1 tablespoon butter
1/2 cup chopped onion
1 1/2 cups uncooked elbow macaroni
1 (19 ounce) can tomatoes
1 cup water
1 teaspoon salt
1/4 teaspoon pepper
buttered breadcrumbs (optional)

Steps:

  • Heat butter, saute onions until transparent.
  • Place in 2 quart casserole.
  • Add remaining ingredients.
  • Stir well, breaking the tomatoes into small pieces.
  • Bake at 350F for 65 mins or til macaroni is tender.
  • Top with buttered crumbs during last 10 mins of baking if desired.
  • Excellent meal with sausages and a salad.

CASSEROLE SUPREME (HAMBURGER MACARONI CASSEROLE)

Recipe slightly adapted from the Better Homes & Gardens Casserole Cookbook published by Meredith in 1968. Double it to feed a crowd. This casserole also freezes very well.

1 pound ground beef (80/20 is perfect for this)
1-2 Tablespoons olive oil if necessary, (depends on how fatty your meat is)
1 small-to-medium onion,diced (about 3/4 cup)
3 cloves minced garlic
kosher salt and freshly ground black pepper, to taste
3/4 teaspoon Italian seasoning blend of your choice
1 28 oz can whole tomatoes and their juice
3 oz softened cream cheese, (eyeballing it is fine)
1/2-3/4 cup sour cream, (ditto--a huge serving spoonful will do nicely)
1 pound pasta short pasta of your choice, cooked to al dente (elbows, shells, penne, fusilli, rigatoni, wagon wheels, radiatore, cavatappi, etc)

Steps:

  • Place the ground beef in a heavy skillet to brown, breaking it up with a spatula. If the meat is on the lean side, add a tablespoon or two of olive oil to the pan.
  • Once the meat is about halfway done (some will be browned and some still pink or red), add the onion and garlic.
  • Season liberally with salt and pepper.
  • Cook until onions and garlic are softened and meat is completely cooked.
  • Add the tomatoes and softened cream cheese
  • Stir around so the cream cheese melts evenly into the tomatoes.
  • Let simmer for about ten minutes or so.
  • With the heat on low, stir in the sour cream.
  • Taste and adjust the seasonings.
  • Fold the sauce into your freshly drained pasta.
  • Serve as-is or spoon into individual ramekins or a big old casserole.
  • Bake at 350F until the pasta on top has a bit of crunch to it and the casserole is bubbling all around the sides.
  • Let sit for ten minutes before serving.
  • Enjoy!

My mom's macaroni salad recipe. I leave out the bell peppers because Hubby doesn't care for them, and I chop the onions very fine because I don't like biting into big pieces. I also recommend making extra dressing to add later. The macaroni will absorb the moisture as it sets, which could make the salad seem too dry.

8 ounces elbow macaroni (cooked)
1 cup mayonnaise
2 tablespoons vinegar
1 tablespoon yellow mustard
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1 cup celery, chopped
1/4 cup onion, chopped
1 cup green & red bell pepper, chopped (optional)
1 cup hard-boiled egg, chopped (optional)

Steps:

  • Boil macaroni according to package directions, being sure not to overcook.
  • Drain macaroni in a colander, then run under cold water or return to the pot and fill with cold water to chill.
  • Combine the dressing ingredients in a large bowl and mix well.
  • Combine macaroni, dressing and your choice of add-ins in a large bowl (preferably one with a lid for storage) and mix thoroughly.
  • Chill for at least 2-3 hours so flavors can blend.
  • Add extra dressing if needed.

MACARONI CARBONARA SUPREME!

This is one of my favorite recipes for a macaroni casserole, it's even good enough to serve to guests. I most always add in about 1-1/2 cups frozen peas. This casserole makes enough to serve 8 people, to serve more just double and make in two separate dishes. I have used different cheeses in the past, but I strongly advise you to use only Fontina cheese for this casserole.

3 1/2 cups macaroni noodles
3 cups coarse fresh breadcrumbs
10 -13 slices bacon, strips
1/4 cup grated parmesan cheese
1/3 cup parsley, chopped
2 -3 minced fresh garlic cloves
3 tablespoons all-purpose flour
3 cups full-fat milk
3 cups half-and-half
6 large egg yolks
salt and black pepper
3 1/2 cups packed Fontina cheese, shredded
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • In a skillet cook the bacon until crisp, then chop finely (reserve the bacon drippings).
  • Butter a 13 x 9-inch baking dish.
  • Cook macaroni in salted boiling water until JUST firm-tender and still firm to the bite (do not overcook!) drain and rinse with cold water.
  • In a large bowl toss together chopped cooked bacon, 1/4 cup reserved bacon drippings, add in breadcrumbs, 1/4 cup Parmesan cheese and 1/4 cup Parmesan cheese, toss to combine well and set aside.
  • To the skillet with the remaining bacon drippings add in the fresh garlic; saute for about 1 minute.
  • Add in the flour and whisk for about 3 minutes.
  • Gradually add in full-fat milk, half and half cream, egg yolks and black pepper (do not add in any salt until later) cook whisking until mixture thickens (whisking constantly for about 5-7 minutes).
  • Add in 2 cups Fontina cheese and 1 cup grated Parmesan cheese; whisk until the cheeses melt; remove from the heat and season with salt if desired.
  • Mix in the cooked macaroni (if you are adding in peas, then add them in at this point, you can also add in about 2 tablespoons chopped fresh parsley also if desired).
  • Stir in the remaining 1-1/2 cups Fontina cheese; mix to combine.
  • Transfer the macaroni/cheese mixture to a prepared baking dish.
  • Bake for about 25-30 minutes.
  • Remove from the oven and sprinkle the reserved bread crumb mixture over the casserole and return to the oven for another 15-20 minutes, or until the topping is golden.
  • Let stand for 20 minutes before serving.
  • Delicious!

I've been eating this macaroni & cheese since I was a little girl. I'm not sure where my mom got the recipe from, but it is delicious. We usually sprinkle with some parmesan cheese before browning.

1 (8 ounce) package elbow macaroni
4 tablespoons butter
4 tablespoons flour
1 teaspoon salt
1/4 teaspoon black pepper
2 cups milk
1 cup American cheese, cut into small pieces

Steps:

  • Melt butter, add flour, salt, and pepper, wisk until smooth.
  • Add milk slowly, whisking to blend.
  • Cook until thick and smooth, add cheese and stir until melted.
  • Cook elbow noodles as directed on package.
  • Drain and pour into a baking dish.
  • Pour cheese sauce over cooked elbows.
  • Bake at 350°F for 15 minutes or until lightly browned.
  • *It's best to use a double boiler or nonstick pan to make your cheese sauce.

I found this recipe in a Southern Lady magazine (along with many other good ones), and the magazine is so dilapidated from using the recipe(s) so much, that I figured I should get it down here for future use. This is a favorite family recipe, used at Christmas and other holidays as well for comfort food, and especially warming on a crisp Fall or Winter day.

4 cups milk
2 cups heavy whipping cream, divided
1/2 cup butter
1 tablespoon salt
1 (16 ounce) package penne pasta
2 cups parmesan cheese, freshly grated, divided
1 tablespoon fresh parsley, chopped
paprika

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 13x9-inch baking dish; set aside.
  • In a Dutch oven, combine milk, 1 cup cream, butter, and salt. Bring to a simmer over medium heat. Add pasta; cook for 12 minutes, stirring frequently. Remove from heat; add 1 cup Parmesan cheese, stirring until cheese is melted. (Or, you can simply have already boiled pasta and then add the cooked and drained pasta into the cream mixture, and then stir in the Parmesan cheese. You can also add a cup of shredded cheddar cheese, if you desire). (You can also substitute the pasta for peeled and cut cooked potatoes for a lovely scalloped or au gratin potatoes).
  • Spoon pasta mixture into prepared baking dish. (Stir in chunks of cooked ham, if desired). Pour remaining 1 cup cream over pasta. Top with remaining 1 cup Parmesan cheese (and some shredded cheddar cheese, too, if you wish). Evenly sprinkle parsley and paprika over top of cheese. Bake for 20 minutes, or until lightly browned and bubbly.

1 1/2 cups extra-sharp cheddar cheese (shredded or sliced)
1 1/2 cups macaroni (cooked)
1 cup milk

Steps:

  • Pre-heat the oven to 400 degrees F.
  • In a 2-quart square baking dish place 1/2 a cup of cooked macaroni in a single layer.
  • Cover macaroni with cheese evenly.
  • Layer another 1/2 a cup of of macaroni on top of the cheese.
  • Cover macaroni with cheese evenly.
  • Layer another 1/2 a cup of of macaroni on top of the cheese.
  • Add the milk.
  • Cover macaroni and milk with cheese evenly.
  • Bake for 20 minutes.
  • Set the oven to broil and and broil mac, milk and cheese 6"-8" away from broiler for 5-7 minutes or until cheese is browned.
