MOM'S FUDGE
This is such a simple fudge recipe. My mom has made this creamy and yummy fudge since I can remember! Everyone that tries it can't stop eating it! The best thing about it is you can personalize it by mixing in any of your favorite candies.

Steps:
- Combine the chocolate chips, milk, and salt in a saucepan over medium heat; cook and stir until the chocolate has melted and the mixture is smooth.
- Line a 9-inch square baking dish with waxed paper; pour the fudge into the dish and smooth into an even layer. Allow to cool until firm, about 2 hours. Cut into squares; store wrapped in plastic or in a sealable container in the refrigerator.

This is our family Christmas fudge recipe...My mom gave it to me and I have never had a failed batch yet... This is rich and decadent is not gritty like some i have tried....We both make this every year...I have tried others but this one is the best yet....I will never use another.

- 1. Butter baking pan...Makes 5 pounds ( I use a brownie pan though I like mine fairly thick... on medium low heat
- 2. Heat slowly the first 7 ingredients, to a rolling boil for 10 minutes... Then stir in nuts after removing from heat... Pour into pan and smooth out with spatula quickly before setting....
- 3. Let set in cool place cover with wax paper while it cools....Cut into squares and decorate your platter, you may cover with press and seal after they have cooled..

- Preheat oven to 175°C | 350°F.
- Lightly grease an 8x12-inch baking pan* with cooking oil spray. Line with parchment paper (or baking paper); set aside.
- Combine melted butter, oil and sugars together in a medium-sized bowl. Whisk well to combine. Add the eggs and vanilla; beat until lighter in colour (another minute).
- Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
- Fold in 3/4 of the chocolate pieces.
- Pour batter into prepared pan, smoothing the top out evenly, and top with remaining chocolate pieces.
- Bake for 25-30 minutes for just under-done brownies (fudgier texture) or until the centre of the brownies no longer jiggles and is JUST set to the touch. OR 35-40 minutes if you like your brownies well set and firm. NOTE: Brownies will continue baking and set in the hot pan out of the oven. If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
- After 15-20 minutes, carefully remove them out of the pan and allow to cool to room temperature before slicing into 16 brownies. They set while they cool.ENJOY!
MOM'S OATMEAL COOKIES
These are the oatmeal cookies I grew up with. I know there are tons of recipes for oatmeal cookies on here already, but I didn't find any exactly like this one, or even quite close enough to call the same. The yield is an estimate, because I don't remember how many this actually makes. Enjoy!

- Cream shortening, sugar, and eggs til light and fluffy. Stir in buttermilk.
- Stir dry ingredients into creamed mixture. Stir in oats and raisins.
- Drop from tablespoon 2" apart on lightly greased cookie sheet.
- Bake at 400* about 8 minutes. Cool slightly; remove from pan.

MOTHER'S FUDGE
Steps:
- Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.
MOM'S FUDGIES
Mom would have to make these in the evening when she would have a serious craving. She would whip these up in no time for all of us to enjoy.
