MAMA'S CORNBREAD DRESSING - COWBOY KENT ROLLINS



Mama's Cornbread Dressing - Cowboy Kent Rollins image

Number Of Ingredients 11

8 ounce chicken breast (boneless skinless)
8 ounce turkey breast
6 tablespoons butter
1 medium yellow onion (chopped)
4 stalks celery (chopped)
1 6 ounce box Stove Top stuffing mix
1 to 1 ½ cups crumbled cornbread
1 32 ounce box chicken broth
1 teaspoon sage
1 teaspoon poultry seasoning
2 10.5 ounce cans cream of chicken soup

Steps:

  • Preheat the oven to 350 degrees F. Butter a 14-inch dutch oven or 9 x 13-inch casserole dish.
  • In a medium saucepan, add the turkey and chicken. Cover with water and bring to a boil over medium-high heat for about 15 minutes or until fork tender. Set aside to cool then shred the chicken and chop the turkey.
  • In a large cast iron skillet, melt the butter over medium heat then stir in the onion and celery. Cook for about 5 minutes or until tender, stirring occasionally.
  • In a large mixing bowl, mix together the onion, celery, stuffing mix, crumbled cornbread, chicken broth, sage and poultry seasoning. Stir in the turkey and chicken. Let it set a couple minutes to absorb the liquid. If there is excess liquid pooling along the edges add up to 1/2 cup more crumbled cornbread.
  • Spoon the dressing mixture in the Dutch oven or casserole dish. Cover and place in the icebox overnight or until ready to cook. Take the dish out of the icebox about 30 minutes before baking.
  • Evenly spread the cream of chicken soup over the top. Bake for 45 to 50 minutes or until the top is golden brown and the mixture sets up and is sponge-like. Let rest 10 minutes before serving.

1 - 9x13 inch pan of cornbread (use white cornmeal)
- the insides of the turkey, (gizzards, liver)
3 - ribs of celery, finely chopped
1 large onion, finely chopped
2 tablespoon(s) chives
1 tablespoon(s) parsley
1 tablespoon(s) poultry seasoning
1 box(es) cornbread stuffing mix

Steps:

  • 1st Make cornbread, night before, let cool, then crumble in a large bowl then cover with lid, When you are ready to start your dressing,
  • In a large pot, fill with water & put all your turkey innards (neck, liver & gizzards) in the pot and put on high, when water starts boiling let boil for 45 minutes add more water if needed. Let cool. Dip out the Gizzards and liver pieces and Throw away.
  • In a small to medium bowl place your chopped celery, onions, Chives, Parsley & poultry seasoning & mix well. Then add the mixture to your crumbled Cornbread, and mix with hands till well blended, then Add Cornbread Stuffing Mix, and mix some more Till well blended, Make sure will mixing with hand that they are no hard pieces of cornbread, Slowly start adding the broth from the turkey gizzards, Till Cornbread mixture is well blended and moistened.
  • Preheat oven to 350 F.
  • Spray a 9x13 inch Pan with a non-stick spray. Spread out the Cornbread Mixture in pan evenly, Sprinkle black pepper over Cornbread mixture, Cook in oven for at least 40 minutes Till done.

I grew up on mama's cornbread dressing. I have come across many cornbread dressing recipes; however, this is still the best. This stuffing has cubes of cornbread with the addition of onions, celery, eggs, and stock. It's the perfect Southern souffle!

8 cups crumbled cornbread
4 cups cubed stale bread
1 cup butter, melted
2 large onions, chopped
1 ½ cups chopped celery
2 cups turkey broth, or as needed
1 ½ cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup chopped, cooked turkey giblets
4 large hard-cooked eggs, chopped
4 tablespoons self-rising flour
4 tablespoons chopped fresh parsley
2 teaspoons chopped fresh sage, or to taste
2 large bay leaves
salt and ground black pepper to taste
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking dishes.
  • Combine cornbread and stale bread cubes in a large bowl. Set aside.
  • Melt butter in a large skillet over medium heat. Add onions and celery and cook until transparent, 5 to 10 minutes.
  • Pour onion mixture over the cornbread mixture. Add turkey broth, chopped turkey, soup, giblets, hard-cooked eggs, and flour. Mix so that all the cornbread is wet. Mix in parsley, sage, bay leaves, salt, and pepper. Add beaten eggs. Mixture should be "soupy." Pour mixture evenly into the prepared pans.
  • Bake in the preheated oven until cooked through and set, 1 hour to 1 hour and 20 minutes.

2 c chopped celery
2 large onions, chopped
1 stick margarine
5 c crumbled buttermilk cornbread (dry)
5 c dry bread crumbs
6 c turkey or chicken broth
1 stick butter
4 large eggs beaten
1 1/2 tsp poultry seasoning
3 tsp sage or to taste
1 tsp salt or to taste
1 tsp pepper or to taste

Steps:

  • 1. Preheat oven to 325 degrees
  • 2. In a large baking pan sprayed with Pam combine celery and onion mixture, melted butter, beaten eggs with cornbread, bread crumbs, chicken/turkey broth, poultry seasoning, sage, salt and pepper. The dressing should be pretty soupy to start, so that it doesn't get too dry while cooking. You may need to add more broth.
  • 3. Bake, covered, for 35 minutes and uncovered for 10 minutes until browned or until well set and cooked through.

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

pre-made cornbread, crumbled up (1 pan, any way you like to make it)
1 1/2 cups finely chopped celery
1 1/2 cups finely chopped onions
3 eggs, beaten
1 (14 ounce) can chicken broth (1-2 cans)
salt
pepper
ground sage

Steps:

  • Preheat oven to 350°.
  • Mix cornbread, celery, onion, eggs and 1 can of broth together.
  • Add salt, pepper and sage to taste.
  • Bake at 350° for 30-45 minutes or until done.
  • Half way through cooking check moisture; slowly add other can of broth if needed.

1 sweet potato, peeled and cubed
2 (8 ounce) packages dry corn bread mix
1 (16 ounce) package ground spicy pork sausage
3 tablespoons butter
1 stalk celery, chopped
1 bunch green onions, chopped
1 large onion, chopped
¼ bunch fresh parsley, chopped
2 (8 ounce) cans oysters, liquid reserved

Steps:

  • Place sweet potato in a medium saucepan with enough water to cover. Bring to a boil, and cook 15 minutes, or until tender. Drain, mash, and set aside.
  • Prepare dry corn bread mix according to package directions. Crumble, and set aside.
  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
  • Melt butter in the skillet over medium heat, and stir in celery, green onions, onion, and parsley. Cook and stir until tender, about 10 minutes.
  • Return cooked sausage to skillet, and mix in oysters and their reserved liquid. Allow oysters to cook about 5 minutes before stirring in crumbled cornbread and mashed sweet potato.
