BUSY MOM PEACH COBBLER
This yummy cobbler recipe has been in my family (and probably most southern families) for ages. I have added and taken away a few things over the years, but I love it any way I make it.

Steps:
- Preheat an oven to 325 degrees F (165 degrees C). Put the butter in an 8x8 inch baking dish and place in the oven to melt while you prepare the remaining ingredients.
- Bring the peaches with syrup and 2 tablespoons of sugar to a boil in a saucepan. Reduce heat to medium-low and simmer 10 minutes; set aside. Whisk together the flour, 1 cup sugar, cinnamon, and nutmeg in a bowl. Stir in the milk until the mixture is just moistened. Pour into the hot baking dish over the butter. Spoon the peach slices and most of the syrup over the batter.
- Bake in the preheated oven for 30 minutes. Sprinkle with the remaining 2 tablespoons of sugar. Return to the oven and bake until the top is golden brown, 30 to 45 minutes longer.

- Preheat oven to 350 degrees F (175 degrees C).
- Arrange peaches evenly in an 8x8-inch baking dish.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
MOM'S PEACH COBBLER

- Preheat oven to 375 degrees
- Strain the juice from the peaches into a saucepan, add sugar, cornstarch, cinnamon and salt. Mix and cook until bubbly, add lightly chopped peaches, heat through but do not cook.
- Layer in a 9-in.x 13-in. pan, half of the peaches, then a layer of pie crust rolled to fit the pan.
- Pour remaining peach on top of the pie dough.
- Add another layer of pie dough in a lattice pattern or simply rolled out to fit the top of the pan.
- Melt butter and brush on heavily, sprinkle with sugar and cinnamon.
- Bake until bubbling and the crust is golden (about 50 to 60 minutes).

- Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
- Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
- Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.

Ok, this is really from the 1973 McCall's recipe cards, but it's the recipe my mom always made and I identify it as hers. But, whatever you want to call it, it's fabulous on a cool winter day fresh from the oven and served with melting vanilla ice cream.

- Make filling: in medium bowl, combine peaches, all filling ingredients except butter. Turn into an 8 in x 8 in dish. Dot with butter.

- Preheat the oven to 350 degrees. Grease a 8x8 inch pan well with butter.
- In a large bowl, stir the peach slices, brown sugar, cornstarch, lemon juice, lemon zest, ginger, cinnamon, and salt together until thoroughly combined.
- Spoon filling into prepared pan and bake for 15 minutes.
- Remove from the oven and then prepare the biscuit topping.
- Prepare biscuit topping by whisking together flour, sugar, baking powder, baking soda, and salt together in a large bowl. Cut in the cold butter, using a pastry cutter, food processor, or two forks, cut the butter into the mixture until it resembles wet sand and the butter is about the size of peas.
- Drizzle in the milk and gently mix until just biscuit dough is JUST combined--do not over mix!
- Dollop dough all over peach filling.
- Mix together the egg and remaining buttermilk.
- Brush the top of the biscuit dough with egg wash and then sprinkle with granulated sugar.
- Bake for 37-42 minutes, or until lightly browned and biscuit topping is cooked through.
