Perfect Pie Crust image

Making the Perfect Pie Crust is easy with this step by step tutorial. Perfect pie crust every time!

Provided by Leigh Anne Wilkes

Categories     Dessert

Time 25m

Number Of Ingredients 5

2 1/2 C all purpose flour
1/2 C butter
1/2 C shortening
pinch of salt
ice cold water (add teaspoon by teaspoon until right consistency has formed)

Steps:

  • Place flour, salt, butter and shortening in bowl.
  • Use your hands to combine ingredients until small pebbles form
  • Add cold water a teaspoon at a time until the dough begins to hold together and form a ball.
  • Do not over handle the dough. Dough should be soft, moist but not wet.
  • Divide dough in half.
  • Place ball of dough onto wax paper and flatten. Place another piece of wax paper over the top and roll out the pastry into a circle. If your pie pan is 9 inch make sure your circle is bigger than 9 inches so you have enough for the edging..
  • Remove the top layer of wax paper and place pastry into pie tin. Remove other piece of wax paper and press pastry into pan. Use your fingers to crimp the edge of the crust.
  • Freeze for 30 minutes to firm up the pastry. This helps prevent pastry from shrinking during baking.
  • Prick the bottom of crust to prevent bubbling during baking.
  • If pie calls for a baked crust bake at 400 degrees. For the first 10-12 minutes keep the edges of pie covered with foil and then remove for the last 15 minutes. Bake until golden brown.
  • Recipe makes two 9" pie crusts

  • Combine flour and salt in a large bowl. Cut in butter with a pastry blender until mixture is coarse crumbs. A pastry blender does the best job of combining the ingredients without overworking the dough.
  • Sprinkle ice water, 1 Tablespoon at a time, evenly over flour mixture, tossing lightly with a fork until mixture forms an even ball of dough. Be sure to use a fork instead of your hands. You’ll avoid overworking/warming the dough.
  • Wrap the dough in plastic wrap and refrigerate for a minimum of 4 hours or overnight. Cold dough is an absolute must.
  • Once cold, remove the dough from the plastic wrap and divide in half. Place one ball (wrapped in plastic) back into the refrigerator until you’re ready to roll it out.

  • Preheat oven to 350 degrees F. Chill the mixing bowl and whisk beater until ready to whip the cream.
  • Place half the chocolate wafers in a ziploc bag and crush until fine crumbs, or process in food processor until finely ground. Stir in the salt and melted butter until crumbs are just moist. Press the mixture evenly on the bottom and up the sides of a 9’ pie plate, packing tightly so it’s even. Use the bottom of a flat measuring cup to press crumbs into pie plate. Bake until crisp, 6 to 8 minutes. Set aside to cool completely.
  • In the chilled mixing bowl add the heavy cream, confectioners’ sugar and vanilla whip with the whisk beater until it holds stiff peaks. Place peanut butter in medium bowl and stir in one quarter of the whipped cream. Gently fold remaining whipped cream into peanut butter mixture being careful not to deflate the cream. Spoon filling into pie crust, smoothing evenly with a spatula. Refrigerate until firm, at least 3 hours.
  • Before serving, garnish with a dollop of whipped cream and chopped peanuts. Cover and refrigerate leftovers.

MOM'S OIL PIE CRUST RECIPE - GRUMPY'S HONEYBUNCH
2021-09-15 The biggest plus to using oil versus butter in a pie crust is the fact that it is already in liquid form. It can't be melted for this reason and is easy to work into the dough. An oil pie crust will not brown as much as a butter pie crust, but it will still be flaky and delicious.
