THE ULTIMATE CHICKEN FRIED STEAK
The Ultimate Chicken Fried Steak is fried to golden perfection and topped with the creamiest gravy you can imagine. It's hard to imagine a more quintessential Southern meal. The hard part is deciding whether you want to make it for breakfast or dinner. My family can't get enough of these tender steaks with that delightful crispy, crunchy coating. And the gravy? Heaven!

Steps:
- In a shallow bowl, whisk together flour, one teaspoon black pepper, one teaspoon salt, paprika, onion powder, garlic powder, baking soda, and baking powder. Set aside.
- In a separate shallow bowl, whisk together buttermilk , TABASCO® Sauce, and eggs. Set aside.
- Pat cube steaks dry with a paper towel, removing as much moisture as possible. Season with one teaspoon of salt and one teaspoon of pepper. Let sit for 5 minutes and pat dry again with paper towel.
- Dredge the cube steaks in the flour mixture, shaking off excess, then dredge in the buttermilk-egg mixture, letting excess drip off, and then once again in the flour mixture, shaking off excess.
- Place breaded cube steaks on a sheet pan or metal rack and press any of the remaining flour mixture into the cube steaks making sure that the entire steak is completely coated. Let sit for 10 minutes.
- Preheat oven to 225 to 250 F.
- Meanwhile, heat vegetable oil in a heavy skillet or large cast iron skillet over medium high heat. How much oil you need depends on the size of your skillet. You want it to be about 1/4-inch deep. We aren't deep frying the steaks, just shallow frying.
- Test the oil by dropping a bit of the breading into in. The oil should sizzle and bubble around the breading. Look for the oil to be glistening but not smoking - about 320-340 degrees F. Now we're ready to fry.
- Place two steaks into the pan at a time and fry for 3 to 4 minutes on each side or until golden brown. Do not flip more than once or the breading will fall off. Do not fry more than two steaks or the pan will be too crowded and the breading will fall off.
- Remove steaks from pan and drain on paper towels. Place in preheated oven. Turn skillet heat to medium.

Steps:
- The times in the instructions are based on using the type of pan shown in the blog. Cast iron and other types of pans will have different frying times...
- Add oil to the pan, on medium heat. The amount will depend on the size of the pan. Estimate just less than half the depth of the chicken.
- Add a stick of butter to the pan.
- Wait until the oil/butter is hot. To test, flick a small amount of water into the pan. If the oil sizzles, it's hot enough.
- In the meantime, add flour, onion powder, pepper and salt to a gallon size baggie. Mix well.
- Add drumsticks to the baggie and shake well until fully coated.
- When oil is hot, place the chicken in the pan and put the lid on it.
- Now leave it alone for about a half an hour. Lifting the lid lets the heat escape. It's tempting but don't do it. You'll know when it's time by listening to the chicken. Frying is loud. When it starts to quiet down, the frying is done on that side.
- Using tongs, gently turn the chicken over. You may need to test to make sure the batter hasn't stuck to the bottom of the pan. If it has, gently use the tongs to release the batter before turning.
- The second side doesn't take as long. Start listening for the quieting sounds at about 20 minutes.
- When the chicken is crisp and brown on both sides, remove from the pan and place on a rack to allow the oil to drip off the chicken.
- Serve and enjoy!

MOM'S BAKED FRIED CHICKEN AND GRAVY

Steps:
- Make chicken:
- Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
- Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
- Make gravy:
- Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

- Remove wrapping from packaged chicken, but leave styrofoam padding. Place chicken in the sink next to the flour. Rinse chicken pieces, and place them directly into the flour WITHOUT shaking off excess water. You want the pieces to be wet enough for the flour to stick. Roll pieces around in the flour to make sure they are entirely covered.
- Pour about 1 1/2 to 2-inches cooking oil into a large heavy-duty Dutch oven or pot. Heat on medium-high until oil is lightly "bubbling".
- Using tongs, carefully place chicken into the bubbling oil in batches, beginning with the breast pieces. They will take the longest to cook. Once flour is fried onto the skins (after about a minute), turn heat down to medium and continue frying until chicken is cooked through (about 20 to 30 minutes) and is golden brown in color. Juices should be clear.

- In a bowl, place the chicken, rice wine, ginger, salt and black pepper. Combine them well. Then evenly coat the chicken with the starch and set side. (To get the effect like the picture, dip the individual chicken pieces into the bowl of starch, roll the chicken around a bit then take them out and set aside.)
- In a deep saucepan (or frier) add a generous amount of oil and heat it until the oil temperature reaches 175 C / 347 F (or boiling). Start adding the battered chicken carefully and fry them until they cook (between 3 to 5 mins, depending on the size of chicken). Do not overcrowd the pan. (It might be useful to use a grease splatter screen if you have one. It’s super handy! It minimises oil splatter.) Take out the done chicken and place them onto some kitchen paper while frying the remaining chicken pieces. Once the first set of deep frying is completed, quickly scoop out any floating debris from the oil using a skimmer. Then deep fry the chicken again when the oil temperature reaches 175 C / 347 F (or boiling). Fry them until the batter is golden and crisp. (The second time frying is shorter than the first time, 2 to 3 mins) Set aside.
- In a separate saucepan, add in the Korean fried chicken sauce ingredients (listed above). Heat the sauce over low medium heat and stir well. Once it starts bubbling, remove the pan from the heat. Place double fried chicken into a large mixing bowl then pour the fried chicken sauce over the chicken to coat. Mix them lightly and thoroughly. Alternatively, serve the fried chicken and the sauce separately and use the sauce as a dipping sauce.Once all the chicken is coated with the sauce, serve it hot immediately. Leftover chicken can be refrigerated for a day or two and eaten cold. But it won’t be as crunchy.
