (as shown above).
- Bake pie crust for about 15 minutes or until edges are browned. Remove from oven and set aside to cool.
- Layer sliced berries into the cooled baked pie crust. Fill to top.
- Stir together water sugar and cornstarch in a sauce pan and bring to a boil. Simmer, stirring constantly, until thickened.
- Remove from heat, add Jell-O and stir until dissolved.
- Pour mixture over the strawberry filled crust.
- Refrigerate until set. This will take at least 3 hours to have a good set.
- Top with whipped cream when serving.

Steps:
- STRAWBERRY TOPPING.
- Wash and halve strawberries.
- Whisk together the sugar, cornstarch and salt in a medium saucepan.
- Add the water, lemon juice and red food coloring. Cook over medium high heat until the mixture starts to thicken, stirring frequently.
- Add half of the strawberries and cook until mixture is thickened.
- Add remaining strawberries and remove from heat.
- Cool completely before putting on top of cream filling in pie shell.
- CREAM FILLING.
- While strawberry filling cools, whip the whipping cream.
- In separate bowl, beat together the cream cheese, powdered sugar, vanilla and salt.
- Fold in the whipped cream and spread in the bottom of the cooled pie shell.
- Once the strawberry filling has cooled, gently put it on top of the cream filling.

My Mom's famous Strawberry Pie has been my favorite dessert for decades! The fresh strawberry filling is absolutely to-die-for! Pile it up in a buttery graham cracker crust and you've got THE BEST Strawberry Pie ever!

- Preheat the oven to 350°F.
- Combine the graham cracker crumbs, sugar and melted butter in a medium mixing bowl.
- Mix until it forms a buttery, crumbly texture.
- Press the crust mixture into the bottom and sides of a 9" pie plate.
- Place in the oven to bake for 6-8 minutes, or until lightly browned.
- Set the pie crust aside to cool while preparing the filling.
- Wash the strawberries, then remove the stems and slice the strawberries in half.
- Set aside a dozen of the best looking strawberry halves to top the pie.
- Place the remaining fresh sliced strawberries in a large skillet, off the stove.
- Add the corn starch and sugar to the strawberries in the skillet.
- Use a potato masher (or muddler or fork) to mash the strawberries into a thick, slightly chunky consistency.
- Move the skillet to the stovetop over medium heat.
- Stir continuously until the strawberry mixture begins to bubble.
- Reduce the heat slightly and allow the berries to cook down to a dark, thick consistency. Continue to stir consistently throughout this process, it will take 20-30 minutes.
- Remove the mixture from the heat and stir in the lemon juice.
- Allow the mixture to cool off the stove, at room temperature, for at least 30 minutes.
- Once cooled, transfer the strawberry filling into the prepared graham cracker crust.
- Add the reserved strawberry halves to the top of the pie.
- Place the pie in the refrigerator and allow to chill for at least one hour before serving.

There is nothing better than a Strawberry Pie, unless you make mini pies instead! This is a no hassle, fresh strawberry pie recipe that you don't have to share with anyone else! A delicious and beautiful dessert for summer!

- Place 1 cup of chopped strawberries in a food processor or blender.
- Add the sugar, cornstarch, lemon juice and food coloring (if using). Process until smooth and strawberries resemble a puree.
- Pour the strawberry mixture into a medium-sized saucepan. On medium or medium-low heat, slowly bring the mixture to a boil, stirring frequently making sure not to burn the bottom.
- Let boil until thickened, approximately 1 to 2 minutes. Don't over-boil, as cornstarch will become thin again if boiled for too long or at too high a temperature.
- Take pan off heat and allow the mixture to cool for 2 to 3 minutes. Pour thickened puree over the remaining 1 ½ cups chopped strawberries and gently stir until completely incorporated.
- Scoop mixture equally into mini graham cracker crusts, smoothing the top until mixture reaches the edges of each pie.
- Let cool and set up in the refrigerator, 1 to 2 hours.
- Scoop or pipe whipped cream on top of each pie and garnish with mint leaves, optional.

- Pick over berries, reserving largest and prettiest to use whole- enough to arrange in concentric circles to fill pie shell. Remove stems. Cut up the rest of the berries to make glaze. Should have 2 cups for glaze. Put cut up berries in saucepan along with sugar and cornstarch. Stir and mash to combine. Cook over medium heat, stirring, until mixture comes to a boil and thickens, turns clear and shiny red. Remove from heat and let cool slightly. Soften cream cheese by mashing and stirring with a bit of milk. Spread over bottom of pie shell. Arrange whole berries over cheese, stem end down. Use cut berries to fill edges. Spread strawberry glaze over all. Top with whipped cream.

- Wash strawberries, remove stems and quarter – or cut into bite size pieces and set aside. Put 1-2 Cups of water on the stove to boil. Preheat the oven to 425. Always make the filling first – because it needs to cool some and can do so while you make the crust.
- Stir sugar and cornstarch together with a fork or whisk in a large sauce pan. Gradually pour the boiling water into this mixture and place on stove top on medium high heat. Stir continuously over medium high heat until mixture turns from clear colored liquid to a milky colored gel (mixture will start to boil – just keep stirring until it turns milky and a gel consistency – about 7 minutes).
- In a 9” pie plate, mix flour, salt, sugar with a fork. Make a well in the center and pour in the vegetable oil and the milk. Gently mix all ingredients together until a dough forms.
