SIMPLE ANTIPASTO SALAD (THE WAY MY MOM MADE IT)
From my understanding, this is NOT traditional antipasto, but it's loosely based on the antipasto salad I used to order when I lived in Grand Junction, CO, at a restaurant called Junction Square. I do not remember the exact ingredient amounts so everything's estimated, however, this does use an entire head of iceberg lettuce, so it can easily feed 3-5 I would guess. We always ate this as a main dish, and for lunch. All of the ingredients are easily found in your grocery store's deli and produce departments, and packaged cheese section. Cook time is assembly time.

Steps:
- Remove outer leaves and wash the iceberg lettuce and pat dry.
- Chop and shred the iceberg lettuce and place in large bowl.
- Chop the 1/4 inch-thick salami slices into bite-sized chunks. Add to the iceberg.
- Chop tomatoes, add to the iceberg.
- Sprinkle salad with desired amount of shredded mozzarella cheese.
- When ready to serve, pour over your favorite Italian dressing and toss to coat.
- Note: If you know there won't be enough people to finish the salad in one sitting, assemble only a small amount to serve at the time, and keep the rest of the prepared ingredients in separate containers in the fridge and assemble right before eating to prevent sogginess.

MOM'S SALAMI AND ICEBERG LETTUCE LUNCH SALAD
My Mom loves this and every time I make it I think of her. You basically take Iceberg lettuce but you can use Romaine, cucumber, tomatoes, Hebrew National Salami chunks, and she always used Wishbone Italian dressing and oregano on top. I sometimes use bagged salad which has shredded carrots and red cabbage too. I like to add hard boiled egg slices. There's a lot you can do with add ins. Enjoy!

- Gently toss lettuce, tomatoes, salami and cucuber in a bowl.
- Put into 4 salad bowls and add dressing, to taste and sprinkle with oregano, to taste. Add hard boiled egg slices if you like.

ICEBERG LETTUCE SALAD

Steps:
- For the dressing: In a medium bowl, whisk together the blue cheese, oil, mayonnaise, vinegar and hot sauce. Season with salt and pepper and add more hot sauce if preferred. Set aside.
- For the salad: Divide the lettuce rounds among 4 plates. Pour 1/2 cup of the dressing over each. Top each with one-quarter of the tomatoes and bacon. Sprinkle some chives on top. Serve immediately.
DAGWOOD SALAD
My mom always made this salad for BUNCO nights and I've been searching for the recipe for a long time. Mom is no longer around and her recipes are unavailable. I finally found it in a cookbook I have here at home. This is my all time favorite salad and dressing combo and I think this recipe I found finally got it right. Keep the salad, dressing, and bread separate until ready to serve or it gets all mushy. Shake the dressing well before adding to salad.

Steps:
- In a large bowl with tight-fitting lid, tear up lettuce, cheese, and lunch meat into bite-sized pieces, finely chop onion and toss. Set aside in refrigerator.
- Add all salad dressing ingredients together in a container with a tight-fitting lid and shake.
- Tear up the rolls/bread into bite sized pieces and place in an air tight bag.
- When ready to serve add bread to bowl with lettuce/meat/cheese and add dressing to coat. Toss around with either the lid on (works best) or using salad tongs. Serve immediately.
- If not serving all immediately just mix up what you will eat. Keeps best if kept separate and mix when wanted.
