3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

¾ cup fresh bread crumbs
½ cup minced onion
2 eggs, beaten
1 ½ teaspoons salt

3 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
  • Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

¾ cup bread crumbs
2 (10.75 ounce) cans golden mushroom soup, divided
1 egg, beaten
1 tablespoon dried minced onion
1 teaspoon salt
⅓ cup water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, bread crumbs, 1/2 can golden mushroom soup, egg, dried minced onion, and salt together in a bowl until smooth; shape into an 8x4-inch loaf and move to a baking dish.
  • Bake in the preheated oven until no longer pink in the center, about 75 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Stir remaining soup with hot water in a saucepan; bring to a simmer. Ladle soup mixture over meatloaf.

1½ lbs ground beef
¾ cup quick oatmeal
¾ cup milk
1 egg
½ cup onion, finely diced (or grate it if your kids will freak out if they see a piece of onion)
1¼ tsp salt
¼ tsp pepper
GLAZE
⅓ cup ketchup
2 Tbsp brown sugar
1 Tbsp mustard

Steps:

  • Preheat oven to 350 degrees.
  • Combine ground beef, oatmeal, milk, egg, onion, salt, and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
  • Transfer meat into a large loaf pan and press it down evenly into the pan.
  • For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Pour evenly over meatloaf.
  • Bake at 350 degrees for 1 hour and 20 minutes.
  • Remove from oven and drain off excess grease. Let stand for 5 minutes before serving.

2 lb ground beef
1 c milk
1/2 c chopped onions
30 saltine crackers crushed
1 tsp salt
1/2 tsp pepper
4 eggs
1 c ketchup
3/4 c brown sugar
1 Tbsp ground dry mustard

Steps:

  • 1. Pre-heat oven to 350 degrees. Spray a square baking dish, one large loaf pan or 2 small loaf pans with cooking spray.
  • 2. Combine first 7 ingredients in large bowl and mix well. Put in pan and shape so meatloaf doesn't touch the sides. Indent top of meatloaf with the side of your hand and make 1 line down the middle of meat loaf about 1/4 inch deep.
  • 3. Combine the last 3 ingredients in a small bowl and mix well. Spread half of the sauce over the meatloaf. Reserve the other half to put on top of meatloaf after cooking 45 minutes. *
  • 4. Put meatloaf in pre-heat oven and cook for 45 minutes and add the rest of the sauce to the top. Check after an hour. Then check every 15 minutes until done.
  • 5. *If you like your sauce a little sweeter add more brown sugar. Like it a little spicier add more ground dry mustard.

1 medium yellow onion, chopped
1/2 cup small-diced carrots
1/2 cup small-diced celery
2 large cloves garlic, finely chopped
3/4 cup stout beer, such as Guinness
4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-1/2 cups)
1 cup whole milk
1 lb. ground beef
1 lb. ground veal
2 large eggs
1/2 cup grated Cheddar
1/4 cup dried mushrooms, rehydrated in hot water and chopped
1/4 cup chopped fresh parsley
1 Tbs. Worcestershire sauce
Kosher Salt
Freshly ground black pepper
10 oz. sliced bacon (about 9 strips)

Steps:

  • Heat 2 Tbs. of the oil in a 10- to 12-inch skillet over medium-low heat. Cook the onion, carrots, celery, and garlic, stirring frequently, until softened and just beginning to brown, 6 to 8 minutes. Add the stout, and simmer briskly, until almost dry, 4 to 5 minutes. Transfer to a large bowl and let cool until warm. In a shallow dish that holds it in a single layer, soak the bread in the milk, flipping once, until soggy but not falling apart, 5 to 10 minutes, depending on the coarseness and freshness of the bread. Lightly squeeze a handful of bread at a time to remove some of the milk (it should be wet but not drenched). Finely chop and add to the bowl with the vegetable mixture. Position a rack in the center of the oven and heat the oven to 375°F. Add the beef, veal and eggs to the onion mixture. Scatter the Cheddar, rehydrated mushrooms, and parsley over the meat, and then sprinkle with the Worcestershire, 2-1/4 tsp. salt, and 1/2 tsp. pepper. Use your hands to gently mix all the ingredients until just combined; try not to compact the mixture as you do this. Heat the remaining 1 tsp. of oil in a small skillet over medium-low heat. Form 1 Tbs. of the meatloaf mixture into a small patty. When the oil is hot, cook the patty on both sides until cooked through, about 5 minutes total. Transfer to a plate and let cool slightly. Taste and adjust the salt, pepper, and other seasonings as needed. Repeat until you're satisfied with the flavor. Line a 9×13-inch baking pan with parchment. Transfer the meatloaf mixture to the baking pan and form into a 10×4-inch rectangular block (it becomes loaf-shaped as it cooks). Finish the meatloaf by draping it with slightly overlapping strips of bacon, tucking the ends under the loaf. Bake until an instant-read thermometer registers 160°F in the center of the meatloaf, 40 to 55 minutes. ½ lb. medium or sharp cheddar cheese (cut into ½" cubes)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl combine the beef, onion, bread crumbs, salt, paprika, celery salt, black pepper, eggs, and milk. Mix until combined well.
  • Cut cheese into ½" cubes and fold in to the meat mixture.
  • Grease a 9" x 5" x 3" loaf pan with vegetable cooking spray.
  • Place meat mixture into pan and spread until even. Take a fork and poke it a few times to make sure there are no air holes.
  • Bake at 350 degrees F for 60 minutes.

  • Drain any excess fat from the loaf.

Steps:

  • Preheat oven to 350 degrees Fahrenheit
  • Combine the milk and crushed saltine crackers in a small bowl. Allow to soak for about 5 minutes or until the crackers are soft. Whisk in the egg, salt, sage, dill, and pepper.
  • Place ground beef in a large bowl and add in onion and milk mixture. Gently mix until just combined.
  • Line a baking sheet with parchment paper or aluminum foil and shape meat into a loaf shape. Dip fingers in water and smooth out the cracks with your if needed.
  • Place in oven and bake for about 20 minutes.
  • Combine ketchup, sugar and Worcestershire sauce and spoon half of it over the partially cooked loaf. Return to the oven.

2 slices hearty whole-wheat bread
2 eggs
1 large onion
1/2 cup low-fat or whole milk
1/2 cup grated Parmesan cheese
3 tablespoons finely chopped fresh parsley
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pound lean ground beef
1/2 cup ketchup (or more, if necessary, to cover well)

Steps:

  • Preheat oven to 325 degrees F. Toast the bread and cube it. Set it aside. Break the eggs into a large mixing bowl and beat slightly. Finely chop the onion, add it to the bowl. Add the milk, Parmesan cheese, parsley, mustard, Worcestershire sauce, salt, pepper and reserved bread and mix well. Crumble the ground meat over the mixture and then fold together using your hands. Bake for about 1 hour and 10 minutes, until the glaze is browned and an instant read thermometer inserted in the center of the meat loaf registers 160°. Let the meatloaf rest for 10 minutes. Cut into slices and serve.
