MOLDED CRANBERRY FRUIT SALAD
Instead of putting a bowl of plain cranberry sauce on the holiday table, I like to whip up this festive fruity salad. It adds pretty color to the meal. -Virginia Rexroat, Jenks, Oklahoma

- In a bowl, dissolve gelatin in water. Stir in all remaining ingredients. Process in small batches in a blender until coarsely chopped. Pour into a 13x9-in. dish or a 3-qt. serving bowl. Chill until set, about 2-3 hours.

FROZEN FRUIT SALAD MOLD
From Faye Hintz of Springfield, Missouri comes a new kind of fruit salad. "The thought of something chilled was so appealing to me one hot day," relates Faye. "I combined frozen and fresh ingredients. It's a treat we eat often now."

- In a medium bowl, toss bananas with lemon juice; set aside. In a large bowl, combine remaining ingredients; mix well. Add bananas., Pour into an ungreased 14-cup star-shaped or other mold or plastic freezer containers. Freeze for several hours or overnight. Unmold 20 minutes before serving.

LIME-PEAR SALAD - MOM'S RECIPE
Mom was fond of fruit salads, and they were usually a gelatin combination, which was popular at the time I was growing up. Sometimes the color makes it more appealing, and it also makes it festive for a holiday meal. I remember her making this, but when I tried it, I changed things. - 1. Boil water and pear juice, enough to make one cup. First Mixture: Stir 1 packet gelatin with a little cold water, stir in lime juice,then add the warm juice and the mashed pears add one or two Tbs. simple syrup, and stir in softened cream cheese, and whip together well.Optional: add four drops of green food coloring. Chill until thickened.
- 2. In another bowl combine 1 cup boiling hot water and Lime Jello and stir well, let cool, and then add 8 oz. of Cool Whip. Chill until thickened.
- 3. Prepare a mold by spraying with oil; I used a bundt pan. Place slices of the second can of pears in the bottom, spoon the first mixture of Pears/juice/cream cheese into the mold. Then add the final layer of Lime Jello/Cool Whip and cover tightly with foil and chill overnight. If making early in the a.m. it should be fine by evening.
- 4. Turn the mold upside down over a serving platter, and tap gently to loosen gelatin. Decorate with marashino cherries if desired. It's great for dessert or on lettuce as a salad.
MOM'S MOLDED FRUIT SALAD
This has been a family favorite for decades. It's delish! Chilling time is cooking time. This salad keeps for several days, so you can make it ahead.

Steps:
- Drain fruit, mix together and set aside.
- Whip 1/2 pint cream, add 1/2 cup sugar and set aside.
- Beat the cream cheese and add mayonnaise and set aside.
- Dissolve gelatine in lemon juice over hot water, then add to mayonnaise and cheese mixture.
- Add fruit, then fold in whipped cream, marshmallows and nuts.
- Pour into mold or 9X13, and chill until set.

FROZEN FRUIT SALAD, MOM'S
Mom would make this to take to dinner parties, and specifically to Nick and Shirley's house because they had lots of kids and they all enjoyed this wonderful treat. I even included this in a recipe book I helped put together for a Head Start fundraiser. It is incredible!

- 1. Cream cream cheese and mayo. Add cherries or grapes if you prefer, pineapple, marshmallows and pecans. Whip cream and add remaining to taste. Fold all together and freeze in mold. Thaw 4 hours in the refrigerator and serve.

- Grease or butter one 2 quart gelatin mold pan.
- In a small saucepan, bring 1 cup of water to a boil; add gelatin and mix until dissolved. Remove from heat and let cool to room temperature. Stir in mayonnaise, cottage cheese, pineapples, walnuts and marshmallows.
- Pour into molded pan and chill until firm. Remove onto serving dish and garnish with halved cherries.

Steps:
- Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
- Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
- Add marshmallows to the cream cheese mixture; fold in the fruit mixture. Grease a fluted tube pan with cooking spray and turn the fruit salad out into the pan.
- Cover and freeze salad for at least 8 hours. Unmold and let stand at room temperature at least 10 minutes before cutting.
