- To prepare this spanakopita recipe start by making the phyllo dough first. (For step by step instructions Homemade phyllo dough). Alternatively use commercial phyllo dough.
- When done, heat the oven to 200C/fan 180C/gas 6.
- To prepare the filling for this spanakopita recipe, sauté the onions in a large knob of butter until soft and turning golden. Add the garlic and cook for a couple of minutes. Add the spinach in batches and cook until wilted. Cool, then tip into a bowl (leaving behind any excess liquid from the spinach) and mix in the nutmeg, feta, eggs, spring onion and season.
- For this spanakopita recipe you will need a non stick baking pan, about 25cm. Put the first sheet of filo in the pan and sprinkle with olive oil, letting the excess hang over the sides. Keep going with the rest of the sheets, turning a little before adding each additional pastry sheet and sprinkling with olive oil. Use 2-3 phyllo sheets, depending on how thick your phyllo is. Tip in the filling of the spanakopita and fold over the excess pastry to cover. If you like to prepare a larger pan of spanakopita for a big crowd, double the ingredients for the filling and use a 25*35 cm baking dish. Layer the 2-3 phyllo sheets to form the bottom of the spanakopita, tip in the filling and top with 2-3 more phyllo sheets.
- Brush the top of the spanakopita with olive oil and scar with a sharp knife. Bake in preheated oven for about 60 minutes until the phyllo is crisp and golden.
- Leave the spanakopita cool down for 10-15 minutes before cutting into pieces. Serve the spanakopita with Greek salad. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
- Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.

- Preheat oven to 375°
- In a small bowl mix spinach, diced onion, ricotta cheese, parmesan cheese, eggs, dill, panko, and black pepper. (It's best to use a fork for mixing.)
- Break the feta cheese into very small pieces and fold it into the spinach mixture.
- Transfer spinach to a baking dish that has been sprayed with non-stick cooking spray.
- Bake for 30 minutes covered.
- Remove cover and bake for another 5-7 minutes or until the edges begin to turn brown and pull away from the sides of the baking dish.
- Let it cool for 5 minutes before serving.

- Mix all ingredients well in bowl except Butter and Phyllo.
- Butter 4 Phyllo sheets and stack together.
- Place 1/3 of filling mixture in a long roll along the long edge of the Phyllo Sheet.
- Roll in log form.
- Cut log into 6 pieces.
- Place in buttered 9X13 pan.
- Repeat twice as above.
- Butter all the pieces with the remaining butter.
- Bake in a 350F oven uncovered until golden brown or approximately 20 to 25 minute.

- 1. Drain water from spinach
- 2. Mix cheeses with spinach
- 3. Add scallions & eggs (mix together)
- 4. Place 9 sheets of phyllo dough on the bottom of a large baking pan. (I've always used a 9"x13" glass baking dish. Alternate one sheet of dough, one brushed layer of butter, so on and so forth until 9 sheets are in the pan.
- 5. Add spinach mixture.
- 6. Top the layer of spinach with 7 phyllo sheets. Again, alternate with phyllo, then butter, then phyllo etc. Top layer should be buttered.
- 7. Bake for 30-35 minutes at 350 degrees.
- 8. Cut with hot, sharp, clean knife in squares or cut at an angle for diamond shapes.

- Thaw frozen spinach and frozen phyllo dough overnight in the refrigerator before using. Do not leave it in the fridge for more than a day though.
- Prep your ingredients: squeeze the thawed, chopped spinach until you've wrung out all the water. Remove stems from dill and chop the white ends off green onions/scallion.
