FALL-OFF-THE-BONE CHICKEN
Steps:
- In a small bowl mix all of the spices. Put the chicken in a large bowl, add the spice mixture and toss well.
- Arrange coated chicken thighs in an oven-safe baking dish. Cover the dish with foil and transfer to the fridge for a minimum og 4 hours.
- Preheat the oven to 300 F. Take chicken thighs out of the fridge and let sit for 10 minutes at room temperature. Bake for 2 hours or until super moist. Remove from the oven and take the foil off the dish. Spoon out all juices and reserve for later.
- Turn the oven to broil and return the chicken back to the oven. Broil for 5 minutes or until crisp and golden. Serve chicken thighs with reserved pan juices and chopped chives.
FALL-OFF-THE-BONE CHICKEN
Simple and delicious, this goes alongside any pasta or potato dish. This may sound strange, but the mayonnaise turns back into oil while it's being cooked and creates a tender, yummy, fall-off-the-bone chicken. Most all of the fat is left behind in the pan, so it's really no worse than frying. Lining the pan with aluminum foil means almost no cleanup!

Steps:
- Line a baking dish with heavy-duty aluminum foil.
- Combine mayonnaise, garlic, adobo seasoning, and pepper in a large bowl. Add drumsticks and turn to coat. Arrange drumsticks in the baking dish. Cover with aluminum foil. Marinate in the refrigerator for at least 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake chicken in the preheated oven, covered, until falling off the bone, about 2 hours. Uncover and continue baking until browned, about 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Spoon garlic powder into beer in the can. Prop the chicken, butt-side down, onto the beer can so the can goes into the cavity. Place the chicken, with the can as a stand, into a large oven-proof skillet.
- Melt butter in a small saucepan over medium-high heat; add garlic and cook until butter starts bubbling, about 2 minutes. Remove garlic and discard.
- Inject chicken with the garlic-infused butter using a baster or injector until all areas are injected.
- Mix brown sugar, paprika, black pepper, and salt in a small bowl. Coat chicken with brown sugar mixture.
- Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

FALL OFF THE BONE CHICKEN
This one takes a little time, but it's worth it! Get the plumpest chicken you can find, let it soak up the spice mix overnight, then slowly roast it uncovered ... the meat will literally fall off the bones, it's so tender. Prep time includes overnight seasoning in the fridge.

- After rinsing, drying and removing giblets, refresh the chicken cavity with a couple of good squeezes of lemon juice.
- Place onion half in the chicken cavity.
- Combine salt, paprika, thyme, onion powder, peppers and garlic powder in a plastic zipper bag; place chicken in bag and coat it thoroughly with the spice mixture; really rub it into the skin; let chicken season in the bag, refrigerated overnight.
- The next day, let chicken warm up slightly; preheat oven to 325 degrees F.
- Remove chicken from zipper bag and place chicken in a roasting pan, breast side up, and roast uncovered at 325 degrees for the first hour; then reduce heat to 275 degrees F and continue to roast uncovered at that temperature for another 3-1/2 to 4 hours, basting at least twice in that time.
- To test for doneness, try moving a chicken leg; it will move freely and when poked, juices will run clear.
- When done, remove chicken and let stand for at least 5 minutes, then carve and serve!

- Combine the sugar, paprika, garlic powder, 1 tablespoon salt and 1/2 teaspoon black pepper in a large bowl. Toss the chicken in the spice mixture until coated. Arrange the chicken in a single layer in a flameproof 9-by-13-inch baking dish. Cover with foil and refrigerate for at least 4 hours and up to overnight.
- Preheat the oven to 300 degrees F.

- Firstly, cut your chicken into 4 pieces. Use the kitchen scissors to cut through one side of the spine and along the breast bone on the other side. Cut off the thighs from each half and you will have quarters. Place the chicken in a large pot and cover with two litres of cold water. Place on the stove and turn the heat to high.
- While the water is coming to boil you can prepare the rest of ingredients. What I do next is add the bay leaves, garlic and peppercorns to the chicken stock. I then cut one of the celery sticks and one of the carrots into 3-4 pieces and add to the stock along with the white onion. I tear coriander leaves off the stems and save those for later; I add the stems as well as a few fresh leaves to the stock. The rest of the vegetables will be added in the second part of cooking. That’s it!
- Bring it to boil, then bring the heat down to a low simmer and cover with a lid. Every now and then you can skim off the foam but we are going to strain the liquid so don’t worry too much about it. Cook for 1 hour 30 minutes. Make sure it doesn’t boil or cook on high heat, low and steady is a secret to super soft chicken.
- While the stock is cooking, prepare the rest of the vegetables. Peel and cube the potato, slice the second half of celery and carrots and wash the coriander leaves.
