These pancakes were a regular feature on Sunday mornings when I was growing up. They're still the best I've ever had. Buttermilk pancakes with oatmeal and blueberries.

1 ½ cups rolled oats
½ cup all-purpose flour
2 teaspoons white sugar
¼ teaspoon salt
1 ½ teaspoons baking soda
1 teaspoon baking powder
2 eggs
2 cups buttermilk
1 cup frozen blueberries

Steps:

  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • In a large mixing bowl, mix together oats, flour, sugar, salt, baking soda and baking powder. Stir in eggs and buttermilk. Fold in blueberries.
  • Pour or spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Number Of Ingredients 10

¼ cup of white sugar
½ tsp of salt
2 cups of all-purpose flour
2 ¼ tsp of baking powder
½ tsp of baking soda
2 large eggs
2 cups of buttermilk
¼ cup of melted unsalted butter
1 cup of fresh blueberries (or frozen)
And some extra unsalted butter on hand to grease the skillet

Steps:

  • In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.
  • In a separate bowl, beat the eggs with the buttermilk and melted butter.
  • Using a spatula, combine the dry and wet ingredients to make a thick, lumpy batter, taking care not to overmix.
  • In a nonstick skillet, melt some butter over medium-high heat. Ladle ⅓ cup of batter into the hot skillet and sprinkle with blueberries. Take care not to overcrowd the skillet, since the pancakes will puff up as they cook.
  • When bubbles appear on the surface of the pancake and the edges begin to brown, flip the pancakes and cook the other side. It should take about 2 to 3 minutes per side. Keep them nice and warm for mom by keeping them in a 250ºF oven.
  • Smother with maple syrup, fresh blueberries, dollop with whipped cream and maybe even a good dusting of icing sugar.

1 teaspoon baking soda

1 ⅛ cups buttermilk

Steps:

  • Preheat and lightly grease a large skillet or electric griddle.
  • Mix the flour, salt, and baking soda together in a bowl. Add the egg, buttermilk, and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy, and puffy.
  • Drop 1/3 cup of the batter onto the cooking surface, spreading lightly with the bottom of the cup. Cook until lightly-browned on each side, 1 to 2 minutes per side.

1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 1/4 cups buttermilk
1/2 teaspoon baking soda
2 tablespoons melted unsalted butter
3/4 cup small wild blueberries

Steps:

  • Sift flour, sugar, baking powder& salt into a bowl.
  • In medium bowl, beat egg and stir in buttermilk and baking soda.
  • With egg beater, beat flour mixture just till smooth (very little.) Stir in melted butter and blueberries with a large spoon.
  • Pour batter by 1/4 cup measure onto griddle.
  • Served with Canadian Maple Syrup and a bit of whipped cream.
