OLD-FASHIONED PEANUT BRITTLE
Old-fashioned peanut brittle just like Grandma used to make--simple and good!!

Steps:
- Spray two cookie sheets with non-stick spray coating.
- In a 4 quart saucepan over medium-high heat, combine the sugar, corn syrup and water. Heat to boiling and add peanuts. Cook until peanuts become golden in color and syrup mixture beads off nuts when raised out of pan. Quickly mix in the salt and baking soda until well blended.
- Pour the mixture onto the prepared cookie sheets. Allow mixture to spread on it's own. Cool completely, and break into pieces. Store in air-tight container or plastic bag.

Steps:
- Line a jelly roll pan with parchment paper.
- Melt butter in a saucepan over medium heat. Stir sugar and salt with melted butter to dissolve completely. Remove saucepan from heat, add peanuts, and stir to coat completely; immediately pour onto prepared pan and spread into an even layer.
- Refrigerate until brittle, at least 30 minutes. Separate from parchment and break into pieces.

MOM'S EASY PEANUT BRITTLE
My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!

Steps:
- Stir syrup, water and sugar together in large, heavy pan to hard ball stage (250*F- 265*F-- A little of this syrup dropped into cold water will form a hard ball).
- Stir in butter and peanuts until golden brown.
- Stir in vanilla and soda.
- Pour into 2 buttered pizza pans, just shaking pan to even out mixture.
- Cool and break into pieces.
MOM'S PEANUT BRITTLE

- Generously butter a 12x18 inch cookie sheet. Set aside.
- Mix sugar, water, and corn syrup in a heavy skillet. Stir well until it comes to a boil. Cover and boil 3 minutes. Continue to boil to hard ball stage (when a little bit dropped into a cupful of cold water forms a hard ball - hence the name!) 250 degrees F (120 degrees C).
- Stir in butter and peanuts. Continue cooking until mixture turns a light brown color. Remove from heat.
- Mix together salt, vanilla, baking soda and water. Combine this with syrup and nuts mixture. Mix well, and fast.
- Pour onto prepared cookie sheet. Use back of buttered spoon to spread thinly and evenly. Allow to cool, then break into pieces. Store in airtight container in refrigerator.

SPICY PEANUT BRITTLE
My Spicy Peanut Brittle recipe starts with the sweet and ends with the heat. It's a kicked-up version of traditional peanut brittle with no candy thermometer needed.

- Add the sugar, corn syrup, water, butter, vanilla, and cayenne a large stovetop pan.
- Stir the mixture with a wooden spoon or a spatula just once to ensure that everything is incorporated.
- Cook the mixture at medium heat. If you see that some of the sugar is not dissolved, just push it down with a rubber spatula. But do not stir the mixture. If you must, you can just swirl the pan but it's best to just let it make a golden brown caramel.
- Cook the caramel until it is a golden brown color and it coats the back of a spoon without dripping off.
- Add the baking soda and stir in the peanuts. You'll need to do this step quickly as the baking soda will cause the mixture to really bubble up.
- Stir with a wooden spoon.
- Quickly pour onto the baking sheet and let it sit at room temperature for 15 minutes.

- Spray (nonstick spray) or butter a 12x16x1/2-inch pan lightly.
- Combine the sugar, butter, water, and corn syrup in a large saucepan and stir until all the sugar is wet.
- Cook over high heat, stirring, until the mixture turns medium golden (300°F).
- Immediately remove from the heat and carefully whisk in the baking soda followed by the salt (take care; the mixture will rise in the pan and bubble).
- Fold in the peanuts.
- Quickly pour the mixture onto the prepared sheet pan and spread it out using the back of the spoon before it starts to harden. (It may not cover the whole pan).
- Once the brittle is completely cool, break it into bite-size pieces with the back of a knife or other blunt instrument.
