Mom made this every Sunday and we looked forward to cold sandwiches the next day, if there was any left!! Homemade breadcrumbs work best.

1 ½ pounds ground beef
¼ cup chopped onion
¼ cup quick-cooking oats
⅛ cup cornmeal
1 cup dried bread crumbs
1 ½ teaspoons salt
1 tablespoon white sugar
1 egg, beaten
½ cup tomato juice
½ cup water
1 tablespoon barbecue sauce
1 dash liquid smoke flavoring
1 tablespoon distilled white vinegar
¼ cup ketchup
1 tablespoon brown sugar
2 teaspoons prepared mustard
2 dashes liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, onion, oatmeal, cornmeal, bread crumbs, salt, sugar, egg, tomato juice, water, barbecue sauce, 1/8 teaspoon liquid smoke and vinegar. Mix together thoroughly and place mixture into a lightly greased 9x5 inch loaf pan.
  • In a separate small bowl, combine the ketchup, brown sugar, mustard and 2 drops liquid smoke and mix thoroughly. Spread over the top of the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for approximately one hour.

Meatloaf Muffins are individual portions of savory ground beef meatloaf cooked in a muffin tin. This is an easy and quick way to have meatloaf for dinner!

2 tbsp olive oil
1 small to medium yellow or white onion (diced)
3 plump garlic cloves (chopped)
1 tsp fresh rosemary (chopped)
2 tbsp Worcestershire sauce
1 tbsp tomato paste
2 lbs. ground beef (93/7 is the best ratio for this recipe)
1 cup panko bread crumbs
1/3 cup milk
2 eggs (lightly beaten)
1 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1 cup ketchup

Steps:

  • Preheat the oven to 400° and spray a 12 count muffin tin with baking/olive oil spray.
  • In a skillet over medium heat saute the 1 diced onions and 3 chopped garlic cloves until softened, about 5-8 minutes.Remove from the heat and stir in the 2 tbsp Worcestershire sauce, 1 tbsp tomato paste, and 1 tsp chopped fresh rosemary.
  • In a large bowl add the 2 lbs. ground beef, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp onion powder, and the sauteed onion mixture.With clean hands lightly mix the ingredients together. Only mix just until it comes together, over mixing will create tough meatloaf!
  • With a 1/3 cup measuring cup portion out the meatloaf mixture into the prepared 12 cup muffin tin.
  • Top each individual meatloafs with 1 tbsp ketchup.
  • Place the muffin tin on top of a baking sheet to catch any spill-overs in the oven!
  • Bake at 400 for 25 minutes until the center of the meatloaf reaches 160°.
  • Let rest for a few minutes and then serve!

1 1/2 lbs ground beef
1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
barbecue sauce, for glaze

Steps:

  • Combine all ingredients in a large bowl& mix until well blended- do not over mix.
  • Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
  • This will be used for unmoulding after they are cooked.
  • Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
  • Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

3/4 cup shredded Mexican cheese blend
1 tablespoon chili powder
1 tablespoon Worcestershire sauce

  • Preheat oven to 375°. In a large bowl, combine the first 9 ingredients. Add beef and turkey; mix lightly but thoroughly. Place 1/3 cup mixture into each of 12 ungreased muffin cups, pressing lightly., In a small bowl, mix topping ingredients; spoon over meat loaves. Bake, uncovered until a thermometer reads 165°, 15-20 minutes. Freeze option: Bake meat loaves without topping. Cool meat loaves, and freeze, covered, on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Prepare topping as directed; spread over tops. Bake in a preheated 350° oven until heated through.

MEATLOAF INGREDIENTS:
1 c bread crumbs
1 c milk
1 1/2 lb hamburger
1 egg
1/4 tsp pepper
1 tsp worcestershire sauce
2 Tbsp minced onion
SAUCE:
1/4 c water
1/2 c ketchup
3 Tbsp mustard
1/4 tsp salt
3 Tbsp light brown sugar

Steps:

  • 1. Heat oven to 350 degrees. Add bread crumbs to milk and let stand a few minutes. Mix with ground beef, egg, pepper worcestershire sauce, and onion. Can either put in 9x5 bread pan, or I use the Jumbo muffin pans (which makes 6 large) I add sliced peppers over top of each one and chopped pepper with the meatlof mixture.
  • 2. Sauce: Combine ketchup, brown sugar, water, mustard,salt and pour over meat loaf. (I double this so I can have extra to pour over mashed potato and over meatloaf. Put all in a saucepan and heat up on stove top. Pour some over each one in the cups or over all in the loaf pan. Save the rest for serving with meal. Bake at for 25-30 minutes, check with thermometer til it reads 170 degrees .
  • 3. Seems so simple and like most other meatloaf recipes but the sauce is what makes it so good. I also love the fact that when you cook them in the muffin cups, it takes half the time to cook, and easy to freeze a few if you have any leftovers!

1 pound ground turkey or ground beef
1/3 cup breadcrumbs or oatmeal (Either works, but I now use oatmeal)
1/3 cup Parmesan cheese
1 egg
1 (8 ounce) can tomato sauce (Instead of the tomato sauce, I often substitute with around 1/4 cup of ketchup in the meat mixture and at least another 1/4 cup for the top. Personal choice to use the ketchup vs tomato sauce I do prefer the taste of ketchup - must be the added sugar.)
1/2 teaspoon garlic powder
Salt and pepper
several shakes of Worcestershire sauce (about a teaspoon)
A couple of handfuls of whatever other veggies you have on hand... (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils...)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.
  • Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).
  • Top with a dollop of tomato sauce/ketchup on each one.
  • Cook for 30-35 minutes.
  • Serve two per person.

(CREAM THESE TWO TOGETHER):
* 1 1/2 cups Granulated Sugar
* 1/2 cup Butter

(MIX TOGETHER IN A BOWL):
* 2 cups Flour, all-purpose (white)
* 3 tsp. Baking Powder
* 1 tsp. Salt
----------
(IN ANOTHER BOWL, MIX):
* 2 Eggs, large
* 2 tbsp. Milk (1% used for calculations)
1 tsp. Vanilla Extract
----------
* 1 cup Milk (1% used for calculations)

Steps:

  • Pre-heat oven to 350 degrees F, and prepare two 'jumbo muffin' tins (6 muffins each tray) by spraying with a no-stick spray.
  • Alternate flour mixture and cup of milk into the sugar / butter mixture. Beat for 2 minutes, then add the egg mixture and beat for 1 minute.
  • Divide evenly amongst the 12 muffin cups, and bake at 350 degrees F for 10 - 13 minutes, or until done - depending on your oven. Watch that they don't burn!
  • Invert onto wire rack to cool, and then store in an air-tight container once they are cooled. As they sit, covered, they get even more moist and delicious! :)
  • Serve plain, or top with fresh sliced strawberries (Not included in nutritional information!) or other fruit... Enjoy!

2013-12-05 I took my mom's meatloaf recipe and modified it slightly for jumbo muffin tins. Having the separate portions makes it so much easier for me. Obviously, I have built in portion control, but it also makes it easier to freeze and thaw only what you want! This way you don't have to thaw an entire meatloaf for one serving!
