MOM'S BEST MACARONI SALAD
This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

Steps:
- Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
- In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

MOM'S SIMPLE SALAD
This is a very simple green salad my mom used to put on the table every night. She was able to get kids who never ate their vegetables to love this salad. I think the secret is in the vinaigrette: it's got the perfect level of acidity to balance out all the greens.

Steps:
- For the salad: In a large bowl, add the lettuce, celery, and tomato. Thinly slice the cabbage. Cut the carrots in half lengthwise, then slice. Shave the radishes on a mandoline. Thinly slice the green tops of the onions. Add everything to the bowl and refrigerate while making the vinaigrette.
- For the vinaigrette: In a jar with a tight-fitting lid, add olive oil, vinegar, ½ teaspoon salt, pepper, and lemon juice. Cover and shake. Spoon vinaigrette from the bottom of the jar onto a piece of lettuce and taste.
- Assemble the salad: Season the chilled greens with ¼ teaspoon salt and a few grinds of pepper. Give the dressing a stir and then drizzle around the outer edge of the bowl. Gently toss with your hands to combine. Taste one more time, adjust seasoning, and serve.

Steps:
- Do not peel potatoes. In a large stock pot, cover potatoes with cold water. Cover the pot and bring potatoes to a boil over high heat (could take 20 minutes or more to GET to a boil.) Once boiling begins, remove the lid. Turn down to medium and gently boil uncovered for 15 minutes. Should be able to pierce with knife but potatoes should be firm and hold their shape.
- Drain then plunge into ice bath. Peel skins when they are cool enough to handle. Chop into bite sized pieces and place in a large bowl. Sprinkle warm potatoes with 1/4 cup pickle juice, toss to distribute. Set aside.
- In a medium bowl, combine mayo, sour cream, mustard, garlic powder, celery salt, black pepper, and salt. Taste for seasoning, add more salt if you like. Set aside.
- To the bowl with potatoes, add boiled eggs, celery, bell pepper, onion, pickle, and chives. Top with dressing and toss until completely coated. Cover and refrigerate for at least 2 hours (preferably overnight) to allow flavors to mingle.

- Cook pasta as directed on the box. When there are two minutes left in the cooking time, add the broccoli florets and diced carrots to blanch them.
- When the pasta is cooked (a little al dente) strain the pasta, broccoli, and carrots - then rinse with cold water.
- Spread the pasta, broccoli, and carrots out on a baking sheet with edges and drizzle with a little olive oil. Toss to fully coat the pasta and now leave it to cool. If you are in a time crunch, you can pop it in the refrigerator (10 - 15 minutes) or freezer (5 minutes.)
- When the pasta has cooled, add it to a large bowl. Add the tomatoes, olives, artichokes, and peas and toss to combine.
SIMPLE COUSCOUS SALAD RECIPE [VEGAN] — THE MOM 100
From themom100.com
- Place a dry medium pot over medium high heat. Add the couscous and cook, stirring occasionally, until it turns a bit deeper golden, about 3 minutes. Turn the couscous into a large bowl. Add 1 ¾ cups water, 2 tablespoons olive oil, ½ teaspoon kosher salt to the pot and bring to a boil. Once boiling, add the toasted couscous (save the bowl for mixing the salad), stir, then cover the pot and remove from the heat. Let stand for 10 minutes, then uncover the pot. The couscous should have absorbed all of the liquid and become tender; fluff with a fork (or if need a few more minutes, just recover the pot).
- Spread the couscous out on a rimmed baking sheet to cool. Drizzle with 1 more tablespoon of olive oil and stir then spread out again.
- While the couscous is cooling, heat a large skillet over medium high heat. Add 1 tablespoon of olive oil, then add the celery and saute for 2 minutes. Add the radicchio and ramps or scallions and saute for another 2 minutes until the vegetables are starting to become tender. Stir in the jalapeno and cook for one more minute, then remove from the heat and stir in the lemon zest.
- Turn the cooled couscous into the reserved bowl, and add the vegetable mixture. Stir to combine, seasoning with salt and pepper. Transfer to a serving bowl (or not) and drizzle with just a bit more olive oil for good measure.
