Steps:
- Layer 12 ice cream sandwiches in the bottom of a 9 x 13-inch dish. You may need to cut the last ice cream sandwich in half in order to get it to fit in the bottom of the dish.
- Allow to soften for a few minutes and then use a spoon to gently press the ice cream sandwiches down a little bit. You can skip this step if you're using a very deep pan!
- Spread half of the whipped topping over the ice cream sandwiches. Drizzle with chocolate and caramel syrups. Sprinkle with desired toppings.
- Top with another layer of 12 ice cream sandwiches. Spread remaining whipped topping over the ice cream sandwiches. Drizzle with additional chocolate syrup and caramel syrup, if desired. Sprinkle with additional toppings.
- Freeze for about 1-2 hours (or overnight) to give the cake time to firm up before slicing and serving.

- Place 10 crackers on the bottom of an 8-inch square baking pan. (Note: you can drizzle some cherry flavored liqueur on each layer of crackers, if you wish.) Spread half of a tub of whipped topping mixture over crackers. Repeat with another layer of 10 crackers and remaining whipped topping mixture. Add a final layer of 10 crackers. Spread half of the remaining tub of whipped topping over crackers. Place pan in refrigerator overnight or at least 6 hours.

Place remaining whipped topping in a pastry bag fitted with a 1M tip. Pipe 9 swirls onto dessert. Sprinkle with more chocolate shavings. Add a fresh cherry to each swirl. - In a mixing bowl, start making the whipped cream. Start by beating the cream on low speed and slowly add in small amounts of marshmallow creme. Raise the speed to medium-high and continue beating until soft peaks form.
- Start the cake by spreading a thin layer of the marshmallow whipped cream on the bottom of the pan. Not too thick -just enough to give the graham crackers something to set in.
- Completely line the whipped cream layer with graham crackers (I used about 1 whole sleeve per layer). Break as needed to fill in any large empty spaces.
- In the microwave (according to package directions), just slightly melt the hot fudge sauce so it will spread easily. While that melts, chop 2-3 chocolate bars into small pieces.

- Beat cream, confectioners' sugar, and vanilla in the bowl of a stand mixer fitted with a whisk attachment on medium speed until starting to thicken, about 1 minute. Raise mixer speed to medium-high; beat until medium-to-stiff peaks form, 3 to 4 minutes.
- Line a 6-cup glass bowl with 2 long, overlapping pieces of plastic wrap. Place 1 cookie in the bottom of the bowl. Press 6 cookies onto plastic wrap in a circle around bottom cookie, leaving about 1/2 in. between bottom cookie and cookie circle.
- Using the back of a spoon or a small offset spatula, spread about 1 cup whipped-cream mixture into the bottom of the bowl (the cream will secure the cookie circle in the bowl); smooth top. Top with a single layer of cookies to make a horizontal "cake layer," breaking cookies as needed to fill any gaps and create a solid layer. Repeat layering process with whipped-cream mixture and cookies until you are about 2 in. from the top of the bowl.
- Break 4 cookies in half, and press the 8 halves onto plastic wrap around the upper edge of the bowl, about 1 in. apart, placing broken cookie sides flush with the bowl's rim; cookies should be standing up vertically.

- I make this in two bowls, 1 large, 1 small for the egg whites to be beaten in. separate your egg yolks into the large bowl, and whites into the small bowl.
- Start by whipping your egg whites to stiff peaks, then using the same beaters, cream all the other ingredients together well, then fold in your egg whites to make a chocolate mouse. (That is probably not the correct word)
- Then in your serving dish, Layer chocolate and cookies, I try to get 3 layers, I usually use a half box of the cheap vanilla wafer cookies from the dollar store. Or double the batch into a 9 x 11 cake pan and use the whole box. I let this set out of the refrigerator for about 6 hours, so the cookies get soft from the chocolate, then refrigerate over night. Needs to be made a day ahead of serving. add whipped topping.
