This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

Steps:
- Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
- Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
- Add salt and pepper sometime during frying time, to taste.

MOM'S POTATO PUFFS
My mother would always cook extra mashed potatoes so us kids could have these delicious puffs the next day. Over the years I have experimented with her basic recipe and sometimes will add grated cheddar cheese, chopped green onions and bacon bits to the mixture. I have also added corn niblets for a really different tasting puff.

- In a medium bowl, stir together the flour, baking powder, and salt. Mix in the mashed potatoes and egg until well blended.
- Heat oil in a deep-fryer or heavy deep skillet to 365 degrees F (180 degrees C). Carefully drop the potato mixture by spoonfuls into the hot oil, and fry until golden brown, about 5 minutes. Remove from oil to drain on paper towels.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
- In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
- Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

MOM'S FRIED POTATOES

- Step 1 1) Heat pan over medium heat, add fat, wait 30 seconds and add potatoes, sprinkle with salt and pepper.
- Step 2 2) Fry covered over medium heat for 10 minutes. This will soften the potatoes and brown them on the first side.
- Step 3 3) Remove cover and flip the potatoes with a spatula to the other side (as best you can) and brown the other side for 8 minutes or until desired doneness.
- Step 4 4) My favorite is to serve these with broiled fish or breakfast, but they go well with anything.

- 1. Melt the butter with the oil in a large skillet over medium-high heat. Add the potatoes and spread evenly in the pan. Cook undisturbed until the potatoes are golden brown on one side, about 5 minutes.
- 2. Carefully turn the potatoes to ensure even browning and add the onion to the skillet. Continue cooking, turning the potato and onion mixture every few minutes, until the potatoes are well browned and the onion is softened and carmelizing, 10 to 15 minutes longer.

- Wash and peel potatoes. Slice thin into 1/8 inch slices.
- In a large bowl, cover potatoes with cold water; add salt. Let sit for 30 minutes or more.
- Drain water, and pat potatoes dry.
- Add oil to large skillet covering the bottom of the pan completely in a shallow layer, approximately 5 to 8 tablespoons.
- Once the oil is hot, add the potatoes. If possible, place as many as you can in a single layer.
- Let brown, and flip to brown the other side. If the skillet is smaller and the potato layers are thicker, then flip often to get all sides browned and crispy.
- Drain to a paper towel. Season with salt and pepper while hot.
- If desired, serve hot with ketchup.

KIELBASA AND POTATOES RECIPE
This easy kielbasa and potatoes recipe is a classic comfort food your family is sure to love.

- Preheat skillet on med-high heat.
- Cut the kielbasa sausage into slices, and drop in the heated pan. Stir while frying.
- As kielbasa is browning, chop the onion and potatoes.
- Once the sausage has browned for approximately 6 minutes, scoop it out and put aside. Much of the fat will have rendered. Make sure to leave grease in the pan.
- Dump the chopped potatoes into the hot skillet with the kielbasa grease. Add the paprika, salt and oregano. Stir to coat in the fat and reduce the burner to medium to medium-low. Cover.
- Brown the potatoes for 13 minutes, stirring regularly.
- Add the onions and garlic. Cook for about 12 minutes. Covered, but stirring regularly.
- Once the potatoes have softened and onions are cooked add the kielbasa back into the pan mix in and all cook for 4 minutes.

- Prepare the ingredients for the recipe.
- Prepare the ingredients for the sauce.
- Bring water to a boil, add a bit of oil. Add noodles and cook them for 5-6 minutes. Drain when cooked.
- Preheat skilled to high heat. Cook the pre-sliced beef until it's golden brown. Season beef with half portions of the following - soy sauce, sesame oil and brown sugar, while it's cooking.
- Place noodles in a large bowl, top them with cooked beef.
- Dice onion into long strips. Cut carrots into strips and chop green onion. Preheat an oiled skilled and toss in the carrots and onion.
- When the veggies soften up, add in the remaining half portions of the following - soy sauce, sesame oil and brown sugar. Add in pressed garlic, green onions and cook for a few minutes until it's softened.
- Add diced spinach into the mixture and turn off the heat imminently.
- Add all vegetables to the noodles and toss everything together.
- Serve while it's still warm. This dish also reheats well.

MOM'S FRIED POTATOES
Folks around here still say that my mom made the best fried potatoes around. I have to agree and once she showed me how to make them, I never forgot, nor do I ever mess with her recipe much. And this particular recipe will give NEW CHEFS a jump start on this, often hazardous, endeavor. These potatoes are flavorful, about 1/3 of them turn out brown and crisp, and, they're never soggy. I hope you enjoy them as much as I have for 50 years.

- Peel, and then slice the potatoes twice the thickness of a quarter.
- In a large bowl, place the potatoes and the sliced onions in plenty of cold tap water as to cover them -- allow them to soak for an hour.
- In a large no-stick skillet (or a well-seasoned cast iron skillet), add the shortening and allow it to get hot over medium-high heat.
- Drain the potatoes/onion and pat them dry some with paper towels. Drips of water will cause the hot oil to pop out on you. Carefully add the potatoes/onions to the hot shortening, spreading them out in the skillet.
- DO NOT TURN OR STIR THE POTATOES FOR THE NEXT 10-12 MINUTES! Go ahead and add the seasonings after putting the potatoes in the skillet. Fry mostly covered for the first 10-12 minutes but just crack the lid off to the side a bit as to allow steam to escape.
- After the time has elapsed, use a spatula to peek at the bottom layer and if they are brown and crispy, go ahead and turn the potatoes ONE TIME. Finish frying UNCOVERED for about 10 more minutes.
- Transfer them to a serving plate that has a couple of paper towels on it.
- Serve with hot biscuits and/or brown soup beans. These potatoes are also great with fried eggs.
- NOTE: I make sandwiches out of leftover potatoes that have been in the fridge.
