MOM'S GOULASH
I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

Steps:
- Saute hamburger with chopped onion. Drain grease.
- Add Worcestershire sauce, salt and pepper.
- Cook macaroni in boiling water until tender; drain.
- Add cooked macaroni to hamburger.
- Add canned tomatoes, peas and/or corn.
- Cook until thick, stirring occasionally.
- Top with Parmesan cheese, optional.
MOM'S GOULASH AKA CHEESEBURGER MAC
Tasty dinner Mom always called "Goulash". I've renamed it "Cheeseburger Mac" because this dish has nothing to do with the Hungarian dish of the same name! Delicious, homemade dish.

Steps:
- Cook the pasta per directions.
- Drain noodles and set heat to low.
- Add butter and melt.
- Add milk and stir, being sure sure it's not too hot because your milk could curdle in the heat.
- Add cheese and stir until it melts, salt and pepper to taste. Keep on low.
- In a separate dish, combine ground beef, pepper, onion, and garlic salt, and cook until meat is brown.
- Turn on low and cover until pepper/onion starts to soften.
- Add the tomatoes, cover, and let simmer for 10 minutes, stirring occasionally.
- Combine and nom :).

1950'S HAMBURGER GOULASH
We grew up with this casserole that we called "goulash." It is an humble dish that is comforting with its blend of garlic, mushrooms, peppers, and bacon. The oregano gives it a special flavor that makes it different from other hamburger casseroles. The original version did not have a bread crumb topping, but it does jazz it up for company. If you are lucky enough to have some frozen cooked ground beef (OAMC) this recipe can be assembled much quicker.This doubles nicely.

Steps:
- Cook macaroni in boiling salted water until tender.
- Drain macaroni.
- Combine tomato paste, water and baking soda and set aside.
- Fry bacon in a medium fry pan until medium done.
- Add mushrooms, green pepper, onions, and cook until tender (about 5 minutes).
- Add ground beef,stirring constantly until beef is done.
- Add all seasonings (including parsley) and HALF of tomato paste mixture and simmer for 5 minutes for flavors to blend.
- Place half of the cooked macaroni in a greased 9x 13 casserole dish.
- Sprinkle HALF the parmesan cheese.
- Cover with ALL the meat mixture.
- Cover with remaining half of cooked macaroni.
- Sprinkle with remainging parmesan cheese.
- Finally, top with remaining tomato paste mixture.
- If desired, top with bread crumb mixture.
- Cover casserole tightly (SPRAY FOIL WITH PAM OR CASSEROLE TOP WILL STICK) and bake at 375 degrees for 30 minutes.

MY MOM'S GOULASH
My mom could put together anything in her cabinets and always make it taste great. This was and always will be my all time favorite meal of hers. I wanted to post it so I wouldn't lose the recipe.

Steps:
- Mix all of the ingredients together except the noodles and cook until onion and celery are tender.
- Add this to 1-lb macaroni noodles or a package of egg noodles which has been cooked.
- in a separate pot according to directions.
- Add minced garlic with salt and pepper.
- Then add the Bay leaf and Marjoram in the last 30 minutes of cooking.
- Note: You can add your own spices to the mix as well.

- Brown beef in skillet, and drain.
- Add water, ketchup and onion powder; mix well. Bring to boil. Stir in macaroni; cover. Simmer on medium-low heat 8-10 min or until macaroni is tender.
- Stir in cheese; cook until melted, stirring occasionally.
EASY CHEESEBURGER MAC
From the Kraft website. Nothing fancy, but a tasty dressing up for boxed macaroni and cheese! It's also versatile. When I made it, I added 1/4 teaspoon or so of Montreal Steak seasoning. I also cooked a chopped onion along with the hamburger. You can use whatever seasoning you normally use when you make burgers to spice it up. Jalapenos are good in this as well.

- Brown ground beef and drain.
- Add water, ketchup and mustard. Bring to a boil. Stir in the macaroni from the box (but not the cheese yet). Reduce heat, cover and simmer 4 minutes.
- Add thawed vegetables. Simmer another 5-6 minutes covered, until macaroni is tender.
- Reduce heat to low and add cheese powder. Stir well. Sprinkle cheddar over the top and cover for a minute or two until cheese melts.

I found this on the Kraft website and adjusted it a bit for our preferences. It's a tasty, super-easy dish! I use kitchen scissors to cut the tomatoes up into smaller pieces.

- Drain water from macaroni and grease from ground beef.
