- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

MOM'S MEATLOAF
This is the only meatloaf I ever liked! Seasoned with fresh onion,a touch of bell pepper, and glazed with a sweet ketchup sauce. For our small family, we cook one loaf and freeze the other to cook at a later time.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine ground beef, cracker crumbs, tomato sauce, eggs, onion, bell pepper, salt, thyme, and marjoram in a large bowl and mix well. Shape beef mixture into two equally sized loaves. Place both loaves in a 9x13 inch baking dish. Cover with foil and bake in the preheated oven for 1 hour. Meanwhile, mix ketchup and corn syrup in a small bowl to make a glaze.
- Remove baking dish from the oven and remove foil. Brush glaze onto the loaves. Return baking dish to the oven uncovered, and continue baking until loaves are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- 1. 1.Preheat oven to 375 degrees F. 2.Scrub the potatoes under running water to remove all the dirt. ... 3.Brush the whole potato with olive oil, then sprinkle the tops with salt. 4.Place them directly on the middle rack of the oven. ... 5.Run a knife lengthwise across the salted top, leaving about 1/2 inch on both sides. Now on to the loaf...
- 2. Mix all ingredients together in large bowl leaving the ketchup for the final step
- 3. Shape into loaf in a large loaf pan or baking dish (9x11)
- 4. Bake for 45 minutes then spread ketchup on top for 14 minutes. Loaf should be firm the touch. drain fat from pan and let rest for 5 minutes. Remove potatoes and place in bowl this would be a good time to get remaining items on table.
- 5. Slice and enjoy!!!

- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, mix meatloaf ingredients. Press in bottom and up sides of baking dish to within 1/2 inch of top.
- In 2-quart saucepan, heat water, butter and 1 teaspoon salt to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Stir in broccoli and cheese. Spoon over meat shell.
- Bake 30 to 35 minutes or until meatloaf is thoroughly cooked and meat thermometer inserted in center of meat reads 160°F. Let stand 5 minutes; drain liquid along edges.

EASY SHEET PAN MEATLOAF AND POTATOES

- Preheat oven to 400°F. Reserve 1/4 cup of tomato sauce; set aside.
- Combine Ground Beef, remaining tomato sauce, bread crumbs, onion, egg, Worcestershire, thyme, salt and 1/4 teaspoon pepper in large bowl; mixing lightly but thoroughly. Shape beef mixture into 8 x 4 x 2-inch loaf on parchment-lined sheet pan.
- Toss potatoes with cooking spray, garlic salt and remaining 1/2 teaspoon pepper. Spread potatoes evenly around the meatloaf on the sheet pan.
- Place sheet pan on the center rack of oven, bake in preheated 400°F oven for 40 minutes. Meanwhile, combine reserved tomato sauce with brown sugar and mustard. Spread sauce evenly over top of meatloaf, stir potatoes and continue cooking another 20 minutes or until instant-read thermometer inserted into center of meatloaf registers 160°F.
- Remove meatloaf; let stand 10 minutes before slicing. Test potatoes for doneness and return to oven if needed while meatloaf rests. Cut meatloaf into slices. Serve with potatoes. Four-Pepper Meatloaf Variation: Prepare meatloaf as above, adding 1/3 cup finely chopped green bell pepper, 1/4 teaspoon ground red pepper and 1/4 teaspoon ground white pepper to ground beef mixture. Picadillo-Style Meatloaf Variation: Prepare meatloaf as above, omitting thyme and adding 1/3 cup finely chopped green bell pepper, 1/4 cup raisins, 1 teaspoon ground cumin and 1/2 teaspoon dried oregano to ground beef mixture.

NINJA FOODI MEATLOAF AND POTATOES
This meal is a one pot Ninja Foodi Meatloaf and Potatoes, plus you can add corn too! It can all be made in an hour, plus gluten-free too!

- In a large bowl, combine all ingredients for the meatloaf.
- Spray a sheet of foil with non-stick cooking spray, shape the meatloaf and place on the foil.
- Set aside and wash hands, then cut the potatoes into quarters.
- Place the potatoes in the bottom of the Ninja Foodi with 1 Cup of water.
- Place the rack inside the foodi where it extends up to the top of the pot.
- Place the meatloaf on the rack.
- Set to pressure cook on high for 25 minutes.
- While this is cooking, prepare the sauce by combining all ingredients in a small saucepan on medium heat.
- Whisk it until the sugar has dissolved and set aside.
- Quick-release the pressure.
- Carefully remove the rack with the meatloaf on it and set aside.
- Carefully remove the pot and pour the potatoes into a large bowl.
- Add the rack back into the foodi; however, this time place the rack where it's low in the pot.
- This can be done by simply changing the handles on the side, flip them the other way.
- Pour the corn onto a sheet of foil with the sides up.
- Add the butter on top of the corn.
- Place the meatloaf and corn on the rack in the foodi. (Note - this fits if you do 2 pounds or less of ground beef. I have found if I do any more than this it will not fit as well next to it. If that happens, I go ahead and microwave the corn or put the corn in at the end when I take the meatloaf out.)
- Coat the meatloaf with the sauce.
- Place the foodi on broil for 5 minutes at 450 degrees.
- Open and stir up the corn.
- Broil an additional 5 minutes.
- While this is broiling, mash the potatoes with a hand masher and stir in the remaining ingredients.
- Add additional salt to taste if needed.
- Remove the meatloaf and corn.
- Serve!

BETTER THAN MOM'S MEATLOAF
My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
- Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.

Steps:
- Peel and cube potatoes.
- Line the bottom of the crock pot with potatoes.
- In a large mixing bowl, beat eggs, ketchup and mustard together.
- Add ground beef, onion soup mix, and stuffing or bread crumbs to the egg mixture and mix all together well.
- Shape meat mixture into two loaves and place in crock pot on top of potatoes.
- Drizzle ketchup on the top of the loaves.
- Set crock pot to high for an hour or until you leave, then set to low for 8-10 hours.
- Enjoy!
