SWISS STEAK MOZZARELLA
Delicious! I received this recipe from my mother about 25 years ago. It has always been a family favorite.

Steps:
- Cut meat into serving size pieces; coat with flour.
- Melt margarine in skillet.
- Brown meat slowly on both sides.
- Put into a 9x13 inch baking dish.
- Combine tomatoes, soup and salt.
- Pour over meat.
- Bake covered at 350 degrees 1 hour, or until meat is tender.
- Remove cover and sprinkle with cheese.
- Bake an additional 5 minutes or until cheese is melted.
MOM'S MOZZARELLA STEAK
Trust me when I say that all you need to serve with this is salad, if that even. Very filling and delicious!

Steps:
- Rub steaks with salt and pepper and roll in flour.
- Fry in large skillet in butter at medium heat until lightly browned. Push steaks to side of pan.
- Add a little more butter on other side and add onions and garlic. Cook until slightly cooked.
- When steaks are almost ready, add mushrooms and tomato wedges.
- Sprinkle with salt and pepper, oregano and basil.
- Place your sliced mozzarella over steak. Cover until cheese melts.
- Serve over steaks.

- Slice the mozzarella balls into 1/2 to 3/4 inch thick slabs. Set aside. Use a fork to toss the flour, 1 teaspoon of salt, garlic, onion, and Italian seasoning together in a cake pan or pie plate. Set that to the right of the cheese on the cutting board.
- Preheat oil to 345°F. Carefully lower 2 or 3 mozzarella steaks into the oil. If there are any ice crystals on the steaks, they may sputter as they're lowered into the oil. Fry for 3 minutes, or until the outside is a beautiful golden brown. Use a slotted spoon, basket, or tongs to lift the cheese steaks from the hot oil and transfer them to a paper towel lined plate. Let rest for 3 minutes before serving.
- Pour 1/2-inch of oil into a heavy-bottomed, high-sided frying pan over medium-high heat. When the oil looks shimmery, use tongs to carefully lower 2 or 3 steaks into the pan (taking care not to overcrowd them.) Fry for 2 minutes on one side, or until golden brown. Slide a spatula under each steak and use tongs or another spatula to hold the cheese steak against the first spatula while gently turning it over. This should prevent splattering of the oil. Fry the second side for 2 minutes, or until golden brown. Use a spatula or slotted spoon to transfer the fried cheese steak to a paper towel lined plate and let it rest 3 minutes before serving.

- Start your onions first. They will take longer than the steak. Heat the canola oil in a skillet over medium heat until it glistens, add the onions. Add a hit of salt to speed up the sweating process, and keep stirring every now and again, but not constantly. You can lower to a medium low setting if they are starting to cook too quickly. Slower is better with onions, so don't rush the process. Once the moisture is out hit them with the butter and continue cooking until they caramelize. The process should take about 15 minutes on a nice medium heat, or up to 25/30 on a lower heat. Transfer to a plate and set aside till needed.
- Slice the meat as thinly as you can. It's helpful to have the meat cold during the cutting process if you're not adept with your knife skills. So you can pop it in the freezer for 15 or 20 minutes before cutting it if you like. Then let it warm up for 20 or 30 minutes before cooking. Meat cooks better if it's not super cold. Trust me.
- Heat the olive oil in a skillet over medium heat until it glistens. Add the beef and cook while stirring it about occasionally. You can cook it to your taste. I'd recommend 3 to 5 for a medium rare, and 5 to 8 minutes for well done, which is how we like ours.
